About
Hi I am May! I am the owner and have always been the only instructor at Thai Secret Cooking School & Organic Garden in Chiang Mai Thailand. I opened my home to host Thai cooking classes 10 years ago and have many more years of experience teaching Thai cooking to people from all walks of life. I am playfully strict when teaching my half menu and full day menu. I want my cooking classes to be fun, educational, entertaining, most importantly a positively memorable experience for everybody. If you are not already a Master Chef, you will not be a Master Chef after my class. My classes are for people to casually enjoy a day cooking with me and new friends. Thai Secret is in the San Sai district of Chiang Mai, about 20 minutes from the old city mote area. Included in the price of my class is round trip transportation from the downtown area and my school. Touring the local Thai market, my garden, your own copy of Thai Secret Cookbook. Her knowledge and passion about Thai food is absolutely infectious, the full day was a truly wonderful experience. The kindness and warmth shown to us all by May & her husband throughout our time was so nice. The day starts with pick up from the hotel to a local market where May goes through the ingredients that will be used during the class and you get a true feeling why one thing is used over another. It’s at this market where you choose the food you will cook during the day. On top of making the different meals, you also get to make from scratch some of the parts that ordinarily use out of a can or jar. For me, it’s this level where you get to make the curry paste and the coconut milk for the recipes you will make, really make this a top tier experience. As a skilled home chef this was perfect, and great for all skill levels. The market tour combined with the cooking class made for a great day. There are a lot of food options you can choose from to make with modifications for dietary restrictions available. She is so talented and a great teacher. We made 4 courses of delicious food, and there is a choice for each one which is great if you are in a couple/ group as you can share and sample more dishes. My personal fave was the Tom Yum hot and sour soup and of course the classic sticky rice and mango. everything was delicious. This experience is brilliant value for money. With water, tea and hotel pick up and drop off included, as well as a little secret surprise. My wife introduced me to the class in 2018, and we had so much fun that we brought my parents back to join in the good times and learning. May, her husband, and staff make this class truly an amazing experience, and we always leave with new friends and cooking knowledge of the authentic Thai recipes as well as information on finding food ingredients and substitutes depending on where students are from (I.e., US, UK, BC, etc). She is a burst of positive energy, and she always finds a way to get everyone involved. It’s an all day event, but you do not leave hungry. That’s for sure. Even though this was my 2nd time and my wife’s 3rd time, we still learned new things. Not to mention, May has a great memory. She remembered us the moment she shook our hands at the market without us even saying anything. She is one of the sweetest people that you will meet in Northern Thailand. No doubt when we have a family of our own, we will return again. Don’t forget to make friends with Jinx, the black cat. She’s a good kitty that loves to be loved. We started with a visit at a local market and then picked herbs in the garden and then cooked several dishes. My son and I cooked togethee and we received great guidance and tips from May! Everything was perfect, from beginning to end. We were picked up at the hotel and the ride in the songthaew allowed us to get to know the other members of the group from all over the world. Best group ever! 🤗 We met May at the market, where we got plenty of information on Thaï ingredients before heading to her house and garden for the class. All day long, May shared with us her great knowledge and love of Thaï cuisine, showing us to cook with the different textures and aromas. Everything is perfectly organized. We get to cook and eat 5 different meals each. So no diner for us that night! Thank you again, May, for this day. We can’t wait to try our new skills. From the beginning walking us through the local foot, vegetable and meat market explaining, tasting and testing various fruits, vegetables and snacks to a wonderful 5 course cooking class in her outdoor (yet covered) cooking school. Students could try making (and eating) various appetizers, soups, noodle dishes, curries and desserts. Wonderful! It is a full day, so be prepared. No need for dinner later! Here team including her American chef husband make you at home and walk you through the recipes. Most of the herbs are picked directly from her garden. It was a great day. It is a great set up, going to the market first, then to the course, picking some ingredients in the garden then cooking our menus and eating the delicious food. May and Jason were great hosts, and they afforded us such a memorable experience in Thailand. We felt so at home at their place; picking out the vegetables at their garden made cooking so much more intimate.
May graciously took the time to provide us the rich history of the meals we prepared, and she shared wonderful excerpts in her life about what some dishes meant to her. The food we were guided in cooking were delicious, and her instructions were easy to follow.
We didn’t know what to expect with a cooking class, and we initially were on the fence of taking one; but we’re glad we did because May and Jason were one of the many highlights of our trip. We cannot recommend more than the Thai Secret Cooking School to anyone visiting Chiang Mai!

My family and I had an amazing day at the Thai Secret Cooking School! May was a fabulous host, teacher and chef as she welcomed us to her home and organic farm in Chiang Mai for the cooking school. We learned to cook some of our favorite Thai dishes from Panang Chicken (including red curry paste from scratch) to Mango Sticky Rice 🙂 and much, much more. The whole family got to participate from picking the vegetables in the farm to, chopping, cooking and preparing the final dishes. This cooking experience will be one we will all remember! Cheers!

We visited the Thai Secret Cooking School in early March, and had an absolutely fantastic day with May on her lovely property in Chiang Mai. Before we even arrived, we were picked up at our hotel by May's niece, and she brought us to a local market for a tour and to pick up some ingredients for the day. It was so fun to learn about all of the new-to-us ingredients we found at the market, and Tang was super sweet and fun to chat with. We were fortunate to have a private class for our small group of 3, which was an amazing experience! May took us out into her garden, where she told us all about her different crops, and we were able to pick lots of the ingredients that we cooked with throughout the day. We each got to pick the menu items we made, and chose a different dish for each course so we got to try several different things. May was knowledgeable and friendly, and made us feel so welcome. She gave us great cooking tips, along with lots of information and education about the food we were cooking and Thai culture and cuisine in general. And the food was delicious! It was one of our most memorable experiences in Chiang Mai, and I would highly recommend her classes to anyone.Â

My wife and I just finished May’s secret cooking school and had an awesome day. Super casual, fun, but still informative for those of you that take your knives and tools seriously. May and her niece were helpful, gave lots of instruction and nothing about the class felt rushed. I’d highly recommend this to anyone looking to have some authentic home cooked Thai food, or just looking to make another memorable experience during your time in Chiang Mai. We loved this cooking class! My husband and I like to cook but we are far from experts and loved how easygoing yet highly energetic May is! She gave excellent instruction, is clearly incredibly knowledgeable about food and cooking, and somehow managed to answer every question that was thrown at her while also checking in on everyone’s wok. So impressive. Everything we cooked tasted amazing and we were happily stuffed at the end of the day; it’s seriously a lot of food. May’s garden and cooking class set up is beautiful and functional and I never felt stressed out about if I was doing the right thing, which has happened to me in other classes like this. Our class did go a little long (which is much better than feeling rushed), and we hit some traffic in the songtaew on the way back so definitely recommend keeping an hour or so after the planned end time free. Overall an incredible experience that I highly recommend.

This was one of the highlights of my wife and I's recent trip to Thailand. We thought the day was a lot of fun and good value for money for the amount of food you get to eat. We enjoyed meeting and chatting to our classmates from different parts of the world and thought May was a great teacher. She kept a class of 15 people in order whilst making us all laugh and teaching us a great deal about Thai cooking. Highly recommended.

One of the best experiences I had in Thailand. This is a MUST do for Chiang Mai. May and her husband are the most special people who put so much care into their work with this cooking school. May’s English is amazing and she’s so good at describing every step and answering every question you might have about Thai cooking. May also has spent a lot of time in the US so she even knows what ingredients you can buy outside Thailand and recommends her favorite ones to buy at the market and bring back home. I’ll save you the surprise but trust me… this is worth every single baht and then some. Here’s just one example of how May goes above and beyond for her guests… when we were going through the market, I pointed out an ingredient for my favorite Thai dish, and she was like, “oh let’s learn to make it” and then proceeds to have me pick the morning glory from her garden when we get to her house and learn to cook it as a 6th bonus course (she even created a separate vegan version for another guest). We learned to make so many incredible authentic Thai dishes and prepare ingredients in ways that make you appreciate every time you order Thai food at home in the future. May even has you try different versions of the same dish or ingredient (e.g. boxed coconut milk vs. fresh squeezed coconut milk) so you can really learn to understand the importance of using real/fresh ingredients. Whatever you do, make sure you book a day at the Thai Secret Cooking School. It will be the highlight of your trip to Chiang Mai.

This day definitely lived up to the hype! Mai is a cooking superstar and is charming, fun and a fantastic teacher. Our group had total newbies as well as folks who love and cook their own Thai food frequently. Mai tailored her instruction to fit everyone’s needs. She moved the day along at a great pace, but you don’t feel rushed at all. We loved her inside tips at the market and her garden is beautiful. OK - let’s get to the main reason we came - the food was to die for! Every single dish was scrumptious. Thank you Mai! And thank you Jason for the great pics and to the team. We’ll tell everyone we know not to miss a day at Thai Secret Cooking school.

This cooking class was such an enjoyable experience! We had the opportunity to go to the market and learn about common Thai ingredients. Then we went to May's home where we collected ingredients from her beautiful garden. May was such a great host, ensuring all 24 of us students had enough guidance to cook up a delicious meal. At the end of the experience, she provided us with a cookbook to take home and apply our skills and new knowledge in the future. I highly recommend doing this experience it was a very interesting way to learn more about Thai culture!

Honestly, it’s worth coming to Chiang Mai even if all you do is take May’s 1 day Thai Cooking Class. She is friendly, sweet, energetic, knowledgeable and fun. She explains the “why” behind everything, teaches you where you can and shouldn’t “cheat” to make the meals back home, and brings to life a fast-paced but fun experience that will make you seriously consider doing it again just for the fun of it. It’s extremely reasonably priced, you get tons of food, she orchestrates transport from most hotels and sends you home with a cookbook customized to your particular class. Again, not ashamed in any way to say… Hands. Down. The. Best!

Hi, as of now one class schedule is offered and begins with your pick up between 8:30 am - 9:00 am delivering you back in the city between 4:00 pm - 5:00 pm. All times depend on the pace of the days class. We hope our class will fit into your itinerary! :)
