We made a last minute request and we’re able to visit around noon. We learned all about the production of traditional balsamic vinegar of Modena (in English). Our host was wonderful. We then tasted 8 different vinegars and they were delicious. We purchased several bottles and received a complimentary bottle. I especially liked the 6 year white and the truffle and fig infused varieties. Highly recommended. Call ahead as there are multiple locations and make sure you’re visiting the correct address.…

My father and I had read about the Acetaia Malpighi on the internet when searching for places to taste balsamic vinegar. We happened upon it when walking through Piazza Roma and decided to look in the window. There was a girl inside who offered a quick info session on the process of creating their balsamic vinegar and led a tasting session with us and another couple. We tried 6 different kinds of balsamic and ended up buying the amazing white vinegar and a small bottle of traditional balsamic. Absolutely delicious and decently priced. I don’t know the girl’s name but she did a wonderful job guiding us through the history, importance and process of balsamic and we thoroughly enjoyed it. …

With our tour group, my wife and I visited Acetaia Malpighi. Here's what I wrote in my journal: "We went first to a balsamic vinegar maker out of Modena, Acetaia Malpighi. A woman gave us an interesting talk about how they make the wine vinegar. After that, we went into a room with chairs, and the woman would talk about a specific vinegar and then come around to each person and give him/her a few drops of the vinegar to taste. The taste was actually good, not much like vinegar. We got to taste about 4 balsamic vinegars, with each successive one stronger, older, and more expensive than the one before." For her 75th birthday, the tour director gave my wife a bottle of her favorite vinegar of the ones we tasted. This was a great place to visit, and you may decide to buy a bottle or two before leaving.…

Visited with my wife and our 2 young children. We all really enjoyed the knowledgeable tour given by Monica (well, maybe not the 1 year old) and highly recommend it to anyone in the area with a car. The tastings were great (we tried MANY different types of vinegar) - I personally had no idea balsamic vinegar in its purest form could be so flavourful and varied.…

Dear Absy83, thank you so much for your review! The traditional balsamic vinegar of Modena is an incredible product! Iis glossy, viscous, and dark brown, though it captures light beautifully. It moves like syrup, and has a velvety texture on the tongue. It has a rich flavor, complex sweetness that explodes in the mouth with notes of fig, molasses, cherry, chocolate, or prune. Traditional balsamic should pick up the flavors of the wood it matured in, and may have a slight smokiness. Traditional balsamic offers a mellow tartness rather than a strong acidity.

Unfortunately, we did not have time to visit Acetaia Malpighi, but luckily we found a small boutique shop on Piazza Roma. The young hostess was so charming and knowledgeable and we were the only customers. She explained us the vinegar production process, which was completely new to us, we did some tasting, and also purchased small bottles of red and white balsamic vinegar to bring home. Now we are enjoying Italian cheeses with a tiny drop of Acetaia Malpighi vinegar - delicious complement to fabulous Nebbiolo of Piedmont.…
