Production of Traditional Balsamic Vinegar of Modena and Balsamic Condiment. The Villa of Vinegar in Modena On March 14th 1910 the project of the Villa was submitted on behalf of Lieutenant Claudio San Donnino. It was later to become an exquisite example of Emilia Romagna "liberty". Frescoes and decorations by Aroldo Bonzaghi (1887-1918) with evocative and voluptuous "dannunzian" allegories generate a magical atmosphere. In that extraordinary place, Davide and Cristina invite you to taste special products of Villa San Donnino.

It is a privilege to visit Villa San Donnino and to see the love and care that Davide and his family put into the production of this wonderful product. I first visited 6 years ago and have bought traditional balsamic from here ever since. I returned yesterday with my friend. Our guide was fluent in English and knowledgeable. As well as the tour we tasted the different varieties of balsamic.
It’s a must-see if you’re in Modena, you will not be disappointed!!

An amazing place, beautiful grounds and lovely instructor.
My wife and I enjoyed our visit to the Acetaia. The lady who described the process was very informative and funny.
The tasting was also very good and it was interesting to taste the difference between the years.

We called and rocked up 40 minutes later to be told everything we could absorb about the production of aceto balsámico. Then we got a taste testing of all the different treats. All in a very friendly and competent way. Highly recommended

I had done a balsamic tour and tasting in Modena some years ago, at a major producer and enjoyed it a lot. On my most recent visit, while my travelling companion was off looking at all things Ferrari I decided to check out this smaller producer a short drive from my hotel.
As it turned out I had a private tour ( along with my dog) led by a lovely young lady who was very passionate about Modena and its history of balsamic production. The tour included a visit to the attic where most of the production was settled in for its long 12 year aging process.
For me of course, as someone who loves to ask questions while on a guided tour, it was a unique opportunity to have all my many questions answered. In addition to explaining the business of Villa San Donnino, she also explained the local tradition of family “ gifting” the series of 5 or more different sized barrels used to produce DOP Balsamic to succeeding family members so they can carry on the tradition of producing for themselves. I wasn’t aware such a cottage industry existed, and I felt a bit sad that living in Canada I couldn’t have the opportunity to do this for my young grandchildren. ( Actually, I suppose I could- Hollywood actor Pierce Brosnan currently has a batch undergoing ageing here, but I think his budget for such things is perhaps more generous than mine ).
The tasting at the end was of course a highlight; I had an opportunity to taste 6, 12 and 25 year old versions, plus a balsamic “jam” and a condiment ( never to be referred to a “white balsamic” which cannot exist by definition) made with white wine. All were delicious. And a sample of the balsamic with gelato of course. That wasn’t new to me, but it really highlights the versatility of the condiment for visitors.
A very enjoyable way to spend an hour in the Modena countryside.

We went to this Acetaia out of curiosity to understand how balsamic vinegar is made.
Our very knowledgeable guide introduced us to the origin of vinegar and the long patient process of obtaining a small bottle...that's why they call it black gold. The visit is really very interesting and pleasant also for the experience for our sense of smell savoring the scent of the barrels with the macerating must...at the end of the pleasant and fundamental guided tour the tasting of the various types of vinegar...which will give you helps to better understand the difference based on the years of aging. We recommend visiting this Acetaia if you are in Modena. The guided tour and tasting are absolutely free

Different and unique experience, it’s all worth it. I learned the history of Modena's signature product, balsamic vinegar. Who knew that vinegar could be so good, tasty, with so many uses, even in ice cream. We were welcomed by a guide who was extremely friendly, careful, polite and clearly very passionate about what she does and the house she represents. Free visit, accessible by bus. Exceptional!

Awesome tour and tasting! This is our second time doing this tour and still just as good. It was a Sunday (very few other tours are available in a Sunday) and due to the time of year it was just our family of four. Great information on the production and a fun tasting. Highly recommend!

They were very responsive with our inquiries then very patient when we were late. Caterina gave us a wonderful tour of the history and traditional method of making aceto in Modena. And then there was the tasting…so delicious! We left with a lot more bottles than we’d planned on. Highly recommend this tour.

È possibile anche per singoli (ho già visitato villa ed acetosa qualche anno fa con un gruppo organizzato) prenotare la visita(ed essere accorpati con gruppi)?

Buongiorno, in realtà l'acetaia è sempre aperta per visite (anche singoli), ma è meglio prenotare per permetterci di organizzarci.
La villa è un'abitazione privata, aperta solo in certe occasioni.

Hello,
from the Modena train station the best way is to take a taxi (cost about 24 euro). For the moment we could have availability for an English tour at 10 and 11am and at 3pm. The duration of the complete tour, visit and tasting , is about one hour.

We will be in Modena to tour the Ferrari museum with our grandsons and would like to tour your production for us ( we are balsamic vinegar lovers!),
Is it possible to get there without a car or would we need to rent a vehicle?
We will be there in August of this year however have not set a day yet so depending on if it is accessible without a car we will converse later about an appointment.

Hello,
it will be a pleasure to meet you at Villa San Donnino.We are located about 15 chilometers from Modena center, there is a bus but the best is to take a taxi (cost about 25 euro).
The duration of the complete tour is about one hour. No cost for visit and tasting.
