A friend and I recently stayed at "The Nest in Normandy" for a few days before traveling onward to a wedding. Mathias led us on magical hikes along coastal villages and every area had it's own distinct character. His knowledge of the area's history was educational and lively. Shellfish! Wine! Cheese! Salt air and a vast ever changing sky! Strolling through the morning market was a delight, experiencing a cornucopia of sensual pleasures! Colin seamlessly educated us on the ingredients he was choosing. Afternoons were spent with Colin preparing the evening meal and learning exciting cooking tips. I sharpened my knife skills (nyuk nyuk); baked a Paris to Brest via Nest cake; and learned to shuck oysters! The pacing of this tour is very pleasant; Colin and Mathias are consummate hosts. Take advantage of the seaside spa and pools if you have a free afternoon.

The four of us spent a week at the “Nest” which we booked through Edible Destinations. A great time was had by all! We went to explore and to learn some new dishes to cook back at home -- we couldn’t have asked for more. Both Mathias and Colin were fantastic hosts. We found a wealth of information about France, Normandy and the local area from both of them. Mathias was our tour guide for the vast majority of the time. He guided us on many sight-seeing outings. We hiked the beach and up to the church of St. Valery in Varengeville-sur-Mer, what a sight overlooking the ocean. We visited the The Palais Benedictine, in Fecamp where the world famous liqueur has been made since 1863 (but the recipe dates from 1510). We toured the city of Treport and ate lunch at a great restaurant on the beach (literally on the beach). And of course, we got a history tour of Dieppe and visited the Château de Dieppe, dating back to the 14th century, which houses an outstanding collection of ivories and paintings. These are just a few highlights of our touring.
We really loved the touring but the cooking lessons were equally excellent. Colin is the consummate teacher and is a whiz in the kitchen. We all totally enjoyed the experience of working with Colin, not to mention we created some excellent dishes under his supervision. The cooking takes place in an intimate atmosphere and is very hands-on. We learned new techniques and the use of ingredients we had not ever used before. The results were always great. The four of us put together dishes like Beetroot millefeuille with Roquefort cream, lambs lettuce with pumpkin seed dressing and hazelnuts (put that on your next homemade menu!). And since Dieppe is right on the ocean we made roasted cod stuffed with mushrooms and bacon, pumpkin and carrots. Another really classy dish we prepared was the Tarte Normande (an apple tart filled with frangipane and apples baked on top). When we were not cooking the dinner, Colin produced top-notch dinners matched with excellent wines. The wines we had were always a great accompaniment to the food.
All in all, we highly recommend the Nest in Normandy to complete your France experience.

My daughter signed up for a school program in Rouen so I accompanied her for a week before the program started. We spent a long weekend at the Nest in Normandy with Mathias and Colin. Our stay was outstanding. Both hosts went out of their way to take care of us. They made us feel like long time friends with whom they were sharing their home. The home itself is exquisite and they were eager to share the origins of their many treasures. In addition they are very interesting to talk to and answered the many questions we had about France, its food and its people. The food was bountiful and wonderfully prepared. We went to the market with Colin, who took the time to explain the food and answer questions despite the pouring rain. Colin purchased langastino to cook for supper that night explaining that it is almost impossible to find live langastino. When we stopped to pick up fish he had previously ordered at the fish market, they had live langastino. Even though Colin had already purchased langastino, he purchased the live ones because they are much better and very hard to get. The cooking classes were very informative. And Mathias - I feel like I have made such a special friend. He was a wonderful tour guide and took us to great restaurants and helped us decipher the menus. He was very attentive to our every need. In addition to driving us to Rouen on the last morning of our stay, he took us to a flea market and found some spoons we had been hoping to find for a souvenir. Then when we had difficulty understanding where to meet the person who was handling the accommodations for my daughter's stay, he spoke to the woman on the phone, brought us to the meeting spot, stayed with us until we found her, carried our luggage to the room, and made sure we did not need anything else before he left. He went over and above his job as our host. I cannot recommend this place highly enough and I hope to return one day.

My husband, daughter and I needed rejuvenation and relaxation, and Colin and Mathias were welcoming and thoughtful hosts. Nest in Normandy revived us through delicious food, ornate, fanciful (and comfortable) decor, and great conversation. We arrived in Dieppe on Friday (in July) after a 3 hour drive from Paris. Colin had prepared a gourmet dinner for us - including an exquisite Foie Gras. Saturday morning Colin took us to the excellent market to buy ingredients for the cooking class/dinner. (The Dieppe market was the best one we visited in our 3 week visit to France.) Mathias guided us through a nearby magnificent 12 hectare garden, and we participated in an excellent cooking class with Colin. We were also introduced to the beauty and history of Dieppe through a guided walking tour.

The month before we arrived at Nest in Normandy, we exchanged emails so we knew what we would be doing, and our food preferences and allergies had been identified. We love seafood, and we concluded our visit with the most amazing fresh and delicious seafood feast. We would recommend Nest in Normandy to adults who are interested in urban exploration, delicious food, great art and conversation. It truly was the perfect way to rejuvenate both our bodies and our minds. We look forward to returning for another stay!
