We learned about the sake brewery tour from a J-Hopper staff. We're lucky that the brewery doing the tours that week is Hirase Sake Brewery, which is the oldest and biggest sake brewery in Takayama. It's a free tour and after the tour, you have the option to buy sake from them or not. They won't get mad if you don't buy anything. LOL. They do tours in English, too but I think only one person is doing it so we had to wait for a while. We were kept occupied though by offering us to try amazake, which is a Japanese drink made from fermented rice. It's basically the leftover from making sake. It was a very informative tour and we had a tour of the entire place. We even got to try their sake towards the end of the tour. It was really strong. Whew! Before we went out, we even saw the owner of the brewery. It's interesting to know that he's the 14th generation already. Wow. This was a really really good experience. ^^

We were prepared to get chased out when we went with a teenager and a young child, but was surprised that they let us in.
We were not offered any visit to the brewery but were instead shown to a display table with 5 types of sake, which we could sample for a small price.
We sampled 4 out of 5 and were pleasantly surprised with the taste. Not the strong taste like western whiskey but more smooth and subtle. It was an eye opening experience as we had only one bad sake experience sometime back.
We ended up buying two bottles of the sake and were again pleasantly surprised that they waived off the charges for the sample.
Come here to try the sake. You might like it.

We came in the early afternoon for some sake tasting. The guy in the brewery did not speak English, but we managed to order the sakes. You will pay around ÂĄ100-200 per cup. Here it is more quiet than in the other breweries and the sake is also very good!

We arrived late for the afternoon tour ( we were not aware of fixed times) and invited to return the next day. After explaining that we would be departing the next day they provided a special tour for us.
The tour was good but the sake tasting was excellent. It was a bit pricy but the gift of two bottles of sake and sake cups made it well worth while

Mr. Hirase arranged a personalized tour of his brewery for me in Takayama, this brewery is the oldest Sake Brewery in Gifu Prefecture or at least the city of Takayama. It dates back to 1623 passed down from generation to generation. Mr. Hirase arranged for MS. Akane, a part time employee of his and a full time administrator in the Takayama city office to provide a personal English speaking tour. They generally do not do this but MS. Akane did the tour and was directed to wait for my arrival. She went to college at the University of Virginia in Charlottesville but she is from Takayama. She explained the different grades of Sake how they are made and best ways to serve them and why to serve them in the ways she stated. This brewery also makes an excellent plum wine. I bought a 720ML bottle of mid grade Sake because it can be served either hot or cold and a 720ML bottle of plum wine, sweet but yet a little tangy as well. I tasted three different grades of Sake while there the tastes were free, some breweries charge to taste. These two bottles cost about 3,100 yen; in the US the same two bottles would sell for close to $150.00. Very fascinating. Mr. Hirase was in Tokyo the day I arrived and I really appreciate him setting this tour up for me as a special favor.
