After being collected from our hotels, we went straight to the market where Van's lively, informative and fun loving character becomes immediately apparent. We each chose a dish that we'd later prepare and cook before Van probably spent the best part of an hour walking us through the stalls choosing and often tasting our ingredients (or other things she sees of interest. Then it's back into the minibus for a trip to her home where she explains in detail how to use your equipment (knives) and prepare your dish. Next you each, one by one, get to cook your dish in front of the group (who by now have probably become friends, such is the humorous style of Van's delivery) and each then share the tastes. Throughout she is ably assisted by her three helpers who work like trojans keeping things cleaned and all in order. Don't underestimate how much you'll get to eat. There were twelve of us, so twelve varied dishes, seafood, fish, beef, pork, vegetarian, cold, hot, spicy and always incredibly fresh tastes. Incredible. Personally, I enjoy cooking (and eating!) so this was a delight however my wife less so and she really wasn't sure if she wanted to join me on this experience. She's so glad she did!! Van makes everything fun and we both learnt a lot, had a good laugh and tried things that might otherwise have passed us by! At around £75 for two, it's great value and, I'd say a must do if you have the time. We were collected around 8.30am and got back into town around 4.40pm, having eaten our fill, drank shots of spirits and enjoyed cold drinks (beer, soda or water) throughout. There was 13 in the group (including a family of 6 who had been twice before!) and Van managed to orchestrate, show/ demonstrate everyone’s prep for each specific dish, giving us time to do our prep then creating the space for each to cook, present and sample each of the dishes. Such a nice change from classes where everyone is making the same dish, we had so many great flavors including three different fish cooked three different ways, two HoiAn pancake recipes, stir fry, curries and soups. She provided water, sodas, beer and an aperitif made of passion fruit and vodka as well as a gift at the end. Nice touch! - Keivan2 contributionsCooking class that exceeds expectations in every aspect!Doing a cooking class with Van has been hands-down the highlight of our Vietnam trip. We got picked up from our accommodation on time and we went straight to the market. You could see some other cooking class groups that were rushing through the market. But Van takes her time and explains all the elements of Vietnamese cooking and what to look out for when buying these ingredients in your home country to make sure they're as fresh as possible. Next is the cooking class in Van's beautiful home (in a nice and cosy kitchen). Van spends a sufficient amount of time explaining how to cook one dish at a time. The great thing about Van's cooking class is that she doesn't just cook for you; she shows you how to prep/cook the meals but then you have to do the cooking. So you learn by doing instead of just watching. The food that we prepared turned out amazing and was so yummy. Make sure to skip breakfast. I have never eaten this much delicious food in a span of one day. Van also let us try her plum wine and shrimp cocktail which was a bonus. We learnt from Van that she has a very cute cafe in Hoi An by the river (Van Le Café) and we visited her that evening with others from the cooking class and had a wonderful time trying her very delicious and affordable cocktails (you have to try Phojito!). If you want a cooking class in Hoi An, this is the place! We messaged Green Bamboo the night before for a half day evening class, they are very responsive and we’re extremely flexible with our times.
We got picked up in a desired location, and went for a lovely shopping trip in the market, trying local fruits, foods and juices, Mangosteen is amazing - a must try!
We cooked a variety of dishes in a lovely, clean and spacious environment, being taught new cooking methods and ways to bring out the amazing flavours of the ingredients we just shopped for. I recommend cooking the Chicken Ca Ri - wow the flavours are superb! We liked every dish cooked and at the end were given a cookbook of local recipes to try when we get back home.
I can’t thank the company enough, they are so friendly, kind, patient and knowledgeable of local cuisines and flavours, this experience is really tailored for you as individuals, it’s a MUST if you are visiting Hoi An!

Van was prompt at communicating. Our class was small, about 7 people. We all ended up picking entrees, I would recommend other groups to pick some appetizers to mix it up as it was too heavy to eat so many entrees. She takes you to the local market where she teaches you about local ingredients and we buy all the ingredients for the dishes we picked. My husband unfortunately got sick during the market tour (something from the hotel breakfast, not from the market itself). She was very kind, got him an electrolyte drink and traditional herbal medicine but he was not feeling any better. She helped him get a cab back to the hotel while I stayed for the class. The cooking happens in Van’s kitchen where she has assistants to help with prep and clean up. There are unlimited drinks in a fridge where you can help yourself to water, beer or soda. Each person makes their dish under her guidance and then everyone tries it. It was a great way to try many different dishes. I had read reviews that some people had attended 6 times before and now I see why! I would take this class again if I was back in Hoi An. The class is a great experience to see Vietnamese cooking techniques and learn about different dishes. I highly recommend this class. At the end of the class, you get a recipe book, cooking chopsticks and a grater. She ran out of copies of the recipe book but had her driver drop it off the next day at my hotel. However the hotel gave it away to someone else for an unknown reason so she came by at 10:30PM to drop off my copy! I appreciated her genuine kindness and persistence.

Van presents a “farm to table“ experience par excellence. The magic starts with her ability to know everyone’s name after the briefest introduction, reflecting her genuine interest in each individual. The day passes in a blur of individual and group achievements – raising the standard for all your future Vietnamese meals. This is a treat for the whole family and will elevate your entire Vietnam visit. BEST INVESTMENT EVER!

Our travel agent (Absolute Asia) booked this cooking class in Hoi An Vietnam. I was able to WhatsApp with the instructor Van pre- trip to confirm dates and hotel pickup. She was very responsive. On the day of the class, Van and a driver picked us up along with our classmates and headed to the market where we bought the actual ingredients we used for the food we prepared! Watching Van greet and be greeted by vendors was fun and we learned a lot about the food, how the food moves from farm to table. We bought meat that was alive just hours before… and the freshest most fragrant herbs I’ve ever tasted. We cooked at her house where the five participants all chose different tasks to learn. Van had helped us bond as a group with a stop at an outdoor cafe where we enjoyed Vietnamese coffee and sesame buns from the market. We learned to julienne green papaya and carrots for the beef papaya salad, debone chicken and make curry paste for chicken curry, what herbs to marinate pork for barbq and she even treated us to her favorite snack - dried squid, cooked on a grill. We made spring rolls and fish. The most fun dish though was Van teaching the art of flipping in making those incredible Banh xeo- sizzling pancakes. As a group, we laughed and cooked and ate. The whole experience was fun, inviting, engaging. She gifted long cooking chopsticks, a grater, and a cookbook of the recipes to each couple and participant. We since have recreated the papaya salad so we can confirm that the cookbook recipes are usable in home situations!!
Van has a passion for cooking, and teaching. A man from a different cooking class even stopped her and wanted to know the name of her class as he was impressed in watching her teach us in the market. This is the best cooking class we have taken and we can highly recommend Van as a teacher and the cooking experience at Green Bamboo cooking school in Hoi An!

My daughter and I chose Van's class in Hoi An and definitely made the right choice,as there are a few to choose from.
Van and her driver pick you up from you hotel and everyone convenes at the market. All the ingredients for your chosen entrée you are going to cook are picked up from all her venders there, We all had a coffee after the market which was nice quiet place to meet everyone in our group of 10.
Van makes the class fun for everyone and makes sure we had a great menu of dishes with all different flavors and proteins. She had two assistants the day we were there and they were so dialed in on what to do they didn't even need to speak to each other ! Very well organized and the food was delicious! Planning to do a Vietnamese feast soon with all the recipes we were given and cooked in the class . Recommend it!

I had a wonderful day in Green Bamboo cooking school! Can warm recommend to take classes there! Classes are in small groups max.12 (but we were only 5 that day).
After pick up Van took us to the market to shop all groceries. Everyone did chose a dish they wanted to cook, some made 2 dishes, since we were only 5. After the market we took a coffee at a local cafe close by.
We were cooking in Van’s house, in her very cozy and specious kitchen. Van is a wonderful teacher, very warm and smiling person and she is speaking good English. We were each preparing the ingredients for our own dish, but we were cooking one dish at the time and did eat all fresh made. Since we cook one dish at the time, we did also learn how to cook all the dishes.
There was no rush in cooking. We were also very effective since Van had two helpers in the kitchen who did washed all the ingredients, the dishes, clean of the table, came with fresh plates, bowls etc. So we were only concentrated about the process, not the cleaning. Everything was very professional, but I still had the nice feeling like cooking with friends around a big table, with a lot of joy and laughs. Thank you Van for a wonderful day!

To start the day you are picked up at your hotel, given a menu from which you choose 1 dish you'd like to learn to cook, there were over 40 choices.
Then it's off to the local markets to buy all the ingredients, see how the Vietnamese buy and prepare their food, as well as some learning.
Then a short stop for a coffee and some mango, then off to Vans house to begin the cooking process.
There were 12 of us, so 12 different meals were being prepared concurrently. Van firstly shows you what to do etc and off you go. Van also has a few helpers in the background, cooking rice,cleaning etc, these girls also come in and help with food preparation if required.
After everything is cut, diced etc, one person cooks at a time, while Van discusses the process for that dish and helps with cooking. I was first up with spring rolls, so once cooked everyone tastes that particular dish.
Anyway to keep this review going, over a 3 hour period, you are cooking, watching others cook and tasting all the Amazing food.
It was an awesome day, we had great people on our tour which obviously enhances the experience, and the food was delicious, some were better than I've tried in restaurants I've eaten at in Australia.

If you enjoy food and like to experience cooking different cuisines 'Green Bamboo' is an absolute must whilst you are visiting Hoi An. There is an extensive choice of wonderful dishes to prepare. Van is an excellent chef, cooking teacher and host, who provides a wonderful insight into local produce, Vietnamese cooking techniques, and gives a unique perspective on the food culture of Vietnam.
We attended the local market in the morning to source and buy fresh ingredients and, with a class of 8 students, went onto to cook 9 dishes at the cooking school over the next 4 hours. A delicious experience with excellent tips from Van.

Brilliant cooking class/Vietnamese food experience at the home of Van, the founder of Green Bamboo.
Over the course of 6 hours we ‘perfected’ 6 dishes (spring rolls, pancakes,soup, curry, stir fry and morning glory if you are interested). But, what made this so memorable was getting to spend time with Van - so warm, hospitable and lovely.
If you are in Hoi An and interested in Vietnamese cooking then Green Bamboo is an absolute must

We had the pleasure of doing a cooking class with Van. It was really easy to organize. She is extremely available by email. She picked us up at our hotel and we went to the market. She showed us the place and explained how to choose the ingredients. What is really nice is that you get to choose your recipes among a big list, you have a lot of choices. We did 5 different dishes and every dish was delicious. We did the vietnamese pancakes (Banh Xeo) which was really fun to flip. Van kindly explained us many cooking techniques. She was always smiling, making jokes and is easy to talk to. We had a wonderful time and we would recommend to everyone going to Hoi An to book a class with Van, no matter how experienced you are in cooking!
