You can only see the museum here, which covers 1/5th portion of the palace. You can also stay in the Taj Hotel if you're not on a budget. If not staying, you can just grab a quick bite at their royal restaurant.

If you want to just cover important tourist spot like mehrangarh, ummed bhavan (and some shopping) then 1 day could be doable. But i have been there for couple of years and i would recommend to spend at least 2 days. Spent sometime walking the lanes of blue city near the fort, savor some local cuisines, shop from local market. Many would say you can do this in one day but then you would be doing is just for sake of covering the spots and not living those moments, believe me :)

So I've been working on an itinerary.. think I have a basic one made up for Rajasthan area but just need to know if each place will have enough time or too much time ( not too likely haha!) for what I have planned. You've done some terrific research. You could hire a car and a driver until Jaipur. Bear in mind that the car will have to go back to where you initially hired it from. So those miles will be added to your bill. Overnight train from Jaipur to Jaisalmer is the best option in my opinion. While you itinerary doesn't seem rushed, it does involve a lot of travel.
