Of everywhere he traveled in this world, "Papa" Ernest Hemingway chose Key West to call home. It's here that we chose to craft the rum made in his honor, Papa's Pilar. Our Rum Distillery is located in a historic tobacco warehouse built in 1878 by skilled Irish bricklayers . Here you can navigate the art of making rum, discover how our rum makers craft our unique spirit, uncover untold stories of Hemingway and experience an adventure Papa would be proud of. Taste, Experience, Explore, Shop and bring the spirit of Hemingway home! Open Mon - Fri 10am-5pm and Sat & Sun 11am -5pm. We are located at the corner of Greene & Simonton Street in Old Towne Key West.

There are not enough words to describe just how incredible of an experience it was to stay at and visit Papa’s Pilar Distillery. The location is right in the heart of downtown and unbelievably close to so many wonderful things to do. The spirits within the distillery from the fantastic rum to the warm hospitality of the crew, will just fill you with absolute joy. The views from the apartment were beautiful, and just a short walk from the distillery will take you to an ocean view that supports one of the most breathtaking sunsets we had ever seen. The knowledge of the crew at Papa’s Pilar not only about their famous rum, but of Key West and where to go, will simply blow you away. We couldn’t have asked for a better way to experience Key West and whenever we visit, we will be sure to go back! Thank you again!

This is a great spot to visit in Key West! We took the Distillery tour and the experience was fun and enlightening. Our guide Moe told us some interesting and humorous stories about the Distillery’s namesake and past, while explaining to us the process that goes into producing and bottling their product. We got to sip on a delicious cocktail concocted for us while we learned. Afterwards we were treated to a generous tasting of the light and dark rums produced there, and they were both excellent! I brought some of each home with me, and their light rum was all I would drink in a mohito for the rest of our trip. Many of the bars on the Key carry their product, a testament to how good it really is. The staff was friendly, helpful, and knowledgeable, and really went the extra mile to make us feel safe and make sure despite the circumstances that we still had a great time. If you like alcohol science, history, or just drinking super tasty rum, this is a can’t miss in Key West.

Excellent tour of small distillery that makes rum in cooperation with the Hemingway Foundation. Learn all sorts of interesting facts - not just how rum is made, but also stories about the shape of the bottle itself, etc. Our tour guides were very gracious, knowledgeable and generous with their time. The best part is going to the bar for a few samples! Tour costs $16 and must be booked in advance (we had to return the next day since all tour times were booked when we walked by). If you take the tour and buy a bottle of rum, they'll knock $5 off the price. They have very strict Covid practices in place. Next time, we'll book the mixology class and learn some tricks about craft cocktails made with rum. The gift shop has some very interesting items. This would be a perfect activity for a rainy day. We loved it!

I was already a fan of Papa's Pilar Rum so while I was in Key West on vacation I wanted to visit the distillery. What a fun time! Our guide was Mo. Not only was he very informative regarding the process of making rum and Hemingway, he was also VERY entertaining!!!! Our group had a great time! Highly recommend!

Our guide was Indiana and she did an awesome despite her colleagues continually talking during her presentation. In fact, it was so annoying and rude that we had to tell her co-workers to please stop talking not once, but three times so that we could actually hear what she was saying (apparently they were very slow learners and just didn't get the fact that a tour was going on). Well worth the trip to the distillery and we learned a few things too. Good job Indiana! They'll also give you $5 off on any bottles you purchase.

What a fantastic experience just steps from the hustle of Duval Street. We were joined by other couples and given the opportunity to relax, taste and learn how to mix cocktails while also learning about the history of Rum in America, the life of Ernest Hemingway, and the science of distilling rum. It was relaxing, enjoyable and so very worth it. The staff was so friendly and accommodating, I would highly recommend the experience to any and all visitors of Key West.

This is ABSOLUTELY a ***must-do*** for any visit to Key West. Mo, our tour guide, did a great job of pulling off being both entertaining and informative. He even liked my "ex-parrot" joke.

The Hemingway House & Museum is our #1 destination, and this is a close second! Highly recommended, do not miss!

We took the distillery tour. Our guide provided a very interesting and informative narrative on the history of the origins of the company and how it related to the Hemingway family name. Our guide Mo (take tour to find why his name) was great. We came away feeling we had been given the inside look at this distillery and some insight of what goes in to creating a quality Rum. Our tasting was orchestrated by Mo giving insight to each rum tasted even giving a sneak peek (taste) of a product being released in July. GREAT JOB MO THANKS FOR THE EDUCATION.

Given the legendary Hemmingway made Key West his home for a while and loved rum, how can you go wrong with his family's distillery? You can't.

The tour was very informative, not only about the making of rum, but more information on Mr. Hemmingway. The rum was also quite tasty. I had priced it here at home and could buy it for less here, but with the tour they gave us two tokens for $5 off a bottle of rum. That put the price more in line with the regular retail market. Additionally, the rum they sell is made right there on the property and has special labeling, etc.

In addition to the tasting, included in the tour, they told us of ways to serve the rum.

Was very enjoyable and entertaining.

The layout and history of the building was very cool. Our tour was awesome, and our tour guide Indianna made the experience something to be repeated on our next visit. They had a great sampling of their rums and reasonably priced and discounted product for us to purchase.
