About
Italian cooking lessons in an Italian home! We are happy to teach you how to prepare authentic Italian dishes and although we are friendly, we are also quite serious about teaching you the right way to make these dishes and ensuring that you will be able to replicate these back home. Your success back home is our objective. We are professional and experienced but not stuffy or arrogant. Our specialty is pasta making, the old fashioned way; the way the Italian grandma's still make it (with a wooden rolling pin and board)! You will make several pasta shapes and sauces and won't miss anything! We also teach how to cook with local specialties like Parmigiano Reggiano cheese, Traditional Balsamic Vinegar, Bologna Mortadella and Prosciutto from Parma. We cook with fresh seasonal produce, meats, and seafood. Lessons are personalized and held in small groups (1-3, up to 6 if related or close friends) to assure plenty of one-on-one attention. Our hands-on cooking lessons are held in a home setting. No surcharge for single participants or private lessons. Discounts for children. Lessons available in English, Spanish or Italian.

A Perfect Day with Maribel

My daughter and I had an absolutely fantastic day with Maribel. She is a wonderful guide and teacher. We visited the market and famous food shops in the morning, then went to her home and had the most glorious afternoon preparing two pastas at her house. She taught us how to make handmade pasta, which was a joy. Transforming eggs and flour into a soft dough that we then rolled out and cut and formed into pasta shapes made for a memorable afternoon. The meal we prepared was so so good, not just the pastas but also the other dishes. We had: snacks of aged “red cow” Parmesan with marmalade; breadsticks wrapped with mortadella and prosciutto; ripe green figs stuffed with Gorgonzola and wrapped with prosciutto and baked to make the cheese melt and the prosciutto turn crispy; pasta bolognese; pasta with eggplant, tomato and basil; and a dessert of sweetened whipped mascarpone with a bit of rum and peaches. We made all the dishes ourselves and then savored the results! This was a long day and we really enjoyed getting to know Maribel, who is deeply knowledgeable and loves sharing tips and fascinating facts. The best part was making the pasta. Definitely a highlight of our trip!

Makes sure to call if you go within an hour or more of closing because they choose when and if they want to close early. I went with a hungry bunch after a long day of hiking at 7:15 to be told to wait for 30 minutes or more to which we agreed. After 5 minutes we were told that owners said they wouldn’t be able to seat us because they want to close early. When I asked if I can order as takeout, I was told management said no. I guess they don’t want service...

We made tortelloni and fettucini and ragu, all with a delightful conversation and the occasional snack while cooking. Maribel had gone to the market that morning for prosciutto and cheese so we wouldn't cook on an empty stomach.
Not only did we make pasta but we also learned all about Italian regions and their foods, the controls on balsamic vinegar, different approaches to fettuccine (durum? soft wheat? who knew?) and more. Finally we ate our creations with a choice of wines Maribel paired with the past. All in all a wonderful experience.
Note that this is a solid half day so do not schedule tightly - you cannot rush pasta!

Worth a Return Visit

Ever since my first pasta class with Maribel in 2016, I have longed to return to her kitchen in Bologna to deepen my understanding of traditional Italian cooking. I can't overstate what a helpful resource she's been, nor the joy I've experienced as I've taken her recipes home to share with family and friends. I was finally able to make a return visit last week to take her class on cooking with authentic balsamic vinegar. Once again, the class was a highlight of my trip. The know-how you'll gain from Maribel's instruction is the BEST souvenir you can bring home from your visit to Bologna!

Wonderful cooking class with Maribel - highlight of our Bologna trip!

What a wonderful experience - cooking with Maribel is been one of the highlights of our trip to Bologna! We are 4 foodies friends (Italian, German, French), who were looking to learn the secrets of pasta making. Maribel was the most perfect teacher for us, sharing her experience in the cosy and relaxing setting of her own kitchen. We would recommend a cooking experience with Maribel to anyone looking to learn about Bologna, its cuisine - and to have a lot of fun and good food!

Highlight of our trip

We had a fantastic day with Maribel in July. We took the Market to Table Classic Bolognese Pasta course.

The tour of the Quadrilatero visiting shops/market stalls and collecting ingredients was a real highlight as Maribel is so knowledgeable and passionate about food. Next it was a taxi to her lovely apartment and into the cooking. She is a great host, and a very patient and kind instructor. It was our first time making pasta but she made it very straightforward and we were really happy with the results. We made two types of pasta, 2 sauces and a tiramisu. We also sampled some delicious prosciutto and mortadella, and caprese. We all sat down together and ate our creations and Maribel provided wine and delicious home made limoncello.

We really enjoyed talking with Maribel about food, travel and Bologna. This was an absolute highlight of our time in Italy and I highly recommend taking this course if you have the chance.

Fantastic day with the family!

I booked a cookery day with Maribel at Taste of Italy as part of a special holiday to celebrate a significant birthday! It was my choice but enjoyed very much by the whole family (myself, husband, daughter 14, son 10). The market tour was very interesting- so much quality and variety, we wouldn't have known where to begin! Really good to find out the background and some tips about choosing ingredients. After a coffee we headed to Maribel's to make our own pasta and the rest for our lunch. Maribel suggested the menu given our family preferences and what was in season.

Maribel is a brilliant guide and teacher. She taught us lots and was also very good company. She is knowledgeable but also patient and was so good at engaging my 10 year old son and encouraging him when necessary- although some other things he seemed better at than his parents! Maribel is well-organised and has both the tools you need but also tips for other methods so you don't feel you need to rush out and buy numerous pasta tools to recreate the menu!

We were given snacks during the session which were lovely. I have had parmesan with honey several times since, after having been introduced to that!

Our meal, with very nice red wine provided, was much enjoyed. We have since received the recipes as promised, along with some other suggestions and tips that we chatted about during the day.

So glad we booked this cookery experience with Maribel. It was a brilliant day! Highly recommended.

People booking a lesson just based on price do not realize that there are significant differences in lesson content and quality of ingredients used. We organized a Market-to-Table Tortellini class with Maribel at Taste of Italy some months before our arrival in Bologna. The arrangements were easy to make and we agreed to meet at the old market in the Quadrilatero. We then spent several hours exploring shops and vendors and learning more about local quality products, sampling as we went. After purchasing ingredients for the tortellini and some zucchini blossoms, we headed to Maribel’s for a splendid and enjoyable day of cooking, chatting, snacking, and making and filling the tortellini. You can look far-and-wide and won’t have a better experience. We sat down together to enjoy the products of our labors. It was an unforgettable day the 4 of us will treasure. Hope to return for another cooking class. Maribel later sent us the recipes for what we’d prepared.

My husband and I were so happy to meet Maribel who is from the USA and has lived in Italy for many years. Her cooking class offers a market tour plus cooking or just cooking. We decided to go with just cooking. Her home is immaculate and easy to find. We walked from the center of Bologna. We were warmly greeted and found our selves in a very organized kitchen with another couple from Tasmania that had taken the market tour. We all were so happy to learn from Maribel . We made tiramisu, bolognese ragu sauce, tagleitelli, and torteloni stuffed with ricotta in a lovely butter and sage sauce. It was definitely hands on cooking. We all equally participated in the lesson. After cooking everything we ate together in the dining room and enjoyed a lovely wine as well. This was definitely a highlight of our trip. We have made the pasta and sauces 3 times since. Always so fun to do and brings back great memories of our time with Maribel.

I am even happier that you have successfully made pasta again at home, learning how to make pasta in Bologna is the best souvenir! For everyone who reads this, I'd like to clarify that: I am originally from Puerto Rico (hence my fluent Spanish), went to University in the US (hence my fluent English) and have lived in Italy over 22 years (hence my fluent Italian)! My grandmother on my father's side was Roman so I grew up eating delicious Roman specialties and my husband is Italian from Parma.

Best experience in Bologna

My husband, teenage son and I spent a day doing the Supreme experience/menu with Maribel. She’s lovely - very patient and kind with our restless teenager. We loved the experience of cooking in her kitchen and just spending time to learn how to make pasta. This was the best part of our visit to Bologna! You will get a tour of the Old Market as part of the Supreme experience so you don’t need to do a separate food tour. Thank you, Maribel!

Dear family, you were concerned I would not be patient enough with your teenager but I also have a teenage son! ;) I actually enjoy teaching children very much, they are restless, yes but also curious and happy. I hope you will practice making pasta together as a family. It does require some effort but I believe you appreciated that the delicious results were well worth the effort. It was lovely to cook with all of you.
