Tasting room by appointment only. Devoted to building new and unique products based on historic traditions and recipes, co-owners Jason and Corey are also committed to the hands-on approach of distilling and create each distinct product from the base ingredients to the bottle. They craft brew each mash, pitch the yeast, and distill the wash in small batches on site in Hillsboro, Oregon, while oak aging and bottling in the same location. Using ingredients sourced locally in the Pacific Northwest, they are also devoted to local growth and creating a distinct regional flavor profile for their whiskies.

We were able to meet Jason, the owner of this start up distillery. He has a great story to go with his up and coming whiskeys. He currently has 4 out plus other blends. We tasted his two white, unaged whiskeys (of which we learned the 50/50 works great in a Bloody Mary) and his two aged. He co-owns this with a gentleman named Cory and is working in collaboration with Big Bottom Distilling and whisky, owned by Ted. These two distilleries share the same location and tasting room but have their own ways of distilling. Ted is venturing out into a new gin that just hit the local liquor stores. It was great to meet Jason and have the chance to hear about his passion for whiskey, as well as his knowledge on the history of whiskeys. It's worth finding this place hiding in an industrial commercial strip and tasting these great whiskeys. Don't forget to ask Jason about his label...it's got a great meaning to it. Can't wait to see what these guys do with this in the next year or two!
