This was a fabulous experience! Our instructor, Chau was absolutely the best. She was well organized, explained everything and gave us a lot of opportunity to actually prepare all of the dishes. We were a group of 3 and the class began with a trip to the market to purchase our ingredients- this itself is an adventure! We returned to the restaurant and went on to prepare a 3 course meal. This class is good value and you will leave full and with the confidence to prepare your own Vietnamese meal. Do not hesitate- sign up!

Seven of us started at the Lanterns Restaurant to which we returned after a market tour via minibus. Our instructor, D... (I’m not sure of the spelling) was immediately friendly and engaging. Her ability to stay on track and maintain a pace was incredible. The market tour was a wonderful learning experience and if we showed some inexperience with a food, she offered tastes or brought some back for tastes at Lanterns. The menu we made was canned/preplanned but with options for personal tastes. With a helper or two, our instructor kept us busy, instructed and our place settings cleaned up from our clumsy spills. We made spring rolls, marinated and cooked clay pot, and had a dramatic moment firing up rum for a flambé. To owner and manager I suggest the use of recyclable containers (hard plastic made by a ton of companies these days like Tupperware) instead of using the plastic bags the venders have in the market and which are thrown away within hours. Lanterns is into social causes and is well positioned to be a model for activities to save the environment for the children they’re supporting. Lastly, I encourage people doing the cooking class to also sign up through Lanterns for the Ninh Hoa village tour the following day. It was one of the best tours I’ve experienced. It included short walks through the village, visits in three homes, watching and making high quality incense, an oxcart ride, tasting rice wine, a visit to a commercial fishing pier and an English-speaking guide. You can go to a beach any day and ten years later not remember it but this village tour will introduce you to real Vietnamese in their own habitat which you’ll remember a long time, maybe even ten years plus.

Simple good Vietnamese food. Consistent quality - never disappoints. Take-away goodies including recipe book was a thoughtful touch.

The session includes buying ingredients used during the class at a local market, where the locals do their marketing. This includes seeing the bloody slaughtering of a bullfrog, if a participant in the class has chosen to cook hotpot frog. The instructor did comment that certain participants in previous classes regretted choosing to cook frog after they saw how it was slaughtered in the market. The actual food preparation is very interesting and practical. Participants consume the result of the cooking. Highly recommended.
