Latest Update: Not only have I restarted my classes and market tours in Bologna, but my kitchen with a view is beautifully air-conditioned and the best place to be on these torrid heat wave days, I have been running classes since 1999 and I plan to carry on doing what I love and enjoy. We did a lot of research on different cooking classes in Bologna. One of the things that stood out with Carmelita was how accommodating she was with our kids. We have two kids under 10 and she was very patient with them as they learned to make tagliatelle al ragu. We went through all of the steps to make tagliatelle pasta from scratch. We also learned the recipe and details for making a true Bolognese ragu (meat sauce). We had some delightful wine and ate what we cooked. It was a brilliant class and a highlight of our trip.

We had a wonderful time with Carmelita. She is a fountain of historical information about the food culture of Bologna, and very passionate about sharing her skills and experience. We had a wonderful food tour, and she can tell you which places to avoid and which are the best, as well as pointing out which shops have been owned by the same owners for generations, where the guild was, which regions the different cheeses are from and, for example, which have more or less salt and how they are made. She has a great sense of humor, a quick lively spirit, and brought together the different personalities of a group into a memorable event. I will look forward to making pasta now that I am home with my new skills!

Great short market visit to buy some produce and detailed explanations in the process. Easy walk to Carmelita’s large and bright kitchen where we made fresh tagliatelle with authentic ragu followed with a tasty colorful chicken dish that I will duplicate as soon as I get home. Preparation was accompanied by many stories about food, history, Bologna and Italy. We also tasted excellent local wines. We were not rushed, energy was good and I am glad to have chosen Carmelita and her program. I highly recommend.

We spent a wonderful day with Carmelita exploring the market in Bologna and learning about the different stores, and the history and products which make Bologna such a marvellous destination. Carmelita is very knowledgeable and knew all the store keepers and could tell us the best place to buy the wonderful specialities for which Bologna is famous. Our market trip was followed by a cooking session where we worked together under Carmelita’s guidance to produce fresh pasta, ragù and chicken with lemon and capers. We sat down to our feast with wine and wonderful company. A marvellous day, fantastic food and we will definitely come back.

We took a half-day cooking class with market shopping, followed by making a pasta dish and main course. What an incredible experience!!! Carmelita is engaging, knowledgeable, and just so much fun!! She taught us of the history of Bologna, the best way to pick out the freshest ingredients, what to avoid, and, of course, how to prepare the most wonderful, authentic, Bolognese cuisine!! This was even more than my wife Lynn and I had hoped for. I would encourage everyone that wants to learn about Italian cooking, or just enjoy a fun and entertaining day in Bologna, to seek out Carmelita. We can’t wait to try these recipes again!!
