yes, btw there is a mall entrance with a bathroom and foodcourt for last minute needs/snacks before the tour just within the plaza

Yes, the guide allows time at each stop to explore. Time varies each stop and can depend on the size of your group.

Yes, you should be able to do it. It is a big and cushy bike and easy biking. No hills, flat road...slow pace.
