I organised dinner for ten friends and for attendees of an InterNations event. Thanh and I had not met before. It was important that she understood the diners' preferences, and my friends from Malaysia had sampled a wide range of Vietnamese food. No problems at all. The menu was changed and finalised quickly and without fuss.

We had bun cha burger and banh troi dau, a popular winter dessert.

My friends enjoyed the meal. The grilled pork was juicy, and the fish sauce nice and very much like the sauce that accompanies the delicious grilled pork with vermicelli, except that in our meal, the latter was meant more for presentation.

Did I enjoy this fusion food?

I think Thanh is a bold and innovative chef. It's hard to take a street food - something very iconic - and expect to have it easy. It didn't help that I had lived in Hanoi for a year and I knew what I wanted in a bun cha. For someone desiring a cuisine thrill, the bun cha burger is excellent. Unfortunately, the pork was grilled in Thanh's place and then brought to the eating venue, the Velo Love Cafe and Bar. I missed the fragrance, and I liked my bun cha hot. As well, it wasn't easy to apply the mandatory fish sauce to the meat. I'm sure these were easily surmountable issues.

I couldn't fault Thanh's Hanoi winter dessert. But, again, justice wasn't done in that it was served only just warm, not steaming hot.

I suspect the above complaints matter only if you come from parts of the world where tastes are acquired. Others may not find anything amiss. Still, certain foods present well, or taste good, only if eaten in a certain fashion. My suggestion is that you have to know your customer well.

We are so happy we had the chance to meet Thanh and cook with her at her very cute home in Hanoi. Everything about our morning was great-- it was wonderful to get out of the noisy parts of Hanoi and visit the more residential area where she lives, our market visit was interesting and Thanh was happy to answer all my questions about fruits and vegetables, and cooking was great! We made some delicious dishes that I can't wait to try again at home (especially the 5 spice beef stew). Thanh is also a lot of fun and very friendly, and we really enjoyed the chance to get to know her. She even rented us her bikes so we could bike around Ho Tay (the big lake that she lives right next to), which we really enjoyed! If you love food and want to meet a super nice and friendly Hanoian, definitely come cook with Thanh.

One of the highlights of our Vietnamese vacation

My family and I took a cooking class with Thanh, It was an amazing experience. She is very enthusiastic about food, and sharing her culture with you. I like that this was a hands on experience, and we all got to chop, stir, season, etc. I recommend this to anyone looking for an authentic culinary experience.

Great authentic foodie experience

The experience globally is excellent. I strongly recommend it to any food lover.
The food market visit/shopping is unique. A local market that you wouldn't visit by yourself. She explains with every little of detail what she is buying and whatever question you have.
Cooking was easy and delicious. You can see that Maia is a person that cares about details and about giving you the best foodie experience.
I would repeat for sure.
