Last week, I was fortunate enough to experience solo cooking classes at Blue Cuisine. My intention was to learn the fundamentals of Moroccan cooking so I could do it when I returned home. For the better part of 4 immersive days, I learned how to make at least 12 traditional Moroccan dishes - main dishes, salads and breads. It was a wonderful experience!
I went shopping for the ingredients with the staff in the souk marketplace. They told me about all the ingredients I saw there that I was curious about. Blue Cuisine calls the staff their “experience leaders”, but I called them my teachers. They were my teachers in every sense of the word - they explained everything, let me dive in and work with the food, patiently corrected me (especially when making the pastry type items) and taught me so much about their food culture and family culture. This was way more than a cooking demonstration.
The food was amazing! My cooking teachers were all wonderful, warm and kind people. We laughed and hugged and worked together. If you are interested in food and getting to know and spend time with people of a different culture, this is the experience for you!
