Our tour guide was friendly, eager, energetic, and very knowledgeable of vendor techniques, histories, and overall culinary traditions. She anticipated needs like restrooms, water, and seating too, sending a runner ahead so everything was ready for us at the next stop. The food was delicious and plentiful. The only downside was the smell of the alleyways. While we had confidence the food we were consuming was made with care, the stench of ammonia, ripe sewage, discarded organic matter, and trash in the alleyways was at times overpowering, leaving us weaklings nauseated, breathless, and gagging. It's the price you pay for immersive authenticity, and is not at all something the tour company can control. But Michelin mention bites abound!
