Of everywhere he traveled in this world, "Papa" Ernest Hemingway chose Key West to call home. It's here that we chose to craft the rum made in his honor, Papa's Pilar. Our Rum Distillery is located in a historic tobacco warehouse built in 1878 by skilled Irish bricklayers . Here you can navigate the art of making rum, discover how our rum makers craft our unique spirit, uncover untold stories of Hemingway and experience an adventure Papa would be proud of. Taste, Experience, Explore, Shop and bring the spirit of Hemingway home! Open Mon - Fri 10am-5pm and Sat & Sun 11am -5pm. We are located at the corner of Greene & Simonton Street in Old Towne Key West.

Well, I must say this tour did not disappoint. The 2 of us and about 15 others walked through the very small but still operational distillery, guided by Mo, a very knowledgeable young man, as he discussed various aspects of Hemingway's life including his wives, his boat, and his drinking, all while explaining the rum distilling process. The photos of Earnest's life were amazing, the artifacts were very cool, and the rum was delicious. Buy some rum distilled in Key West at the end of the tour - they have rums you cannot get anywhere else! Great tour, great guide, and great rum! Only takes about an hour! There's a large but very comfortable bar in the back where you can buy cocktails made with Papa's Pilar rum and sit and relax away from the Key West noise and chaos. VERY worth the short walk. The staff was exceptional and they met our every need as we had to plan this event from out of state. The drinks especially the Passion Fruit Daquiri and Papa's Punch were well received. All the staff at Papas was knowledgeable and very helpful re finding a way to get Pilar when we get back to Ohio (they don't ship there). The others on the tour were also fun with exception of a rude 4 some who walked in seconds before the tour and demanded to go with us...then did not drink and spent the whole time translating what Jeremy was saying to their language. Our guide Indiana knew her stuff and was fun. This is a fun and alternative way to spend an hour in Key West. The adjoining Social Club has an extensive list of rum based craft cocktails. Excellent tour of small distillery that makes rum in cooperation with the Hemingway Foundation. Learn all sorts of interesting facts - not just how rum is made, but also stories about the shape of the bottle itself, etc. Our tour guides were very gracious, knowledgeable and generous with their time. The best part is going to the bar for a few samples! Tour costs $16 and must be booked in advance (we had to return the next day since all tour times were booked when we walked by). If you take the tour and buy a bottle of rum, they'll knock $5 off the price. They have very strict Covid practices in place. Next time, we'll book the mixology class and learn some tricks about craft cocktails made with rum. The gift shop has some very interesting items. This would be a perfect activity for a rainy day. We loved it!

If you like agritourism, Hemingway folklore or science this is a nice stop for your KW adventure.
Our guide, Mo, did a great job finding humor in everything he said and kept every one entertained. Because of his background he was especially effective with the science, folklore and theatrics of the history of Hemingway.
This is a good stop for air conditioning too!

We had free entry included in our Old Town Trolley Service ticket so we don't know how much this distillery costs to get in, but we would pay! We found the visit to be very good indeed. Our guide "Mike" was very knowledgeable and seemed to be enjoying his job as a guide which came over in his enthusiasm. He was making us laugh a lot, too. Learned a lot about the rum making process and of course got to taste some excellent rums at the end. Ok, So we got in for free, but I would pay to get in anytime as this is an excellent attraction.

There are not enough words to describe just how incredible of an experience it was to stay at and visit Papa’s Pilar Distillery. The location is right in the heart of downtown and unbelievably close to so many wonderful things to do. The spirits within the distillery from the fantastic rum to the warm hospitality of the crew, will just fill you with absolute joy. The views from the apartment were beautiful, and just a short walk from the distillery will take you to an ocean view that supports one of the most breathtaking sunsets we had ever seen. The knowledge of the crew at Papa’s Pilar not only about their famous rum, but of Key West and where to go, will simply blow you away. We couldn’t have asked for a better way to experience Key West and whenever we visit, we will be sure to go back! Thank you again!

We did the “ Hemingway Chronicles” tour and tasting. Our tour guide, Nikki “Indiana” Hayes was awesome, so knowledgeable, friendly, and fun. First we had an informative tour that covered the origin and history of the distillery, the process of making rum, and the differences in the various types of rum they make, followed by a tasting of all the rums. Then we enjoyed rum punch and daiquiri cocktails while Nikki read to us selections from Hemingway’s The Old Man and the Sea. So cool! They also offer other types of tours, cocktail making classes, etc. They also have an excellent gift shop where they sell rum at a competitive price, along with lots of other branded apparel, cocktail / bar accessories, and books by and about Hemingway. If you like rum, or have an interest in distilling processes or in Ernest Hemingway, this is a place you should not miss. If you want to do a tour, book it in advance if possible … when we first inquired they were almost fully booked 2 or 3 days out.

We took the distillery tour. Our guide provided a very interesting and informative narrative on the history of the origins of the company and how it related to the Hemingway family name. Our guide Mo (take tour to find why his name) was great. We came away feeling we had been given the inside look at this distillery and some insight of what goes in to creating a quality Rum. Our tasting was orchestrated by Mo giving insight to each rum tasted even giving a sneak peek (taste) of a product being released in July. GREAT JOB MO THANKS FOR THE EDUCATION.

Quite honestly, we arrived later in the afternoon on a rainy day when they were getting ready to close for a private event. However, Hurricane (remember, Papa Hemingway was all about nicknames) was at the bar and gave us VIP attention in the less than 10 minutes she had to spare. She turned us over to Andie and Rick who completed our quick education. We did take home a bottle of rum and will be back when we can take advantage of a full tour and tasting.

We had high hopes for this distillery given the spirit of Hemingway layered into their founding. However we found the experience impersonal and rather dull. The rum is good, not great, and expensive. You can find rum that is of the same if not better quality for less. If you really like rum it's worth stopping by to make your own decision, but we weren't impressed.

Thank you for taking the time to visit us especially during this period of time (pandemic). We appreciate your feedback. In June we weren't fully operational we were basically open for purchase and pick-up sand limited shopping Q/A etc. So your experience would not have been of the depth and caliber that it normally would have been pre-pandemic OR what we currently started offering in late Aug. Having said this we would love to invite you to visit us again in the future and we would like you to be our guest on a in-depth Distillery Tour and special Tasting. We booked a couples tour and really enjoyed the experience. It's a fairly small operation in Key West but produces some very tasty rums - we liked the Blonde Rum and the Dark Rum the best of the four we tried. We learned some very interesting things about Hemingway, including who the rum is named for, and learned a lot about the distillery's blending and aging process. Mo was our guide and he was the best - very personable and very funny. If you take the tour you will also receive a discount towards the purchase of some delicious rum to enjoy when you get home from your travels!

My husband and I really enjoyed this tour. We have been in Key West for 2 months, and have done virtually everything here, but this is at the top of the list. It was much more informative about Hemingway than the Hemingway house. Both MJ and Mo were highly entertaining guides, each with his own style. The historic building is carefully laid out, and the gift shop has lots to buy (i've returned twice more to buy other things.) Most importantly, the rum is delicious, and the tasting pour is generous. I like rum cocktails, but this is great for sipping too. I bought several packages of the blonde/dark combo to give as special presents.

I’m not interested in a tour or formal tasting, but would like to try the rum. Can I come by just to sit at the bar and order a rum? Or is booking a tour or event the only way to enter and try the rum?

There is a very quaint bar in the building as well. You can just go in and order a drink! You do not have to do the tour and/or tasting.
