Neighborhood: French Quarter
A small and teeming network of laissez-faire living lounged out on the balmy banks of the Mighty Mississippi, the French Quarter has long been a port of call for folks in search of a good time and a great story. Perpetually inebriated Bourbon Street runs across its midriff like a strand of cheap ribbon tied around an otherwise rather pretty and impressively well-kept vintage dress. Throughout the rest of the Quarter, brightly colored Victorian homes and businesses, famously done up with wrought-iron features, provide a distinct and immediately recognizable backdrop for all varieties of fun. At any given moment in this historic riverside setting, some of America’s finest meals are being cooked, most potent cocktails are being mixed, and most engaging music is being performed.

- Gretch97Syracuse, New York24 contributionsFive Stars For Chef Mark!We had a fun (and delicious!) roux class with Chef Mark, and will definitely look at doing another class next time we visit! It was fun to learn about the history of the food in New Orleans, and about all the various influences other cultures have on the cuisine. We had a great time making gumbo (and learning that making a roux does NOT actually take forever!!), shrimp etouffe & bananas foster. We were having such a good time, I didn't even think to take a picture until we got to the dessert course!! All the staff was friendly and professional, and this is definitely a few hours well spent!Thank you so much for the fabulous review and recommendation of Chef Mark and the Mardi Gras School of Cooking. It is wonderful that you had such a great time while learning about the history of New Orleans culinary history. - Brian MThe Woodlands, Texas60 contributionsLearning and Eating! Thanks to David for making our visit so memorable and enjoyable. From the moment we arrived he made us feel at home. A great teacher and story teller. The set up was excellent and easy to follow along. And the food was amazing! We did the Roux class so enjoyed a gumbo and an etoufee. Also made bananas foster. Even found time for a lagniappe- pralines! A very excellent day! In the small world category, we ran into our cooking partners (a wonderful family from Ga) later in the day near Jackson Square. Highly recommended and would do this again. We really appreciate you taking the time to share your memorable and enjoyable visit with us, Brian. - KatInNewYorkCityNew York City, New York22 contributionsGreat fun! A super New Orleans experience! We took the roux class during a holiday in New Orleans (two couples traveling together). It was great fun! Matt, our instructor, explained things well and kept us entertained, as well as keeping our glasses full. The food was delicious and the class gave me encouragement to try some Creole cooking at home. We also had “Breakfast at Brennan’s” during our trip and, I have to say, our Bananas Foster was every bit as good as the original! This was my first cooking class while traveling but it was such a treat that I will seek out other experiences like this one on future trips. We are so thrilled to learn you had such an amazing time with Chef Mark. It is so fabulous you enjoyed your cooking class with us at the Mardi Gras School of Cooking. Please join us again the next time you visit NOLA! - bobcat55Larkspur, Colorado19 contributionsOverall a fun Cooking experienceWe did the Sunday brunch class with Chef Cam. He was personable and knowledgeable. We completed eggs Benedict over crab cake, Pig Candy and shrimp and grits. There were two other couples also in our class. Everyone got opportunities to prepare, chop and cook. The food was delicious and plentiful. The experience was about 3 hours overall. We found the space a little small, but workable. It was a good group and we had fun, as well as being well fed!We are so happy that you enjoyed your brunch class with us! It is so great that you found the food to be so delicious and plentiful. Chef Cam will be happy to hear your praise. We enjoy having hands-on cooking classes with everyone participating in the cooking process. We work to have a fun "dinner party" feel to all our classes, allowing our guests to socialize and learn together. - Sammy20 contributionsExcellent vegetarian cookingWe loved our vegetarian Cajun cooking with David. We made vegetarian gumbo, corn macque choux, and bread pudding. David was both fun to spend a class with and also taught us a lot about the dishes. One member of our party is gluten free and he did a great job making substitutions where needed, and explaining why different GF flours work and change the recipes. And the food was delicious!Samantha, thank you for your stellar review of Chef David and the Mardi Gras School of Cooking. We truly appreciate you taking the time to share your fabulous experience. Chef Conner was awesome. My 15 year old and I had the sauces class and he kept it educational, lively, funny and delicious. Come hungry! Have new techniques to work on, new recipes and new appreciation for southern cuisine.

My husband and I had never taken a cooking class although we love to cook and experiment. This class hosted by Chef Barry was an amazing experience. There was one other family of 4 in our class, so we had some laughs, light conversations and everyone who wanted to help certainly got their chance. We learned some great tips and had awesome gumbo, delicious shrimp etouffee and to top it off bananas foster for dessert. I highly recommend participating in a class here for a fun filled afternoon and delicious meal that you cooked!

My daughter ( adult) and I took the traditional New Orleans cooking class . Chef David taught us how to make a 3 course meal with BBQ Shrimp, Jambalaya , and Chocolate Bread Pudding. Everything was amazing better then anything we’ve had so far in the French Quarter. He taught us how to cook these things but also about the food and traditions in New Orleans. Great class would recommend to anyone wanting to learn about New Orleans style cooking.

Chef Scott was great to learn from. From local culture to parades including recommendations for food and drink.
But don’t forget the cooking. We signed up for the Louisiana sauce class, looking for something lighter than heavy roux based sauces.
We had a fantastic time poaching shrimp for cocktail with remoulade sauce. Sautéed trout a la meunière. With a fantastic bread pudding dessert.

Our Chef Didier was so knowledgeable and personable. We loved that this class was hands on and we learned and then did it. We learned cutting techniques, history of the style of cooking, a little history of New Orleans and much more. We took the Roux class and chopped the onion, celery, garlic and bell pepper. We de-headed and peeled shrimp. We made a dark roux for the gumbo and light roux for the etouffee. We even learned that bananas have sections and can be split a part by sections instead of cutting for the Bananas Foster.
The food was absolutely delicious. The kitchen was immaculate. There were supposed to be 2 others in our class but the cancelled so we had a private lesson.
We arrived a little early so we actually got to interact with the chef conducting the brunch class as well and he was equally friendly. He sent over a dish of shrimp and grits for us to try and it was amazing.
We were on this trip because we were celebrating my son's high school graduation and I wanted to do a mother/son trip with him before he joins the Air Force. He loves cooking so he was very excited about this class. It did not disappoint! We were emailed the recipes so we can't wait to try them out on the rest of our family and impress them with our new Cajun cooking skills.
We will definitely take another class at Mardi Gras School of Cooking and I will tell everyone I know about this opportunity!
Thanks again for a great time. It was a highlight of our trip for sure! Chef Didier also had fabulous recommendations for restaurants and snacks to try while we were in town. I appreciated that!

My dad and I enjoyed every minute of our sauces class with Chef Chris. He was generous with his knowledge (and time) sharing stories about his experience as a restaurateur and chef while cooking up the best meal of our time in New Orleans. He also pointed us to our other stand out meal of a weeklong road trip when we enjoyed the best and biggest shrimp po’boy we ever had at Bon Creole in New Iberia. Can’t recommend Chef Chris enough! Thanks again, Chef!

Chef Kristen was a very good instructor and quite personable. In the "Traditions" class, she taught us how to prepare New Orleans style BBQ Shrimp (which is not BBQ in the southern sense, nor cooked over a grill), Jambalaya and Bread Pudding. She covered the history of the dishes, the sourcing of the ingredients and the technique. We are excited to try these recipes back at home. Being only 2 of us in the class, there was a ton of food that we took to go (much of which flew home with us). She also gave us some tips on some of her favorite eateries and bars around the city. This was quite possibly the favorite activity that we did during our trip to New Orleans!

My husband and I were booked for a class the week of New Year's and the chef never showed up. We went to his house and he said he somehow didn't get the reservation even though we were charged and confirmed. He said he would process a refund, but it's been 3 months and my husband also tried to initiate a refund through paypal. Please refund our money and 2 round trip ferry tickets for the inconvenience and disappointment. Thanks
