About
We are a small award-winning craft distillery located in the Florida Panhandle. Our distillery is housed in the industrial units behind the retail spaces at the Midway Plaza, across the street from the Zoo in Gulf Breeze, FL. We currently make Rum and Vodka from 100% Florida molasses. We offer tours and tastings and would love nothing more than to show you around! Incorporated in 2011 our distillery has grown quite a bit in the past few years. We came to our current location in 2012; received our first shipment of molasses in 2013; and released our first products onto the market at the beginning of 2016! We have a neat little tasting room in which you can purchase bottles and other neat merchandise and "swag"! Please, stop by and see what craft distilling is all about!! Cheers, Rollins Distillery

Great distillery tour, very knowledgeable family on local info, background, history and great stories that added to the distilling process. Honestly, I'm not even a rum drinker, but we were looking for something different to do, and I walked away a big fan of several rums they make! We definitely plan on coming back, especially as they grow in their space and continue experimenting with flavor profiles. Absolutely worth the time and experience, it's a hidden gem for the local area. It makes sense why they've won so many awards!

It doesn't look like much on the outside but Rollins Distillery is worth finding. The tour is very informative & opens your eyes up on the distillery business especially in Florida. The tasting part should not be missed. Patrick's son expertly guides you through the smells & tastes of the various rums & vodka they make & you WILL take home more than one bottle. Enlightening, entertaining, delicious-- find this distillery & have alot of fun. Well worth it

Paul the owner is very knowledgeable and gave us more information than we actually could absorb. I went with a friend of mine and we haven’t been out much because of the pandemic and this was a great way to get back into having a fun day. The tastings are amazing don’t forget when you’re there to try the rock rum.

I have been to over 500 breweries distilleries and wineries. Well on vacation in Florida we found this wonderful place. It was not on our agenda Man am I glad we found it. This is hands-down one of the best most informative most delicious places I have ever been. Patrick is the man if you get an opportunity to swing in here I highly highly highly recommend it.

Wonderful tour and tasting, highly recommend if you're in the local area! We purchased the tour & tasting for 2. Mr.Rollins gave us a wonderful tour with so much information about their distilling process and how they started. He was very knowledgeable about the industry and history of both spirits and the local area. The tasting was awesome, we tried all of the available spirits and learned about serving & mixing each one. We left with more than just the bottle of Golden Rum that came with our groupon!

The Husband and I really enjoyed the distillery tour and talk. Paul made it very informative and interesting. Enjoyed all the storytelling about rock candy at saloons, gunpowder, about the pirate Jean Lafitte and Of course we bought a bottle of gunpowder proof rum. We got two snifters as part of our Groupon. Would definitely recommend the tour and tasting.

Well worth the stop. The father-son team here truly love their craft. Their vodka was the best I've ever tasted. The rum is fantastic as well; I prefer their dry one over the sweet, but other people in our tasting group liked the sweet one better. And their spiced rum is pretty good too. A little heavy on the cloves for me, but everyone's palate is different. Overall it was very drinkable.

What a hidden treasure! One of my mates had a Groupon so we decided to venture there to start her birthday celebration early. We had a great tour of the distillery itself by Mr Rollins. Extremely knowledgeable and very attentive and most of all, humorous and personable. It made the tour much more interesting. We finished off with sampling a vodka and some different types of rum. We enjoyed it so much we purchased a bottle of the Cane Vodka & Rock 'n Rum. Would highly recommended this gem!

We had a great experience here! Very knowledgeable and willing to explain things to you without making you feel like you don’t know anything (we don’t know much about rum!). He was also very open minded and legitimately wanted feedback on their new rum. The rum and vodka was very tasty! Overall excellent stop on our vacation

We showed up without a reservation for the tour, only to find out they don’t run tours daily. Despite our oversight, Pat graciously offered us a personal tour and sampling of their products. If you plan on going, and I suggest you do go, it's best to call ahead a day or two.
Their facility is in an office park located off 98 Highway – about 45 minutes from Miramar Beach. The distillery is small, but Patrick did a great job explaining the process and how they developed the various rums and vodka. He runs it with his dad, and they are relatively young in the industry. They have multiple flavors of rum and vodka we tried – I can say it was all delicious and smooth. Even the vodka, which I usually can’t stand, was smooth. We left with 5 bottles of their product and plan to return next time we are in the area.

How do you book a tour and what is the cost?
Hello!!
We have tours available 12, 2, and 4pm M-Fri and 10am, 12, 2, and 4pm Sat.
You can schedule a tour by calling (850-503-1275) or messaging us on Facebook.
A tour and tasting is $10/person and takes about an hour. =)

We are open form 12pm-5pm M-F and from 10am-5pm Saturday for tours and tastings. We prefer to schedule a tour ahead of time, so please call us and let us know what day and time you'd like to visit! Thank you so much!
