A guided Tour* farm, breeding and cheese factory includes the following: • Entrance in a farm where wearing appropriate protections for shoes and patches, visitors can watch the bottle-feeding process of young calves. It is possible to visit water buffalos’ pools in green fields. The visitor will be told about water buffalos, life in a farm, the importance of technology in the milking room and how Torre Lupara monitors the whole producing chain from the lands where fodder is grown to herd’s manning until the transformation phase from milk into mozzarella cheese. Visitors will be told about methods and strategies adopted to make the farm eco-compatible and how citizen can contribute – through recycling – to help safe guarding and protecting the land if seen as a resource and fundamental element for life. • Visit to the cheese factory and view the various phases of milk transformation into cheese ( 9.00 – 10.30 am), after 11,00 a.m. you can see the industry with guided visit, but the production could be ended. • At the end of the tour, visitors will receive a colourful and instructive souvenir and they will taste “mozzarella cheese”. Torre Lupara is open throughout the year. We recommend visits from March to October. We also suggest to wear comfortable shoes (visitors will be provided with appropriate shoe-protections). Do not forget hat and camera.. *The tour is in Italian Language, but it is possible the traslator

This tour was absolutely incredible. Manuela is an amazing woman running an incredible farm. The information she imparted to us on the running of her farm was staggering. Being able to watch and help make mozzarella was so much fun but feeding the buffalo calf had to be the highlight, well maybe eating the mozzarella was a bit better than the calf feeding. Highly recommend this tour!

It was an extremely hot day in Compania and after a two hour ride we were warmly greeted by Manuela, a charming, interesting, and professional woman!
Manuela and her husband own Azienda Agricola Torre Lupara, home to over 2000 Mediterranean Buffalo and maker of some of the world's finest Buffalo Mozzarella!
Manuela speaks little English so a local teacher acted as a superb translator.
We began with review of the origin of Mediterranean Buffalo, how they are raised, and the making of Buffalo Mozzarella and Ricotta. For example, handmade Mozzarella has a "Y: shape on its seam and the Mediterranean Buffalo gestate for 10 months, then the new born must be hand fed 3x's daily for 60 days but remain productive for 18+ years prior to butchering. One bull is dedicated to 50 females!
Following our introduction we all "booted up" for a tour of the cheese making facilities(all hand made), the pastoral countryside, the fields, birthing room, nursery(for a demonstration on hand feeding which some of us did), and the swimming pools and sprays. Some of these buffalo actually seemed to recognize Manuela, a former dog trainer, as we traversed the farm!
Then it was time for lunch. We were led to the second floor of the administration building where large tables sitting 8-10 were set up to eat family style in a room tastefully decorated with local pictures. We dined on some of the most outstanding Italian cuisine beginning with Eggplant, Parmegiano Reggiano with Walnuts in a shell topped with the best and freshest Marinara we have ever tasted!! Then a cheese tasting of Azienda Agricola Torre Lupara's offerings served with bread which was baked in a stone oven fueled by olive branches and only available locally. Absolutely delish! Followed by organic local Honey and Buffalo Ricotta, Bocconcini(small mozzarella balls) with Cherry Tomato and Basil on skewers, braided Buffalo Mozzarella made that morning as was the Mozzarella in a ball, and Smoked Mozzarella and home made Buffalo Salami. Dessert was Buffalo Milk Gelato. An absolutely incredible culinary experience! Thank You Manuela!!
