About
AlXimia Winery is a very unique and completely different winery than what you will find anywhere else in the world. Started by a mathematician turned winemaker, this amazing winery was built by an innovative architect, the mathematician-winemaker and his astronomer father. It’s a 3 story round building that has been called “the flying saucer that landed in the Valle de Guadalupe”, the “Cathedral of Wine”, or “a sculpture disguised as a winery”. From the 2nd floor tasting room you can see the whole winemaking process, as the grapes come to the top floor and travel by gravity to the 2 floors below for fermentation, aging in French oak barrels and bottling. The barrel room is underground and can be viewed from above. You will be able to taste and buy their delicious wines – mostly non-traditional blends that make the best of the Italian & Spanish varietals that grow so well in these hot wine valleys. Alvaro (the winemaker) is considered one of the best up & coming winemakers in Mexico, and his wines have received multiple accolades – being rated 91 to 95 by Mexico’s top sommeliers.

First time at Alximia, however fan of their wines for long time. They keep high standards in service, food and health (due to CoViD). Our day was perfect, as celebrating a big day in our life. Had some lovely cooked lamb chops, at the right point slightly smoked with fresh produced veggies and a lovely mashed cauliflower. Having lunch with a view of Zinfandel grapes is more than relaxing. Time to drink some of their premium wines without disappointment. The place can not be missed on the next visit to Valle de Gudadalupe.

My wife and I visited the AlXimi Vino Elemental winery in the Guadalupe wine country of Mexico last weekend. It was our first visit to the winery and it was a very pleasurable experience. First of all the winery building itself is " Out of this World". It looks like it is from outer space, and does not look like any other winery we have ever been too. The Architecture is breath taking. Inside the winery everyone stands and looks up and says "Wow" ! Their wines are good but are a little pricey. The Director General and Wine maker Alvaro Alvarez Parrilla was very nice as he told me the history of the winery and why they built it the way they did. They have a great out door BBQ restaurant area with a view of the vineyards. AlXimia winery is a must see if you are going to the Guadalupe Valley. I know you will enjoy the Architecture, the Wine, and the over all experience !

If you're going to the Valle de Gudalupe to visit a winery, make sure this one is on your Must-Go-See list. I have visited other high-end wineries with gourmet restaurants attached and all have been wonderful. They cater to foreign tourists and locals who want a fine dining experience within the ambiance of the Baja wine region.
AlXima Vinicola, or vino elemental as the labels of their wines suggest, is an extraordinary fusion of modern science with the best of Baja's fruits. Add to that a French Provencal cuisine from Chef Martin St. Roman, and you've got an award-winning combination.
For those interested in wordsmithing, the name, AlXima, pronounced Al-See-Ma, is derived from the Greek word, alchemy - chosen because the owners of the vineyard are scientists. But behind that lies even more depth to the word. AlXima is a combination of the owner's name, Alvaro, and his daughter's, name, Cima (pronounced See-Ma), and the he X was used for Mexico!
After your tour of the winery, make sure you stay for lunch inside the La Terrasse San Roma restaurant where Chef Roman will prepare a French Provencal-style of cuisine in his open air kitchen.
Make sure you bring cash because this winery and restaurant to no take credit cards. Bon Appetite!

We arrived there and got a little tour. The guy explained us how the building will work when it will be finish. Amazing design of the building and eco-friendly features. The we tasted 4 wines. They tasted something I never tasted before. It was good and service was great. Setting could be a little better to let us be close to the tasting counter when we taste the wine but it's ok we took our time, watch the scenery around by the big opening and got a little food at the on-site restaurant. Really great experience.

Thank you very much for your comments. Your feedback is really appreciated. We have already made some changes so that that visitors can enjoy the setting better in the future. We removed the table that was "hidden" behind the wall in the corner, and will be adding more tables & making some additional changes in the next few weeks.

This state of the art winery combines intelligent architecture, environment awareness and the perfect setting for great winemaking. The wines express the greatness of the terroir and the hospitality from the Alximia family make this an experience to remember.

We drove through the Valle de Guadalupe countryside when we by chance came upon the unique architecture of the vineyard tasting room and restaurant, which piqued our interest. The founder is a mathematician and his dad an astronomer, and it was founded in 2004. The vineyard is run completely on organic principles, aiming for the lowest possible environmental footprint.
We tasted six wines and were impressed with the uniqueness and quality. Our host went to great lengths to explain the characteristics of each wine and the background of the "vinicola". They also have a restaurant, but it was too early for us to have lunch so we only tried one "botanita" (slices of baguette topped with crushed tomato, portobello mushrooms and goat cheese - delicious). The vineyard views are beautiful from the restaurant and outside decks. Highly recommended!

This place, archetecturally, looks like the Mt. Wilson Observatory, but the wine is pretty good, not great. They emphasis the "tintos", but I preferred the white. Nice little restaurant overlooking the vineyard, with a view of the distant mountains. Limited tapas-type menu. Try the duck liver pate. Skip the steamed mussels at all costs. Weird texture. The staff was exceptionally friendly.

We loved everything about it!! The place is fantastic and the food was really good!! We only wanted to have the wine tasting but we ended up having lunch over there. Service was also very good. No complaints!

Driving down the road, you'll see this spaceship like of a building and wonder what the heck it is. The building itself is beautifully designed and if you talk to the people there it's done to promote conservation in the best way possible. It was hot as hell the weekend we went, and as soon as you step inside the winery, there was a cool breeze (no AC at all!). The wine making process was also made to maximize natural rain and gravity. So tons of kudos for that!
The wine tasting table was definitely not fancy, just 1 girl behind a table giving out pours. The regular wines themselves were just ok but the 2 premium reds were quite good. This is the only wine I bought on my trip down here if that means anything to you.
They also have a cute restaurant inside looking out into the valley if you're hungry.
