Paul De Bondt is a master chocolatier who pioneered artisan chocolate in Italy. He's currently in the top 8 in the world. His small shop on the river in the centre of Pisa is a gem, with the complete collection of the De Bondts' chocolates, that go from individual filled cioccolatini, with flavours like Sicilian lemon and toasted coffee, to the prize-winning bars that have made him famous. We loved the complexity of some of his themed bars, like the PIsan caramel, pine nut and dark chocolate, or the dark chocolate bars scented with lime and bergamot that De Bondt selects and candies himself. The shop also has the most beautiful collection of mugs, cups and sets for drinking teas, coffees and chocolate, as well as hand-picked jams, honeys and cookies that are Italy's finest. Don't miss it!

We read about this chocolatier in our Pisa travel guide and went searching for it before the end of our holiday. It took a bit of finding as we walked straight past it the first 2 times as the window does not scream 'CHOCOLATE' to you as there are fancy tea cups and things in the window. However, on the 3rd attempt we found it and it was well worth the effort (its a few doors down from the Victoria hotel overlooking the river).
The lady who served us was very nice, polite and helpful and spoke good English - she obviously enjoyed her job.
We got a couple of boxes of chocolates and they were absolutely delicious. I have tried chocolates from most of the main chocolatiers in Brussels and the De Bondt chocolate was good enough to rival any of them - in fact I think they were possibly the best chocolates I have ever tasted!
My only criticism would be that the amount of choice was not huge, there were maybe only 15 different chocolates to choose from whereas in Brussels you tend to get at least double the amount. However, it most certainly is a case of quality over quantity and if you like chocolate you cannot visit Pisa without calling in to De Bondt.

They moved across the river! new address is 82 via san martino, 7-10 min walk from the old place. their chocolate granita is sooooo delicious, do try it! very friendly staff too.

I had read about de Bondt chocolate and as I love everything sweet, this was something I isn't sister that we'd try on our trip to Pisa. We found the shop quite fast and then I spent the next 10 minutes marvelling over all the goodies, trying to choose between all the heavenly sounding chocolates. The guy behind the counter had some issues communicating what each and every flavour was (language barrier) but we managed to make our choices and boy were they great. I especially liked the chocolate hazelnut bits as well as the salted caramel ones. Also, the dark chocolate you could buy in blocks was excellent. Paul de Bondt is a Dutch born guy, but as far as I know you cannot buy his chocolate in the Netherlands, so do not miss this if you are in Italy. Seriously. It easily rivals many great Belgian and Swiss chocolates I have tried, and that's saying a lot. Of course the prices match that as well, but it is well worth it.

Followed instructions to their new address. We were very impressed that you could sit and watch chocolates being made while having a coffee. Bought some chocolates and a cake which were amazing.

hi anyone know if this shop open on Sundays? We will be there next sunday - 2nd August and would like to visit/ buy goods
