'The pioneers of teaching food and wine in Puglia- The New York Times. For the last 21 years, The Awaiting Table Cookery school has been the most praised cooking school and wine programme in all of Puglia. (And now the oldest too). Located in the historical centre of Lecce, Italy--or during selected weeks throughout the year, in a castle an hour south of Lecce-- students from 59 countries have chosen us as the best way to go deeper into The Mediterranean Diet, and local, world-class wines. Our schools have appeared in The London Times, Food & Travel, The LA Times, Bon Appetit, The New York Times, Food and Wine, as well as Chinese, Japanese, British, American and Dutch television. The owner, Silvestro Silvestori, is a nationally-certified sommelier of wine and a sommelier of extra virgin here in Italy, as well as a wine journalist for international wine magazines. All classes are hands-on, fun and actively spent in two of the most beautiful kitchens in all of Italy.

Took us to the produce market, the fish market and on to cooking. We cycled, we learned, we cooked, we savored the amazing cuisine of our own creation, generously smothered with amazing local olive oils. Who knew that amazing food was just an olive oil delivery system. All of the above was perfectly paired with a variety of regional Italian wines, and copious laughter! Alas, I do have a serious complaint, our time with Silvestro, Michelle and the Awaiting Table team was too short!It was great having you and we were blessed with the perfect weather for bicyling and sitting outside on the stone loggia all week. Michle is coming back for her 16th visit next September. That's almost one a year since we opened! We hope to have you back soon. We began the day at a vegetable market, then on to the fish market, ending in Silvestro's magnificent apartment where we participated in the preparation of the meal. . Silvestro is an educator, patient teacher, knowledgeable about the history of Puglia and cooking techniques. Our meal was a five star experience. It was a lesson in cooking as well as the culture of Puglia. Cannot give a higher recommendation. Do not miss it if you visit Lecce.A lot of fun to have you two with us, even for only half a day. This experience was easily one of the highlights of our four days in this beautiful city (Lecce: also highly recommended). Aside from improving our homemade pasta-making skills, we spent an hour at the produce market and the fishmonger’s store (much learning here). Silvestro provided informed instruction about olive oil generally and olive oil in this region in particular (his oil is exceptional), and he also spent some time in quality instruction about wine. The venue: 10/10. We will return.Our 5 hour class became 7 and a half, especially when the wine kept opening. A real pleasure to have you with us! Expect your case of oil to arrive later next week. I attended the Mediterranean Fish Course and it was an amazing way to see and learn and experience the local culture and food of Lecce and Puglia. Silvestro has created an experience that envelopes you into the culture and food of the area - I don't know how I learned and experienced as much as I did in the amount of time we were in class but I walked away with a feeling of community, connection and understanding of the food, wine, people, olive oil, wine and land of Lecce. Take the course, take them all, I know I will be back for a week long course as soon as I can.Great to have you with us and it will be even greater to have you back! Fun class, lots of great discussions. Silvestro is a master of food - teaching with his gentle demeanor and humor coupled with a knowledge base with almost no end. This is NOT a school where you cook one thing and they hand you a recipe. There were no recipes. You go to the market every day. You cook together. You learn about the local food. You eat. Drink (as much as you want while learning about the wine). Make new friends. And (continue to) fall in love with Italy and Puglia. Silvestro Silvestri, the owner and operator, is brilliant, funny and engaging. His classes that bring together people from different parts of the world and with different mindsets is ingenious. My mother in law and 2 sister in laws greatly enjoyed cooking all kinds of foods, making pasta from scratch and tasting all kinds of wines and olive oils. June is the perfect time to get cherries too. We also had a team trip to Otranto and saw the Adriatic Sea. Sylvestro took us to a great seafood place there. He has a dead-pan sarcastic humor I enjoyed. He gave us so much information about Italy and I will cook differently after doing his classes for a week! I also loved meeting the people in our team. - Frank H1 contributionGreat cultural and culinary experienceI led a study abroad experience with university students, and we spent five days in Lecce, with much of the time at The Awaiting Table. It was a great experience from start to finish. Silvestro has extensive knowledge not only about southern Italian food, but history and culture as well. The hands-on cooking classes were supplemented with trips to markets and restaurants, as well as a day-long trip to the beach in Otranto. The setting in Lecce is wonderful. We had substantial breaks from our classes that allowed us to explore this architecturally beautiful city. We felt safe and comfortable throughout our visit. I highly recommend the school and the city!We also enjoy teaching university courses, both here in Italy and when students come to the school from abroad. We learned as much as you all did, especially seeing Italy through the lens of global agrarian workers' rights. Part of what makes it so special is the historical and cultural context Silvestro mixes in with all the cooking. What Fun! We went to Lecce to take a course to cook Italian… what an experience! The entire process was an adventure in a far away land! Sylvestro intrigued us with his knowledge of the local foods, wines and culture. He then guided us thru preparation of a multitude of dishes that I’m still salivating over. Each day was something new and get this: we got to drink wine while we ate the food we created! So cool… the experience of going to markets, prepping the dishes and then sitting down as a group was thoroughly entertaining. If you like food and wine, then this is the place to be! Sylvestro gave an outstanding performance in showing us how to be a little bit Italian… just for a short time as we immersed ourselves in the whole experience. I loved the entire process and count myself lucky to have had this opportunity… thank you Sylvestro!!

On the day Anja and I stepped onto the streets of Lecce, we had no idea that we were about to embark on an experience that would surpass every expectation of a cooking class. "The Awaiting Table" was not just about cooking – it was a journey through the heart and soul of southern Italy, through its history, culture, and the people who shape this rich land.
At 10 a.m., when we gathered by the famous column in the city center, Silvestro, the class leader and the spirit of this experience, immediately transported us into a world deeply connected to food. His introduction to Lecce wasn’t just dry history, but a philosophical reflection on the city, its people, and its way of life. Visiting the markets wasn’t just about buying ingredients – Silvestro taught us how to select nature’s finest produce, with respect and an understanding of its natural cycle.
His charming, historic home, where the class continued, felt like a step into another time, radiating the warmth of southern Salento in every corner. There, we met Anna, his loyal assistant, who embodied everything this class stood for. And, of course, Ciccia, the adorable little dog, who added even more homeliness to the atmosphere.

A most enriching experience! The day begins with the purchase of ingredients through different shops in the city. We receive explanations on the different products purchased as well as their particularities.
Afterwards, we head to the kitchen, where after receiving instructions, we cook a meal for the group.
In the meantime, we are also treated to an olive oil and rosé tasting class. Very interesting.
The feast was delicious and we loved our experience. Silvestro was everything a guide and teacher. He listens and takes the time to explain the concepts to us and ensures that we find the experience enriching.

We spent an evening with Silvestro and Anna at his amazing house/cooking school. Actually we started with a walk to the market for shopping and learning about the history of Lecce on the way. Once we got to the house we worked on prepping ingredients and then making fresh pasta as well as delicious bombette that we rolled and then grilled. The evening continued with tastings of wine and olive oil on top of the excellent meal. All in all a fun experience for all of us.

I had the incredible opportunity to attend the 20th anniversary cooking course at The Awaiting Table in September, and I can't rave enough about this exceptional culinary experience!
This is the third time I have attended the school – and it gets better every time. From the moment it began, we were immersed in the authentic aromas and vibrant flavors of Pugliese cuisine. The ambiance was inviting and warm, reflecting the rich culinary heritage of the region. Silvestro is not only skilled chef, but also a passionate educator and storyteller, eager to share his expertise about food, wine, olive oil, and the region. His talents attract an extraordinary number of warm, wonderful people from around the world.
The school’s hands-on approach allowed us to immerse ourselves fully in the cooking process. We used fresh, locally sourced ingredients, and the sessions were both educational and entertaining, leaving us with a newfound confidence in recreating these delectable dishes in our own kitchens. We made fresh pasta every day; prepared traditional dishes like ciceri e tria; bottled our own tomato sauce; and cleaned, prepped, and cooked all kinds of seafood. And the unforgettable desserts — especially the roasted peaches with fresh sweetened ricotta – made every lesson/meal a total delight!

It's happening more and more, people planning to return on day two of a week-long course. And sure enough, then they are back again. For our 20th birthday week celebration, half of those that came had been to the school 4 times or more. What a compliment! We look forward to seeing you next year!

This was a truly special travel experience. We did the one-day seafood cooking. Sylvester took us to the fish and produce markets, on the way giving us a succinct and entertaining history of food in the region and explanation of what we were buying. At his beautiful, homey yet fully equipped home kitchen we made mussels, handmade pasta with squid, grilled eggplant, grilled fish, and fresh strawberries with fig sauce. The setup was perfect, with engagement in just enough of the cooking activities while some preparations were done by Sylvester's team so that we were never fatigued or bored. Sylvester was also very generous with the wine and olive oil - he is an olive oil sommelier, in addition to being a talented cook and history buff. And I cannot forget to mention his delightful dachshund Ciccia, our adorable companion throughout the day (though she is not allowed in the kitchen).

We recently attended the short fish course at Waiting Table Cooking School in Lecce, Italy, and it was an absolutely amazing experience! The course was incredibly informative. We learned so much about the local produce and ingredients. We also stopped by the local fish market and learned how to select the freshest fish and prepare it perfectly. The hands-on guidance was exceptional, especially in making a healthy pasta from scratch, which highlighted the beauty of simple, high-quality ingredients.
We also had the opportunity to enjoy wines from the region, paired expertly with the dishes we created, as well as tasting some of the finest extra-virgin olive oils. The passion and knowledge of the owner was inspiring, making the experience not just educational but also deeply enjoyable. I highly recommend this course to anyone looking to dive into the culinary delights southern Italy —it's a true celebration of Italian food and culture!

I had the immense pleasure of working with Silvestro for his one-day seafood tour. While I would’ve loved to do his week-long class, it had booked up fully and all I could get in was a single day. If this happens to you, don’t be discouraged and take whatever class you can with Silvestro. As a master sommelier of wine AND olive oil, he is a fountain of knowledge that any foodie, home cook, or professional chef would long to study under.
I have done classes, both intensive, multi month, and day, with chefs around the world and this was a standout, specifically because of Silvestro’s programming and expertise.
The day is exactly what you’d hope for: A market shopping and explanation of local ingredients and fish, then taking everything you buy back to the cooking school. We made the classic pasta of the region, orecchiette with his patient teaching and guidance. You pick up some cutting and prep skills prepping the 4-course meal you make, then do a quick discussion of wine and olive oil to appreciate the meal with. Each course is prepared with the help of his staff, and you get to enjoy the meal with the day’s classmates.
To witness and learn from his expertise is invaluable. I would not hesitate to join future sessions, or plan another trip around his classes again. Don’t bother looking up other “cooking” classes that may be led by amateur chefs or home cooks: This is the real deal.
I have done classes, both intensive, multi month, and day, with chefs around the world and this was a standout, specifically because of Silvestro’s programming and expertise.
The day is exactly what you’d hope for: A market shopping and explanation of local ingredients and fish, then taking everything you buy back to the cooking school. We made the classic pasta of the region, orecchiette with his patient teaching and guidance. You pick up some cutting and prep skills prepping the 4-course meal you make, then do a quick discussion of wine and olive oil to appreciate the meal with. Each course is prepared with the help of his staff, and you get to enjoy the meal with the day’s classmates.
To witness and learn from his expertise is invaluable. I would not hesitate to join future sessions, or plan another trip around his classes again. Don’t bother looking up other “cooking” classes that may be led by amateur chefs or home cooks: This is the real deal.

Far exceeded expectations! This week long journey not only covers the origins of the regions foods, but also the wines and culture of the people too. We participated in the biking, cooking, drinking and wine course while staying in the Barons castle in Spango.
Silvestro is by far one of the most knowledgeable instructors I have come across. He educates, while excites. The journey he takes you on for his class is one of the best and most unique I have come across. His team at the castle, Anna and Sylvia and Giusseppe cant help but make you smile and feel welcome.
We were the first group (9) since covid which obviously presents challenges to any coordinator, but you would never know it!!
The team is great. I HIGHLY recommend any of the offerings Silvestro and his team have.

We would like to book a week in May 2016, but all courses are at the castle. The description of the course in Lecce mentions going to the market everyday, but this is not mentioned in the course description at the castle. Are there visits to the market from the castle?
