Our family of 4 (parents and 2 adult kids) spent most of an interesting and yummy day with Lahcen learning all about Moroccan cooking, and making a scrumptious meal which we then devoured. He picked us up at our Riad in the medina, then we wandered together through the markets to find the best ingredients for the food we would make. Lahcen knows all the merchants and he showed us his favorite places to buy spices, and why he buys which kinds, and where and when to buy the best fish and meats. We stopped at a stall where the woman was making phyllo dough (and making it look easy!) so he suggested I try my hand at it and the woman agreed. Oh boy, was that a reality check! It’s MUCH harder to do than it looks! We all had a good laugh at my attempts! After walking back to the beautiful Riad where we would cook, we got down to the business of chopping and peeling and cutting and cooking, under Lahcen’s direction. He taught us some tricks to preparing foods, explained how and why certain foods and spices go together in Moroccan cooking and when to add them in, and basically kept us working towards the goal. In the end we made about 8 appetizers and 2 main courses. They set a lovely table for us in the dining room and we enjoyed our meal immensely. Lahcen speaks very good English so he can very clearly explain the methods, the hows and whys, and exactly what we were supposed to do. It was a very enjoyable and enlightening family day playing sous-chef under Lahcen, and he provided us with a little recipe book afterwards with many of the recipes we had made.

Great to be able to explore the markets with a local and purchase the produce to use for our class. Our chef designed the class to accommodate dishes and ingredients we were interested in and we ended up with a delicious and very filling meal. Our chef was so warm and hospitable. We learned so many things which allowed us to appreciate the food and food culture of Morocco!

The organization and guides were really nice. I really like the flexibility for pick up times. Our driver Ali was really nice, he took us to a very local place in Essaouira were we were able to taste the best fish ever. The last part of our trip was spectacular. Lancen is a great chef. He took us to the market were we did all the shopping to prepare a great marakesh meal... then we went to A very nice Ryad were we had the cooking class. A great experience and sometjing 100% recomendable to do.

I took one of Lahcen’s cooking classes 10 years ago and can truly say I enjoyed today’s experience as much as the first. Since I was going to be cooking solo, Lahcen invited me to a cooking class he was providing for another solo traveler, which worked out really well. During the shopping trip in the medina, it was easy to see that Lahcen has great relationships with the various vendors. The butcher even went off to get Lahcen an expresso! All of the recipes I learned were new to me, the explanations were interesting (ex: when and why spices are added to recipes at different times), and once again Lahcen built a nice sense of community in his kitchen. It was a great day, and the food we made was truly delicious. I look forward to using the e-cookbook Lahcen provides. Kay, USA

My wife and I Spent a wonderful 7 hours with our host Lahcen Beqqi. We shopped for an hour or so in the market near the blue gate of the medina, then we were taken to a kitchen in a beautiful guest house for the class. Lahcen is a highly skilled chef who was enthusiastic and professional throughout. With his guidance and the help of a couple of lovely women who worked in the kitchen we were able to prepare a feast of 6 different salads plus a lamb dish, followed by date and walnut balls . It was a wonderful cooking and cultural experience.
