You do not have to be able to ride. We had two riders with us that had never ridden before and they did great. The guide is excellant with his instructions and encouraged them all the way.

They go out on the rides alot...morning and afternoon. Have to reserve. Also different prices for length of ride

I was just a visitor, so I would suggest calling the stables directly. I'm not sure this is a place you would want to board your horse, though.
