I was attracted to this cooking class because it sounded quite unusual and I also thought it would be nice to escape the noise and bustle of Hanoi by visiting an organic farm - I wasn't disappointed! It is a truly calm and peaceful environment, and sitting outside in the shade learning about the correct way to breathe really helped me relax, even though I am completely new to meditation and had never tried it before.. The recipes themselves were demonstrated by an excellent chef and, with Anna as translator, I was able to ask lots of questions as well as 'helping' to chop vegetables. (I must have tested the chef's patience but he could not have been nicer! ) I made notes about all the recipes and I do feel able to attempt them when I get home, which is not always true of every cooking class I have attended. Also, the Zen emphasis is on eating slowly and carefully and that definitely suited my temperament perfectly, bearing in mind that it happened to be a very hot day. Thank you Anna for a very interesting time and for arranging to collect me/drop me off at my hotel which was a great treat. A very good experience all in all.

Anna met me at my hotel by taxi and we went to the local market. The local market had a vast array of fruits and vegetables and I was free to ask her any questions. She responded by informing me what is the Chinese Ying and Yang and how it related to Vietnamese diet and cuisine. She gave me several examples of how the food related and how to balance either other out.

When cooking, we met at a local family's residence and prepared the food. Unlike my previous cooking class in Hanoi before, where we (the guests) only cut the food, but didn't cook the food (i.e., actually cook it using stove), Anna let me cook the food on the stove under her watchful eye. We prepared spring rolls, ginger chicken, green mango salad, and banana soup dessert. I learned some new recipes that day.

After cooking, she took me back to my hotel. All in all, a good adventure!

The cooking class that I took in Hanoi was perfect for me and my friends. We signed up easily and on the day Anna picked us up at our hotel. We went to a real local Vietnamese market to shop for vegetables and herbs for our class. Then we were taken on a nice drive to an organic farm not far outside of Hanoi. We learned a tea meditation and took a few minutes to be mindful before we started. We then explored the organic farm and picked some fresh produce for our cooking. Anna explained everything about the organic farm and the new and interesting vegetables that we were choosing. We went into the classroom and everything was set up for us. We began to mindfully chop and take out time to savor the flavors and smells from our cooking. We made some delicious and healthy vegetarian dishes. Anna was great, but I wished that we had more time to spent on the farm in the half day class (maybe we should have taken the full day class). Once finished cooking we all sat happily together mindfully eating and really being able to taste all of the food that we were easting. We said goodbye to Anna and then got taken back to our hotel.
