We "Yamakawa Brewing" manufacture traditional "Tamari" soy sauce in Gifu since founded 1943. Our products are made by traditional method used old-fashioned cedar barrels and the underflow water of Nagara river which was also chosen as one of the 100 clear streams of Japan. Usually, many wheat is used for the production of soy sauce. The main ingredient of "Tamari" is soybean and hardly uses wheat. Tamari has darker color and thicker taste, less salty than soy sauce.
