What a great experience we had at the vibrant tasting room of Tree Spirits. I am a big fan of sparkling wines, which originally attracted me to Tree Spirits. Their apple and pear offerings were excellent, with just the right amount of sweetness and effervescence. We were even more taken with their unique maple demi-sec wine with its wonderful aroma. We brought a bottle of it home with us – it will be fun to serve with breakfast – trust me! But we were totally blown away by the two products called subLime – Pear subLime, a mixture of pear brandy and organic pear and lime juices; and Pom subLime, containing pomegranate juice, organic lime juice, ginger bitters, and Tree Spirits Applejack. You must include these in your tasting – they are phenomenal.

A regular tasting costs $5 and gets you five samples and a particularly nice glass (I liked the glass so much, I bought some additional ones). For an additional dollar, you can include the intriguing absinthe as one of your five choices. I had never tried this long-outlawed, controversial spirit before, so appreciated this opportunity. The description of absinthe’s history by Bruce, the owner, was quite interesting.

Local ingredients are exclusively used in making the wines and spirits here, another plus. And the labels on the bottles are classy works of art. I loved the color scheme of the tasting room, too.

If you are heading up I-95 anywhere near the Augusta-Waterville area, you should definitely treat yourself to a stop here. It’s just a couple of miles off the Interstate. In fact, even if you aren’t in the area, a special trip to Tree Spirits is definitely worth it.

If you're looking for a unique winery to visit, then you have to try Tree Spirits! Not far from I-95, they are easy to access. Locally produced wine from locally grown fruits. They have wines and spirits. We loved their Applejack, but absolutely fell in love with the Absinthe Verte. Absinthe was outlawed for centuries because it was believed it caused hallucinations, it is now being reproduced again. Tree Spirits was the first place in New England to start distilling it again. They use a recipe from the 1800's. You just have to try it!

We stopped in for the tasting of their wines and spirits - $5 dollars for 5 tastes ($6 if one of the tastes is their excellent absinthe) and you keep the tasting glass. They have a nice tasting bar area but it is a little small for large groups.

Their products are top-notch and reasonably priced for "artisinal" spirits. As the only absinthe maker in New England, its worth a stop just to try it (and to buy).

We were given a quick tour and then a tasting. Great wines (including sparkling), brandy, sherry, and then of course absinthe which actually tasted great straight.

You get to choose five things to taste. My favorite was the sparkling pear wine. We all had to try the absinthe which is worth the trip to hear the history.

My husband and I walked into TS and were warmly welcomed by the owner. We proceeded to sample a selection of five spirits and wines. As advertised, the sparkling wines are not sweet and are quite refreshing. We purchased a bottle of the pear to take on our journey.

The subLimes were a surprise. We purchased the pomegranate subLime to make Sangria.

The absinthe is in its own category. I picture the ritual pour and treasure the novelty.

I purchased maple body butter and maple vanilla as gifts for family and friends.

Thanks, Bruce. Good luck with the expansion. It will be wonderful to enjoy your spirits and wines with live, local entertainment.

The building looks like an old garage, the sign out front is almost too small (the "open" sign helps), and inside is a friendly, knowledgeable "tour guide" to lead your way through sparkling pear and apple wines all the way to brandy and absinthe (your choice of where the palate goes). No grapes here but products made from Maine apples and pears -- tastes transformed by the process. Try the absinthe for a real adventure -- who knew adding water would do more than dilute the (complex, not for the faint of heart, very very wonderful) flavor.

This place is so fun to go to. The wines here are not what you will find at the local grocery store. Workers are happy to tell you about what they have in stock and make suggestions based on your preferences. We've always enjoyed the new wines we have tried here.

Fun time tasting wine and other spirits. The woman working there was full of knowledge and very much down to earth. I bought a Pom sub lime, which is apple brandy blended with fruit. Very delicious.
