We are a family-owned business located in Dripping Springs, TX committed to supplying the highest quality olive oil produced in the United States. Our olive orchard features a Tuscan-inspired mill house, a state-of-the-art Italian olive press and a large tasting room. Looking for an amazing place to have an event? We offer complete event planning for any occasion. Come enjoy complimentary tastings of our award winning olive oils and balsamic vinegars. We encourage people to come out and find a nice quite spot to enjoy the beautiful orchard and hill country views!

We sent an email to request tour reservations, but received no reply. Because of that we just went in person about 30 minutes ahead of time to inquire in person. Unfortunately the tour was canceled because of new equipment installation. We walked around the gift shop and looked out over the trees. I think it would have been fun, but we were only in town for that afternoon. Several other events at other venues were clearly listed on their website as closed because of the pandemic or other situations. It would have been nice to have a heads up.

The staff was extremely friendly and knowledgeable with their products.The store had wonderful gifts. There were some many oils to choose from, just ask and they will direct you in the right way. We had a glass of their homemade wine after exploring the store. We met John Gambini on his way out and had a wonderful conversation about the start of his adventure.

This is a wonderful experience. The property and the building are pretty and welcoming. Unfortunately, the cold snap in February had a negative effect on the olive trees so they weren't green while we visited. We missed the tour so we walked through the orchard on our own. It was very peaceful and scenic.
Prior to our arrival, I had read some revues of this place. Everyone raved about the grilled cheese, like REALLY raved. We decided to have lunch and our choice was simple, grilled cheese, tomato soup and a light salad with their own vinaigrette dressing. I will be talking about this lunch for a long time. It was one of the best meals I have ever eaten - homemade bread, gooey cheese, tomato soup with a fennel flavor , and a delicious little salad.

Service was very pleasant; all the staff was happy to answer questions about the place and the products.

The gift shop is definitely worth your time, too.

As we were leaving , a young woman was hysterically crying about her small dog. We went to help her and discovered she had accidentally stepped on him and spilled her cup of wine. I went back inside to get her water and napkins. They refused to let me pay for either! Now, that is customer service.

We really enjoyed our stop here. They make very high quality oils and other oil products from their own olives. Their premiums oils are first cold pressed. The products are pricey. Their store has a wide variety of excellent goods. The staff was very helpful. On one side of their building is a small café that serves lunch and snacks. We had a charcuterie that was plenty for two. All the items on the board were delicious. We also had an olive oil and fruit gelato that was very nice. They also offer a variety of sandwiches and salads. I highly recommend a visit here and investing in some of their excellent offerings.

I have been a club member for years but sadly I canceled my membership today. As much as I like their product I will not be deceived. They offer a club membership that give you a better than normal discount on the club box and 20% off other purchases. They also are very quick to point out in their emails that you can customize your oder. What they don't tell you is that when you do this it negates the better club price discount even though it does still give you the 20%, I email the about this since it does not seem fair and got a Texas two step cut and paste email back that did not address the issue. I emailed Justine and asked for better clarification and got the exact same cut and paste email. Again I like the product but refuse to deal with people who are not totally transparent in their dealing.

Visiting freinds in Wimberly and decided to check out the Texas Hill Country Olive Company. I know there is a brewery, winery, or distillery around every corner near Wimberly, but I didn't't know about olive groves. Very friendly staff and good food. The grilled cheese is real good. The staff is informative and the place is clean. You can book a tour, but you need to do so 2-3 weeks before your visit. They have a gift store, but they are proud of their olive oils, and they are pricey. The olive grove froze in the last big freeze, and the new trees are only about 5 years old (very sad). The Goat cheese cherry gelato was small, but good. It's worth a stop if you like olive oil.

We made a stop at TX Hill Country Olive Co during a mid-week day date. The olive farm offers tours of the grove and their pressing facilities. We walked the grove and took pics of the different types of olives; then we enjoyed a nice light lunch on site, and took home a few products from their shop. We’ve been here before, and will be back again.

We like to stop and have lunch here and get some Texas olive oil. Small place but nice lunch items. They had to replace all their trees after the big freeze so the trees are small and they are just getting back to tours of the olive grove and production. It is just a quick stop but worth it.

On the way back from baseball in Dripping Springs, my husband and I saw the sign for this unusual Texas business. We took the detour and were pleased with our find. Great little cafe and gift shop and tours lure visitors daily. Bought oil and balsamic for gifts. They even have olive trees for sale. I called to order more after our visit. They need a new phone system but is hard to get a call through and talk to a person

Looking for a place to grab lunch in the area, this came up and I read about the pitchers of sangria, hooked! We had bruschetta, charcuterie sangria and cherry goat cheese ice cream. Great atmosphere where you can see the kitchen. Cute store and sampling room with yummy things. Can’t wait to go back again and do the tour. The experience taught me that I like olives!
