"A Highlight of Peru Experience" I returned April 11 from a six-week journey in Peru and one of the true highlights of my time was with Xavier Vargas at Rooftop Kitchen Peru. I am skilled in the kitchen so I was looking for an authentic menu and professional guidance so I could return home and "cook Peru" -- and Xavier delivered that. With grace and good humor he brought me through the selected menu that i had a hand in selecting, explained and demonstrated skillfully, but I did prepare it all myself, although a lot of the mincing and chopping was done for me in advance by the assistant. The facility is great, too. I was a solo, but it could easily accommodate a group or a family. Toasting with a Pisco Sour on the rooftop with a 360 Cusco panorama was a treat for sure. I wish i had had more time to do a second class. Next time! Marilyn Z

Xavier and crew were terrific from the start. We started with an amazing tour of San Pedro market in Cusco where he was very diligent in explaining some authentic Peruvian products while allowing us to try some samples. From there we went on to make some delicious Peruvian dishes in an incredibly clean and professional kitchen; following very meticulous COVID protocols so everything felt very safe at all times. My wife and I have done other cooking classes in the past but this was highly organized and kept a very good flow to it while being informational and engaging. The event space also has a perfect view of the city from the roof deck which made for a great photo op! I would highly recommend this cooking experience to anyone traveling though Cusco!

A tour of the San Pedro Market by our Chef Xavier, was as amazing as our class, which followed immediately after the market tour. We were taught the “proper way” to make a Pisco Sour as well as a lovely quinoa salad and trout tiradito -using all local ingredients. Ingredients are customized for any food restrictions or allergies.
The modern kitchen is large enough for big groups or comfortable enough for a couple, with beautiful views of the city. I highly recommend this experience with Xavier -a very knowledgeable and genial Chef!

"This restaurant is filthy and completely disorganized; everything feels improvised with no clear plan in place. It was a total scam and a waste of time. The owner, who happened to be there dealing with a problem, was incredibly rude and lacked any empathy; he's only interested in making money and doesn’t care about his customers or suppliers—I even witnessed him yelling at them. The place is spacious, but as I mentioned, it's dirty. The staff is friendly, but it seems they have no other choice, given that they're working under such a tyrant of an owner. Honestly, I wouldn't recommend this place and wouldn't return even if it were free."

What a Fabulous experience with an Amazing Chef! Xavier took us to the market first and he was so knowledgeable and fun! We learned so much from his stories and tastings throughout the market. We then went to the Roof Top Kitchen that is a beautiful contemporary space with a great setup for us to prepare our meal. It was a total hands on experience. I've done many cooking experiences in other places but Xavier is tops!!! Highly recommend!

The highlight of my time in Cusco! Xavier went above and beyond to make this experience enjoyable. The recipes were delicious and we even had wine included with our meal! Everything was prepped in advance so there was minimal chopping which is great for me. The kitchen itself was gorgeous and had great views of the city - there was also an herb garden! I truly cannot recommend this experience enough...it will not disappoint.

We were given a personal market tour introducing us to the wonderful ingredients available to local cuisine followed by an opportunity to cook some exotic local dishes in a beautifully appointed kitchen high above the nighttime city. Our mentor Xavier was a more than an expert and entrepreneurial chef, he was cultivated and charming guide to the city and its cultural history. the dishes we prepared were delicious and are now part of our own repertoire. His care in assisting us back to our accommodation in a night of torrential rain and lightning was much appreciated. A wonderful conclusion to our great Peruvian adventure.

We were fortunate enough to experience the Rooftop Cooking Class in late December with our 4 children ages 18-24. The space is unbelievable with amazing views of the city and the kitchens were absolutely spotless! Xavier was amazing - he first took on a walk through the markets and then back to the Rooftop Kitchen where we prepared Pisco Sours, ceviche and red quinoa risotto with mushrooms and blue cheese. The recipes were fun and delicious. I highly recommend this experience - it was a highlight of our visit to Cusco!

This is a must-do activity if you are in Cusco. We wanted more than a City tour and stroll through the San Pedro market. Xavier met us at our hotel and guided us through the market to explain the many varieties of quinoa, potatoes, maize, and spices used in Peruvian cooking. Afterwards we were transported to their incredibly clean and equipped kitchen with an amazing view of the city. We met David, the owner, and Clarice, their assistant. After we were fashioned with chef outfits, the next hour and a half was heavenly as we made our own Pisco Sour, trout ceviche, and a quinoa mushroom entree that was one of the highlights of our meals in Peru. Our meal was paired with wine and the entire evening was magical. Xavier joked that he is is the "anti-Gordon Ramsay" as this place was no Hell's Kitchen! Our entire family agree! Two thumbs Up for David and Xavier at Rooftop Kitchen!

Chef Xaviar led us on a tour of the San Pedro Market prior to our cooking class. The market tour was indeed a treat for foodies such as ourselves. Xaviar took his time explaining the different areas of the market and introducing us to new vegetables, fruits and meats and how they are used in the Peruvian dishes. The cooking class brought it all together. What a great experience in a beautiful setting overlooking the city. We loved our cooking class and the food was exceptional. This is a must-do activity!!
