About
i offer real hands-on cookery course - also vegetarian - of mostly typical Tuscan farmer's dishes using vegetables and herbs from my garden, eggs from my chicken, meat from my lambs or wild game from surrounding woods. dishes are selected depending on availability of ingredients and are easily reproduced at home for your family or friends. we do from a minimum of 4 to 7 or 8 dishes- depending on number of "cooks" (also children)- . our rates (as of Euro 90 depending on type of course and number of participants) incl. 3 hrs. of cooking and dining as well as standard beverages . times: either 1100 to 1400 hrs or 1700 to 2000 hrs. monday through friday or on special request. a special highlight is the extended half day course - 10.00 to 1500 hrs.- which includes a visit to a local street market or other shopping facilities, eventually with a tastings of cheese and cold cuts , balsamico vinegar, local wine etc. - always on Tuesdays or Fridays - Euro 140 per person -

Ulrike's class was so much fun and exactly what we were looking for. She is a fabulous hostess and makes you feel like you have known her for years. On top of the welcoming environment, the food she teaches you to cook is amazing. I may go back to Italy just for another evening of cooking with Ulrike. I can't recommend this enough.

If you go to Tuscany, you go there for the renaissance art and the countryside. But most of all, you go there for the food. What better way to enjoy the excellent food than to try and cook some yourself, and bring some of the best recipes back home? That is why we did a cooking workshop at Ulrike’s place. Ulrike is German by origin, but moved to Tuscany two decades ago. By her English, you could not tell she was German. It is perfect. According to Ulrike, that is because “The town I grew up in had an American army base. I worked and dated there.”

We got a brief introduction, wine on the table. Ulrike smiles: “Don’t drink too much. You’ll be working with my knives.” We did a four course meal, starting with a bread salad. It was very tasty and easy to make. We got some good tips on how to quickly and neatly cut your vegetables and onions, something that I did not even know I struggled with. The pasta was with sausage meat and red cabbage. Once you get the hang of it, you can get excellent pasta on the table in less than 15 minutes. The lemon chicken takes a little longer, mostly because it needs time on the stove. It was sweet and very succulent. Even the pickiest eaters would love it. Finally, I messed up the tiramisu, by buttering the mascarpone. This earned me a stern look. “Don’t worry; it’ll taste just the same.” It did, so I still had to share… Unfortunately.

By the way she talks, readily giving possible variations to each recipe. By the tips and tricks she shows, which I still use at home. By her enthusiasm, you can tell that Ulrike really loves good food. And we loved her (and our own) cooking. By the end of our well earned meal, I was dozing off. Luckily my wife was driving. “The last group I had, slept by the pool for an hour after the meal,” Ulrike says. Completely satisfied and happy that I have the best Tuscan souvenir I could hope for: the food and recipes. We are totally going to impress friends and family with our cooking.

that review is hard to top - one cannot asked for a better and more explicit review - i had as much fun teaching them, as they had cooking. no chef could ask for more - thank you and that special thank you also goes to all the "cooks" that joined my classes the last year -

We visited Ulrike in June 2014 and had a brilliant night that made our holiday. The food we cooked was superb and enjoyable but that experience was made outstanding by Ulrike, who, if she hadn't broken the ice with her outrageously fun personality within five minutes, could easily have done so when she plied us with some very nice Italian wine. I would recommend this activity without hesitation.

Myself and my husband took this cooking class as part of our 2 week holiday in Tuscany and it was certainly one of the highlights of our whole time there. We communicated with Ulrike via email before our trip and she was great, taking into account the fact that I don't eat meat. The location is fantastic, just outside of Castellina in Chianti by about 5 minutes by car, in a beautiful setting. Ulrike is a lovely, funny and incredibly intelligent woman with a wealth of knowledge about cooking. We made so much delicious food, whilst having good conversations and learning a lot. We then had so much to eat afterwards, as well as some to take away for lunch the following day! Come hungry! Don't look any further for a fantastic Tuscan cooking experience!

Whilst thoroughly enjoying plenty of wine tasting and sight seeing, the two hour archery session with Fabian at Poderi Cal Verde providing a welcome diversion for my family on our recent Tuscan vacation. A little off the beaten path and hidden away down in the valley the archery facilities form part of a local farm and accommodation.

Fabian proved very patient and a highly capable archer who was quickly able to improve our shooting accuracy allowing us to enjoy a highly competitive family competition to conclude the session.

The equipment and tuition are first class and ensures this activity provides a welcome addition to sight seeing and wine tasting, which also come highly recommended.

Well worth booking.

The main reason for us to book Poderi Val Verde was the archery range and we were absolutely delighted! Fabian did a great job in preparing the parcours which offers long and short distance as well as up- and downhill shots. The targets range from boar to deer to bear and carefully and lovingly placed on the hills surrounding the property. They look as if they just stepped out of their natural environment! Fabian himself is a great guy, very easy and interesting to talk with. He has also taken up flintknapping and sells beautifully handcrafted arrowheads and historical arrows.
All in all a wonderful stay and absolutely recommended for serious archers as well as beginners, as I think Fabian is also a great and patient teacher.

A place that feels at home. Great food, great instruction, great music, great conversation. What an incredible treat. We have been to other cooking classes but nothing remotely close to this. I give it the highest recommendation possible. I cannot wait to go back.

Our group including 3 adults and 3 children ages 8, 10 and 11 had an fantastic experience cooking with Ulrike. It was so wonderful that after spending one evening with her we knew we had to come back for more later that week and do a day of archery with Fabian (see separate review), spend time harvesting olives, and do another evening of cooking classes.

Children and adults alike were each responsible for their own dish. We all learned improved cutting techniques and worked with local fresh ingredients (Ulrike's amazing spices, estate olive oil, etc.) to make a feast that would impress the toughest critics. In fact, we had the opportunity to present our dishes on the second evening to a panel of judges in a MasterChef style competition!

Here is a recap of the dishes.

Class 1:
- Roasted eggplant and red pepper bruschetta
- Pumpkin soup
- Penne with Sugo Antico with dried tomatoes, chopped almonds and capers
- Lemon chicken
- Tiramisu

Class 2:
- Eggplant Parmesan
- Homemade pasta (crafted by us!) with sausage and radicchio
- Tuscan lamb stew
- Apple "pancakes" and kaiserschmarrn

We are on a walking and wine tasting holiday in Chianti organised by Exodus and a cooking lesson with Ulrike was recommended as a free day activity. 8 of us from our party joined Ulrike in her kitchen in the beautiful Poderi val Verde and enjoyed a great day cooking and eating six different courses to make a memorable Tuscan lunch. Ulrike directed us with style, humour and panache in her beautiful kitchen and gave us a number of valuable tips on the way to creation of our feast. The wine and conversation flowed, with a few minor diversions to play with some of the 10 cats accompanied by the rain cascading down outside, and before we knew it our scheduled 4 hours had turned into nearly six. Thoroughly recommended - and Poderi val Verde also has a variety of self catering units and offers courses in field archery and walking trails starting straight from the beautiful villa. We shall hope to return.

We came upon this lesson quite by accident and could not be happier we did. Ulrike took us to a nearby market to shop with the locals and gather the supplies needed for our cooking. While there, we tried various cheeses and sausages from a couple of different vendors. No pressure to purchase anything but the education on different pecorino cheeses as well as a couple of sausages was great. After the shopping it was back to her house where we began cooking. Ulrike is a very straight forward German woman living in Italy. Her English is excellent and I really enjoyed her demeanor. She will tell you what to expect and if you are not doing it correctly so just chill out and have fun. That is the mood, she will have the instructions posted in the kitchen and tell you what to start preparing. She offers excellent advice (she is a school trained chef) on how to cut and prep the food you are preparing. We prepared a starter, 1st course, main course and dessert. I was stuffed after the 1st course, it was all wonderful! I pushed myself all the way through and made myself eat 1/2 the Tiramisu that my wife prepared. The other dishes were uniquely Tuscan and delicious. We had wine laughs and education all day. We returned to our hotel afterward for a nap since that seemed appropriate!

If you want a basic cooking lessor (or even a more advanced one as I imagine she will tailor) I highly recommend this. Ulrike was a fantastic teacher, host and companion for the day. She also has a myriad of apartments available which we will utilize on our next visit to Tuscany. Off to Florence tomorrow, glad we were fed well today.
