Italian Cooking School in Lucca, Tuscany, day classes as well as 7 day all inclusive programs with tours and field trips. Hotel rooms available in our apartments. Intensive cooking classes, 10 to 14 recipes per class, hands on cooking, include lunch and recipes in English. Classes also in Deutsch, Francais, Espanol. Classes: Main Ingredients and Sauces, Fish and seafood, Fresh Pasta and pasta sauce, pizza, focaccia and bread. Tuscan Cooking, Chef Paolo's favorite dishes. Fun classes, delicious dishes, easy to make recipes!

Learned a lot I can't wait to try when I get home, the trip to Parma and Modena was great. Chef Paolo is fun to work with. However the Web site is a mess and needs updating. Especially the curriculum. It was the right amount of hands on and instruction. I picked up numerous tips even though I had cooked similar dishes myself. The food that we cooked was excellent. The pace was great as cooked part then ate it, then cooked more and sat down to a feast. The school is in great location as within Lucca walled city. I have seen that he is well-versed,systematic,and expert in his own craft. I have noticed his passion in cooking which it makes a big difference. I learned so much from him, and it changed my perspective,and attitude in cooking. He’s very patience, understanding flexible, and accommodating. I have so much recipes that I can’t decide what to cook first. When I came back to Vegas my kids were so excited what we can cook together. Every weekend we look forward to cook and choose from chef’s recipes. They were delectable and tasty. Each time I cook something I have my colleagues as my official taster. So far they appreciate it. Chef even took us on a learning experience at the wholesale market. As this was a second time at his school, he modified the classes to exclude what we had done prior and added from other classes. Excellent group of recipes, fun hands on cooking and very full tummy’s every day. His recipes, his endless wonderful jokes and his general helpfulness in showing us and teaching us the process makes for a wonderful time. We took his Tuscan cooking class this time and met two other lovely couples. Chef just moved to a new space inside the wall-so much more convenient. Highly, highly recommend ANY of his classes. We booked 2 cooking classes on Chef Paolo’s website with deposits paid through Paypal and received email confirmation a month in advance. Paolo contacted us to offer different times and dates for the classes we wanted saying he was short staff so could only offer a limited schedule. After numerous emails with Paolo and moving other activities on our vacation, he finally confirmed dates and times in writing.
We called him 2 days before the scheduled classes and he said all was confirmed.
We took taxi to cooking school and found it locked with no one there so we called Paolo who said he was sick and all classes cancelled and hung up when we asked for refund.
He has not responded to emails requesting refund so we have put in refund claim with PayPal and we are out $50 taxi fares as well as ruined vacation day. Would recommend not booking on website or paying deposit

Dear Sir, unfortunately, I was suddenly admitted to the hospital at night time for an urgent operation, which kept me in the hospital for 2 and half month due to complication.
I apologize for the inconvenience but I was really very sick!! I had to cancel all cooking classes for September and the following three month,
I am better now and I have resumed the cooking classes in a new location in the center of Lucca in via del fosso 120 Lucca center.
Your deposit ha been reimbursed last year.
Again I apologize but it was not a trivial thing

Me and my colleague took apart on 7 days Gourmet cooking course and it was a really amazing week! We had five cooking courses, were we made and tasted over 50 different dishes! We had also a tour in Lucca with a wonderful guide and a day tour in Parma and Modena visiting to see the production of Parmigiano Reggiano, Prosciutto di Parma and Aceto Balsamico.
The whole week was very well organized, and Chef Paolo is an excellent teacher with lots of humour. We also stayed at the same place and the accomodation was very nice too with a wonderful staff.
Chef Paolo´s cooking school is a must place to visit. And the courses are suitable for everyone and definitely more than wort the price. The only bad thing was that we got few extra pounds during the week.

The four of us are (pardon the pun) seasoned cooks, so we were hoping our 4 hour program of Chef's Specials would NOT be the beginner gnocchi and tiramisu. For sure, we were NOT disappointed. The Chef speaks perfect English - important as both men in our group wear hearing aids. He was delightful! Silly jokes mixed in with super "chefy tips." The class was unusual in that we cooked 4 courses, but we ate each as we finished it, rather than all at the end. It was a wonderful combination of prepping, cooking and eating. Because there were truffles at the wholesale market - yes, we added that option and were glad we did - he added a 4th pasta dish to the planned 3 plates. The recipes used seasonal ingredients, which is always a plus. We 4 are seriously looking at his 5 day program another time........

Words cannot describe the cooking class. It was awesome. There were 4 of us in the class. We made carpacci, risotto, scaloppine and dessert. All 4 of us partcipated in cooking and cutting. There were 4 different types of Rissoto's. Chef Paolo has a good sense of humor. Chef Paolo asked everyone if they had allergies and he accoomdated. We were all laughing and learning at the same time. We had wine to drink with our meal. The class was about 4 hours long. We started around 10 and we were done by 2pm. For me the booking process was easy. I feel I was lucky to get into one of his classes. If you are taking the train you should take a taxi to the the cooking school. Then after you can walk back to the train station. I highly recommend this class.

This was so much more than we expected! My sister and I arrived to the restaurant, and offered espresso upon arrival. We were led into the kitchen/class area where we met Chef Paolo and immediately felt like we were being invited into a family. We opted for the vegetarian class, and he walked us through the menu for the day. We prepped veggies, made sauces, made our own seitan (!!!), etc. All the while, chef Paolo cracked jokes, and told us of his many years of traveling and cooking all over the world. He sat down to eat with us during each course which really made the experience. We loved it so much, we plan to come back upon our next visit. My only wish is that they offered gift certificates to surprise others with the experience. Thanks Paolo!!

I would rate it higher for the cooking classes themselves but the housing had a negative effect for me. Chef Paolo is a very good chef. He taught me so much and I was fairly experienced when I went. I now understand much more about sauces and it will making cooking for friends and family a lot easier and more enjoyable. I would definitely take more classes with him. He has a quirky and charming personality that makes things fun too. He’s very bright and well traveled so that enhances the cooking too. All his staff really work hard and try to make the experience amazing.
When it comes to housing I would recommend doing separate housing within the city walls of Lucca. There are so many fine restaurants there and you could do and see more in the city while doing classes. The housing for the extended schools was sub-par. Noisy from the road and other residents. And even frightening one night with a family fight and no one sight management to deal with it. Never had access to WiFi in the room. That was a really big inconvenience in trying to stay in touch with family and business associates.

I booked a course here for my wife as a present when we were in Lucca and unfortunately she was ill so other members of my family went instead. I then rebooked the course for her and me 2 days later and everything appeared fine as they took my money and sent a mail saying they were looking forward to seeing us. Then got a mail the next day saying they were cancelling our booking with no explanation as to why and offering another date. I explained the situation about my wife and also that the other date was after we were going home, but I then just got a terse reply saying you will get your deposit back. Because of fees etc from paypal I lost money and asked for those fees to be returned as they had cancelled me with no explanation . They agreed, but I had to chase to get the payment and when they did pay they paid me US dollars which will cost me again to convert to £. I asked if they could amend this to £ and got a very rude reply and the statement 'dont contact me again'. Be careful if booking the course as you may get to pay for being cancelled like I did!

ear Sir I Am sorry about your wife being ill and having to cancel your first reservation which was done in February and canceled middle of July.
When you tried to rebook, for the 29th July the course you wanted was not available and I told you, you could join that one, or the next pasta and sauces class on the 31st JULY
You must understand that the summer months are very busy for cooking classes and if you book close to the date, you might not get the class you want if you have a specific date in mind.
This was not suitable for you and you decided to cancel – I DID NOT CANCEL YOU- I refunded your deposit.
I was very surprised to hear from you that you wanted a refund for the fees incurred in paying the deposit. This is the first time anyone in 30 years has asked me to refund these fees.
I am not obliged to pay your financial fees, as this is an expense that can vary from country to country, but I decided to pay the 10 euro you requested, because this was obviously important to you, 10 euro is not going to change my life.
I was flabbergasted to receive another email from you that PayPal paid you in dollars (not my fault) and you wanted a further payment for the exchange cost.
Of course I refused your preposterous request, and upon receiving another heated email about this topic I asked you not to contact me again.
I did offer you alternative dates and both refunds were made as soon as possible, within two or three days. your so called "loss" is perhaps 1 euro.

A return trip from USA to Lucca for Chef Paolo's Italian cooking class. This time I brought 7 family members. They were getting tired of hearing about how wonderful this weeklong class was so they decided to try it themselves. It was an incredible experience for all of us.
We cooked and laughed and ate and drank wine..and of course listen to the Chef's jokes. He is incredibly kind, patient and knowledgeable. If you're reading this and trying to decide whether to come...please don't hesitate...there are weeklong classes and day long classes and classes in between.

Highly, highly recommend Chef Monti Paolo’s cooking school. He provides hands on instruction on pasta making, stocks, sauces, seafood, etc. and also teaches the basic skills of dicing your vegetables:-) He assures the use of the very freshest ingredients.
I’ve arrived home and starting to cook and share my experiences and new skills with friends and family. I’m planning a group cooking vacation in the Spring of 2023 and will be returning to Chef Monti Palio’s cooking school.

I have taken several of Chef Paolo's classes, each time bringing teenage grandchildren and other family members. Each class is unique, so informative, filled with flavors of Lucca. Chef Paolo makes the experience fun and teaches the proper way to produce these wonderful dishes. Each time. we come home with recipes that we can actually recreate at home!. Educational, productive, delicious, entertaining experience. Thank you Chef Paolo.

I'm having a hard time telling the difference between the two 7 day classes- Gourmet and Tuscan, except the trip to Chianti. If these classes and the day classes all run concurrently, how are the classes distinguished or different? Thanks!

Our group took the 7-day Tuscan cooking class program, and it was fabulous. It consisted roughly of 4 days of cooking classes and 2 days of touring to see prosciutto ham and parmigiano cheese making facilities, and Chianti region wineries. I'm not sure what the Gourmet cooking class is, and maybe it is held on other weeks. However, we did see on some days that there were other cooking classes being given after our class was finished. Chef Paolo is pretty impressive - he gives all the classes and he also accompanied us on the tours.

The cost for the Under the Tuscan Sun cooking program is Euro 1590 per person in double room (single suppl. € 210)

Would like some more info about the accommodation / appartments above the restaurant. Are there any photos we could see? What sort of standard is the accommodation? Would like to book for my mum who is 70 so want to book her somewhere of a decent standard if you know what i mean...!
