About
With a background in teaching, a love of chocolate and an overwhelming desire to share the delicious art and science of chocolate with the world, I’ve been offering chocolate making workshops for a few years now. Working with the tree, the beans and the stories and myths that surround this magical fruit, it’s hard not to fall in love with the seriously great chocolate we’ll make in class. Come with curiosity about this popular food and leave with a new appreciation of what real chocolate is!

Unexpectedly the best tour on our trip!
We were interested and looking forward to the tour but it ended up being an incredible experience. Fun little farm complete with dogs and chickens. You get a close up with the trees and fermenting cocoa then head inside to taste and learn all about the fruit. Never knew there was so much to learn. We went over by an hour I believe so money well-spent. Really engaging and inviting atmosphere where you felt free to ask any question. A great teacher and we left feeling so much more knowledgeable about not just cocoa but also the Costa Rican culture.

My husband and I went to this workshop because I love chocolate, both eating it and baking with it. We learned all about the history of chocolate and how it goes from a cocoa bean to the chocolate we love to eat. Ancel made it both fun and informative. We loved it from start to finish! Definitely a must do if you are a fan of chocolate.

This class is perfect for chocolate lovers, whether you just want to eat chocolate or are keen to learn all about the process! Ancel was knowledgeable and passionate about the history of cacao in Costa Rica and the class included a little bit of everything. Lots of tasting opportunities and it was lovely to leave with the products of an afternoons work. Really enjoyable and good value for money.

We had an exciting day today with Ancel making chocolates! I am so happy, I learnt a lot more about the cocoa plant, including its uses and medicinal purposes.Thank you so much! I’ll be eating all this chocolate for days. 🙂

We were so fortunate as a family to have this tour to ourselves when we went, and enjoyed this class just as much as we enjoyed the thrilling activities we did in CR. Ancel was Incredibly knowledgeable about cacao, exemplified by our starting outside at the tree in order to learn about the history of the plant first. Once inside, we partook in every step she would go through herself when she makes chocolate to sell, which once again was so much more enjoyable for our family since we were lucky enough to score a private class. When you're done you get to take home your chocolates and cacao nibs you worked with, and Ancel even made us a chocolate drink she would have with her breakfast while we waited for our taxi to arrive. 10/10 experience we didn't plan on doing in CR but are so glad we did!

Super cool experience!! I learned a lot about the history of cacao as well as the medicinal benefits - two things I wasn't expecting to learn! Ansel is an incredible person too. I would recommend this to anybody traveling through the area.

This workshop far exceeded any and all expectations and was the highlight of our trip so far. Ansel was such an engaging storyteller and teacher, giving of her knowledge in a way that makes you fall hoplessly in love with all things cacoa. You will learn everything there is to know from the vivid history of this magical healing tree to the entire process of making chocolate literally from the bean to the bar ♡ Be sure to visit the botanical garden afterwards!

Cacao and chocolate is something we have been using for so long, but now we learned that we knew so little about it. Ancel took us on a journey starting in the 1600s when the Spanish conquerors started planting cocoa trees in Costa Rica ending in the experience of making chocolate ourselves and taking part on a cocoa drinking ceremony and finding inner peace. On the way we learned a lot about the plant itself, its history and its benefits in regards to nutrition, health and religion. Time flew by when we did the three hour workshop with Ancel. We can rate this experience with six out of five possible stars. Thank you for sharing your knowledge and wisdom with us.

What a wonderful way to learn about the colourful history of chocolate! Ancel is a passionate storyteller of how humans and the precious cacao have evolved to the “modern” bar. A truly enjoyable experience. And a tasty one at that!!!
