Hi Ryan, You've got a decent plan there - not too overloaded. If you find you're ready for a snack between the Belfrey tower and Church of the holy blood, the street that links Markt square to Burg square - Breidelstraat - has a great little waffle place (freshly cooked waffles with warm chocolate or caramel sauce among others).
