Community project transforming local produce into healthy food from around the world! Cooking classes for low income community members and the general public, themed doors-closed events featuring imported ingredients from a different country every month, private events for sustainable tourism groups, families and friends. We're not a traditional restaurant, please visit the website or call to make reservations. Our Chef and Director Brian has been working as a volunteer in International Development projects since 2003, travelling to more than 70 countries and learning the local cuisine in 25+ regions around Asia, Africa, Europe and the Americas. Via Cocina is his life project, where he shares his kitchen and project management experience to help motivated local community members learn to cook healthier for their families, and to help aspiring entrepreneurs start their own small food businesses. Proceeds from tourism related activities subsidize training for low income participants.

Brian Johnson is the chef behind Via Cocina.

At its core, it is a Medellin based charity that teaches Colombian kids how to cook local food in a healthy way (no deep fat fried
food so common here). And more importantly how to sell what they cook to the public. The community pays nothing for Brian's classes.

The charity is supported by the monthly cooking classes Brian offers. Each month a different cuisine will be featured. Brian also teaches bread making and cheese making.

Brian is a Canadian who has traveled the world collecting new friends and great recipies. His expo kitchen is large, restaurant style. Gas ranges and turbo-chatged woks. His pantry is stocked with exotic spices not commony available in Colombia.

Some people come to class prepared to take notes and learn how to cook these foods at home. Others come to watch and socialize. Both groups come together with other members of the public to enjoy the feast. You will leave full. You are welcome to bring your own wine as the classes do not include alcohol.

Brian also does special events for groups. An event can include time in the kitchen or just being catered to by Brian and his assistants. He has full service for up to 24 people. He will customize the experience to your liking and handles food allergies or preferences well. Vegan, gluten free, mild or spicy hot. A lot of what you pay goes to the charity.

I have been to many of the monthly classes. The latest was Chinese Hunan Style cuisine. The latest class is posted on the Via Cocina website. The number of people is linited and the classes are small, interactive and intimate. Students do get to assist in the preparation and cooking. But the volunteer staff handles theclean up. Brian speaks both English and Spanish fluently.

Via Cocina’s offers a unique experience for people interested in having a special meal with the option to see behind the curtain and learn the preparation.as well.

Highly recommended. Classes are generally Fridays and Saturdays. Via Cocina is easy to reach using public transit.

Located in a old romantic style house which is a work in progress with an awesome open air porch right in the middle serving as the dining room. Brian uncomplicated dishes from India with the utmost respect for the origin of the recipe. Learned from the locals with a back ground in culinary skills. We make chapati, chicken marsala, chai tea, mango pickle, vegetable masala stew and an awesome mango cucumber salad. Some much loved it we insisted on another session for tomorrow. ⭐️⭐️⭐️⭐️⭐️.

While visiting Medellin, we booked Via Cocina cooking class. It was a great experience for myself ,my 2 sons, ages 10 yrs. &
13yrs.
We learned so much including cooking skills,loved learning about the culture, the neighborhood and Brian’s community project. It was memorial experience & we would definitely do it again.
And the food was delicious. It was so much more than a cooking class!

Brian reached out to a digital nomad community I run, and ended up hosting our welcome dinner when we arrived. He went above and beyond, and clearly did his research -- his menu was inspired by locations our group would be traveling to this year! The space was incredible, him and his staff were so kind and exceptional... And, of course, the food was great! Looking forward to sending more people his way who come by :)

A fun experience with a great host and a positive social impact. Brian our host and owner has a passion for food and for helping those who need some assistance in life.

The facility is good for a group experience and the recipes are delicious. The use of mostly local produce inspired by international recipes that Brian has picked up during his international travels makes for delicious food. Brian shares techniques to get the best of the food and then is kind enough to share the mouth watering recipes.

Combine all this with Brian’s mission to teach local people how to use locally sourced, well priced produce to prepare healthy economic dishes and it makes for a great way to learn some more about Medellin and to spend a few hours.

A great cooking and cultural experience. Brian’s home and cooking facility is fantastic with incredible cooking equipment and a beautiful roof top garden. We loved the fruit tasting which was with fruits we were experiencing for the first time. We thought we were experienced cooks but Brian taught us new cutting techniques and short cuts. We cooked four different delicious dishes and then feasted on them. The walk through the neighborhood gave us new insight into how Medellin has transformed into the city it is today. It was a vibrant part of the city we probably would not have experienced with out taking the class.

I hire Brian to cater dinners for my friends and I about 4 or 5 times a year at Via Cocina. The event is always intimate, fun, and delicious! Brian is creative and talented and uncomplicated in his communication and organization. I highly suggest using Via Cocina for classes or catering any time! Brian does great work!

I had the best time with Brian at Via Cocina. I give it my highest recommendation. Brian and I chatted for a while about the project, which supports the local community and is highly engaged in the neighborhood, as well as about the city, where he has lived for many years. Brian's previous experience traveling around the world gives him a rare international culinary expertise. He uses all local Colombian ingredients. We made four dishes: two Colombian, one Thai, and one Indian, using fresh ingredients Brian picked up just before our session. I had so much fun hanging out with him, and he is a brilliant teacher. I can't wait to try these recipes and cooking techniques at home. Best of all, I feel I was supporting local people through Brian's classes and programming. If you are in Medellin, I highly recommend Via Cocina.
