THE CHEF IS YOU! Escape from the bustling city day. Come learn how to prepare and cook a Moroccan meal while enjoying the non-touristy countryside relaxation. Our Garden is located about 29 km from the city of Marrakech. Upon arrival, we will take you around our organic farm. Learn to cook Moroccan food in our fresh organic farm and cook HEALTHY FOOD EVERY DAY!

They have a beautiful covered outdoor setting and we were greeted by Chef Tarik and everyone was given food to cut, slice, dice, etc. The Chef was friendly and informative and did a great job making us feel welcome. My husband and I so enjoyed learning about the tradition and making Moroccan tea, the organic gardens and the goals of Chef Tarik farm. We then donned on aprons and chef caps and made the many delicious salads, three tagines - vegetable, chicken and lamb. But the best part was enjoying what we cooked! The staff were wonderful and the property beautiful. What a great way to spend the day!

Chef Youssef could not have been more gracious and informative as he guided our small group through the night market on the extra busy evening that Ramadan ended. We started with fresh squeezed orange juice and tasted our way through the market ending with a wonderful chef’s tasting menu on a restaurant terrace overlooking the Medina. The snails were surprisingly delicious. A magical night in Marrakech!

My husband & I had a wonderful time and learned a lot about cooking, spices, tea and about our new cookware. It was in a lovely setting with absolutely charming instructors who spoke beautiful english. This school contributes directly back to the community through education and providing opportunities to young women. It's a Win Win. I highly recommend this venue either for couples or a large group. Bon Appetit!

I really enjoyed learning about Tajines and other dishes that are part of the Moroccan culture. I attempted to make a chicken tajine at home but it was not the same. This was a great group experience and I highly recommend it as a team building or educational experience.

What a wonderful experience - learning about the traditional spices used in different tagines we cooked together, ate together and laughed together!
The food was delicious and the staff knowledgeable and fun.
We learned how to make mint tea, couscous from scratch and how breads are prepared for the oven.
What’s even better is this provides training/ employment opportunities for young women in the area!
A beautiful farm with interesting technology for water conservation etc.

A fantastic experience. They came to pick us up at the Riad in the Medina on time. After a tour (perhaps a little long) in which we discovered the outskirts of the city, we were welcomed at the door by our wonderful hosts Siham and Nouhalia who revealed to us with great humor and friendliness the secrets of Moroccan cuisine. A highly recommended experience.

What a wonderful experience! We had a nice cooking class where we patiently got taught how to prepare a traditional tajine! Furthermore we learned about the basics about spices and different kinds of herbal tea. While the tajine was cooking we got a little tour through the BEAUTIFUL garden and were able to try some homemade bread with different toppings. After eating our self made food we got an awesome dessert.
We’d like to point out that this cooking school is teaching young women who might not get the opportunity for training or education to become a chef. This makes it an amazing institution with a great purpose! And our two chefs did an amazing job. They taught us everything with a lot of passion. Keep up the good work.

We had a wonderful time. The layout to receive guests, to instruct with cooking and to dine was perfect. The cooking instructions were clear, the ingredients fresh and the whole experience was amazing. It was also wonderful to receive all the recipes, hints and ingredients.

Thanks to Chef Youssef's guidance and expertise, our culinary adventure in Morocco was unforgettable. With his warm smile and welcoming nature, we felt instantly at ease. The enthusiastic chef showed us around the bustling souk and various eateries, sharing the cultural background of Moroccan cuisine. Each step of the journey was not only delicious but also educational. We savored fragrant couscous, succulent grilled meats, and delicate rose-flavored desserts that were true works of art. Chef Youssef ensured we tasted the very best regional specialties, from aromatic tagines to tantalizing street food. He even shared the recipe for a delectable beet salad! Thanks for turning our dining experience into a celebration.

Great experience, the team at Atelier De Cuisine were all amazing and made us feel so welcome. We had alot of fun while cooking, learnt a lot and ate deliocious food. A great day out and lovely to step out of the souks of Marrakech and see a bit of the country outside.

Hello, when I took the course with Chef Youssef on Jan. 3rd, we were told he would send recipes to us afterwards. I have sent two emails requesting them, but haven't received a reply. Is it possible to send me the recipes, or at least the spice combinations we used in our tagines and salads? I am anxious to make some of these at home. Here are the dishes I remember:

Lamb Tajine with Caramelized Prunes (Sweet Marinade)
3cups chopped sweet onions
• 3 pounds boneless lamb stew meat, cut into 3/4- to 1-inch pieces
• 2 cups water
• 2 cinnamon sticks
• 1 teaspoon ground cinnamon
• 1 teaspoon salt
• 1 teaspoon coarsely ground black pepper
• 1 teaspoon ground ginger
• 1/8 teaspoon crumbled saffron threads
• 250g drie prunes
• 4 tablespoons chopped fresh Italian parsley, divided
• 1/4 cup olive oil
• Sesame seed
Recepies Of Zaalouk (Moroccan Smocked eggplant salad (Normal + Cumin Marinade))
large eggplants
1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1 large tomato, chopped
1 teaspoon cumin powder
1 teaspoon paprika
1/4 cup fresh chopped coriander
1/4 cup fresh chopped parsley
Salt, to taste
1/2 teaspoon vinegar
1/2 teaspoon harissa (optional)
1/2 teaspoon tomato past
Recepies of Chicken tajine with green olives and pickeld lemon(Lemon Marinade)
INGREDIENTS
• 1 teaspoon ground ginger
• 1 teaspoon turmeric
• 1/4 teaspoon freshly ground pepper
• 2 Tbsp olive oil
• 1 chicken, 3-4 lbs, cut into 8 pieces (or 3-4 lbs of just chicken thighs and legs, the dark meat is more flavorful)
• Salt
• 3 cloves garlic, minced
• 1 onion, chopped
• The rind from 1 pickled lemon, rinsed in cold water, pulp discarded, rind cut into thin strips (if you don't have preserved lemon, use whole thin slices of regular lemon)
• 1 cup green olives, pitted
• 1/2 cup water
• 1/4 cup chopped fresh cilantro
• 1/4 cup chopped fresh flat-leaf parsley
or bouquet garnit

Ingredients:
4 ripe tomatoes, peeled, seeded and chopped
• 2 roasted green peppers, peeled and chopped

• 1/4 teaspoon salt
• 1/4 teaspoon cumin
• 2 to 3 teaspoons vinegar or limon juice

4 tbsp. olive oil
2 medium onions, peeled and quartered
2 tsp. sweet paprika
Pinch saffron threads
Salt and freshly ground black pepper
2 medium potatoes, peeled and quartered
1 large carrot, peeled, halved crosswise, and quartered
1 large zucchini, halved crosswise and quartered
2 small white turnips, peeled and quartered
1 medium green pepper, trimmed and cut lengthwise into 1'' strips
1 medium tomato, thinly sliced
Recepies of sweet pumpink salad
Ingredients:
- 1 kg of pumpkin
- 3 tsp.C cinnamon
- 5 tsp.S honey
- A pinch of salt
- Some sesame seeds for decoration
- A little oil
presverd lemon
- the water has to be boiled
- put your lemon in the boiled water for 2 minutes
- after clean it well
- open with knife as i have shown you during cooking class & stuff it with salt
- put it in the glass jar & seal it well ( don' t put the jar in refrigerator )
- leave it 15 days ( time to time it's good to shake the jar )
- after you can start using it & you can keep it for as long as you like
- enjoy it .
