At the Süd Polaire and Domaine Simha Cellar Door @ Institut Polaire we offer a range of structured tasting experiences throughout the year. Sessions cater for 2 - 10 persons and include 6 tasting samples accompanied by notes and a cheese platter to share. Available from 3-5pm Thu-Mon (from 12pm Saturdays). Book today! SÜD POLAIRE Our spirit is formed by the nature of our environment; an archetypal wilderness of mountain, mist and cloud forest at the edge of the world. Süd Polaire spirits are small batch distilled and bottled by hand in Tasmania. Transcendent flavour, glacial cut, bracing Antarctic dry gin. DOMAINE SIMHA An avant-garde approach shapes living wine relying on ancient knowledge and intuition. Crafted by hand in micro batches, just 2-3 barrels of each Domaine Simha wine are made. Our single vineyard wines are shaped au naturel to harness the provenance of epic Tasmanian terroir and season.

Upon entering we were transported into a haven of antarctic design, delicious treats and cocktails to die for. For those in the know...check out the Tom Dixon light fittings on the ceiling!!! A must have is the antarctic dry martini that is a sub zero delight! The service was second to none and the venue is a true Uber chic experience and a fantastic way to WOW your guests. It’s also the cellar door to the amazing Domaine Simah wines too. A MUST DO.... on you list for Hobart.

We decided to stroll down to the docks on Friday afternoon. We found ourselves in Murray St and passing a very chic establishment in arctic white. My mind was on a bar at Salamanca but when my wife said “it’s a gin bar” I wheeled and said “hello!”

If you’re here for the first time you need to try the following in this order:
1. Gin flight (and if you’re as lucky as we were they’ll include the Rare, but I can imagine the Saffron being just as fabulous)
2. Bruny Island oysters with gin sorbet. I know it sounded weird but hell I’m going to give this a go at home. Smashing sensations & flavours.
3. We thought the oysters were good until the Gruyere, leek and garlic came out with ciabata slices. Absolutely wicked!! So much so (or maybe the gin was kicking in) I had to compliment the owner on this dish.
Bags of flavour in this one.

This is a place that I want to revisit already and I’m at the airport just leaving Hobart.

This for me was a 5/5 !!
