At the Acetaia del Cristo since three generations we are working in order to pass on the cultural heritage and charm of TRADITIONAL BALSAMIC VINEGAR of MODENA, which in the past was restricted to family use and closely guarded in the attics of our forefathers. To date, we can still claim we are the most important world producer of Traditional Balsamic Vinegar of Modena, thanks to 2000 casks exclusively used to produce Traditional Balsamic Vinegar of Modena PDO (Protected Designation of Origin). It is us personally, along with our families, who carry out every single step in full compliance with the most ancient traditions and the PDO (Protected Designation of Origin) regulations: from cultivating our organically farmed grapes, to vintage, must cooking and the delicate drawing, decanting and topping-up operations.

Having organised a short notice long weekend in Bologna, we were very keen to see traditional balsamic vinegar being produced. A very interesting tour. From seeing the Vinyard, to understanding what happens in the wood barrels for the first 12 yrs, to tasting the delicious syrup like substance they call balsamic vinegar, it all was so interesting and so worth the tour. We walked away with 3 bottles of the delicious vinegar.

We (a couple) simply stopped and rang the bell outside the farms entrance. Despite not coordinating our visit in advance, we were allowed in and in less than five minutes the great guide (her name escapes me, sorry) showed us through the production process and patiently answered our questions. True traditional balsamic vinegar of Modena is EXPENSIVE, there is no way around it. So I was secretly worried when I booked this it would be a short tour and a long sales pitch. The acetaia is in a wonderful location in the countryside north of Modena. This family run estate offers a brilliant insight into the hard work and years of dedication that go into making traditional balsamic vinegar of Modena.
