About
You will start your day in the historic centre at Campo di Fiori open market in Rome. One of our professional chefs will take you on a shopping tour where together you will choose only the best in-season ingredients, and decide the menu of the day. The lesson consists of 5 hours of fun instruction and, of course, the enjoyment of the mouth-watering cuisine. More than just the recipes the class is very much about the ‘why’ and ‘how’ of the cooking process. In this way, you will have a deeper knowledge to take home with you. Cooking methods are taught along with creative presentation of the plates. Hands-on practise is an important component of ‘Chef in a Day’. You will be taking part in making an antipasto, 3 different pastas from scratch (one long, one short, and one stuffed), each accompanied by exquisite sauces. The lesson continues with a traditional second course of meat/fish, (vegetarian optional) and you will end this refined cooking experience with a delicious dessert.

Amazing experience, the highlight of our trip

We had a one day cooking class for a family of 7 grownups and one child, to celebrate our mother's birthday. Chef Federico and his wife Louise are amazing hosts, their farm is beautiful and the food was extraordinary. Most of the ingredients we used grow in the farm, which is ancient and unique and worth a tour itself.
We prepared a 5 course meal from scratch with fresh pasta, learned some priceless secrets and had a great meal after all the effort :) This was the highlight of our 9 days vacation, and we can't wait to come back and do this again. Highly recommended!!!

A fantastic day at "Chef in a Day" cooking school in Umbria!
Now located in Umbria, we had the great opportunity to attend Chef Federico's "Chef in a Day" cooking school. What a fabulous treat! It was all hands on where we learned how to make 3 different pastas from scratch as well as 3 different sauces. We learned many cooking techniques we were not aware of, and we are pretty good cooks in our own right. The hillside estate was gorgeous and the teaching kitchen is top notch, designed for a great learning experience. The food he taught us how to prepare was fantastic as was the wines he served us during the class and eating the dishes we prepared. Chef Federico's teaching style was funny and engaging so we didn't want to leave at the end of the class. If you are a foodie and are visiting central Italy, this is one experience you must not miss!

Originally, I booked this class for a teacher friend and I. We were staying 5 days in Rome and I always take a cooking class wherever I go now.

The class was short two people so Federico asked if we would be willing to come to Umbria for an on site course. I was game but after I saw the photos on their site I decided to surprise my friend. It’s always good to get out of the city and enjoy a different landscape.

The cooking is of course essential but what this offered our trip was a whole day of beautiful landscape, tour, culinary experience and spending time with people who are not only doing what they love but love the life that they have built for themselves.

They are so excited to share it with the world and I honestly ready to go back again and stay for a few days this time.

This part of your trip will be the creative highlight everyone hopes their vacation has but seldom does.

Highlight of Rome

Absolutely amazing cooking class with Chef Alessandri, it was the highlight of our trip to Rome.

We began by picking up some ingredients at an outdoor market and supermarket, before heading to the comfortable kitchen space. The day flew by, we were enjoying ourselves so much with the wine, conversation, and cooking.

Chef gave us useful and impactful lessons that we will take back to our own home cooking, and the pasta we cooked was incredibly delicious.

Can’t recommend this experience enough!

A MUST VISIT IN ROME
What a fantastic way to spend an entire day with my daughter. We met with the Chef at a farmers market and picked out fruits and vegetables for our courses for the day. We than learned how to make 4 different Italian dishes. After every dish, we were able to sit and enjoy what we had prepared. The Chef was outstanding and taught us how to cook true Italian food. This is not to be missed in Rome !

Unbelievable experience!

The highlight of our time in Italy, this was everything - amazing value - incredible castle with history - genuine local people who care about food and culture - and did I mention the cooking class with Chef Alessandri? Not only is he an incredibly experienced chef, but he is also a teacher and entertainer! We had so much fun in our class and enjoyed ourselves so much it felt like a dream. On top of everything, they made all the arrangements for transport and our stay was super easy. We only planned to stay one day, you should spend at least 3 and by the way, this would be a wonderful place for a wedding! We're looking forward to our next trip to Rome so we can get away to Umbria and visit Chef Alessandri and family again! (We also loved the truffle-hunting puppies taxi and Uber, who made it feel especially like home-away-from-home)

Unique and authentic cooking experience
We did our first cooking class for our anniversary back in Sept 2018 with Chef Federico Alessandri in Rome. Fair to say that this was our best cooking class and experience so far. Chef Federico starts with the group on the market where you buy all the fresh ingredients for the ~5h cooking class. Accompanied by plenty of wine you get the authentic Italian cooking experience. Starting with different handmade pastas, tomato sauce cooked for 3h to artsy/fine plating you learn quite a lot in a fun and entertaining way with lots of laughter. Federico has plenty of stories to tell and you feel that he is enjoying to share his knowledge with the class students. Expect to have a great day and authentic experience. Course is worth every EUR as you will def leave with a full belly... No dinner required on that day!

This October we had the pleasure to get a sneak peak of the multi-day cooking class with accommodation in Umbria at Casale Alessandri. During the first cooking class Chef Federico was explaining how he wanted to extend the course and use the medieval family castle in Umbria to offer multi-day Italian cooking classes.
In the 6 day stay we enjoyed about 36 different courses (breakfasts not included)!! This is heaven for anybody remotely interested in culinary or just eating! During the 6 day stay we had 3 cooking classes, 2 Chefs Fine Dining Dinners and 4 Rustic Dinners which where still 3 course dinners and not less impressive and tasty. More cooking classes give you the possibility to learn even more about your favorite Italian dishes. You learn more pasta styles, various styles of sauces and new dishes
Federico and his wife Louise are both lovely hosts and make sure that you have the most relaxed stay. The various rooms off the medieval family castle are lovely renovated, decorated and clean. The property is nicely redone with own olive trees and a great infinity pool. Casale Alessandri is located in the heart of Umbria which makes it a great start point to visit Perugia, Assisi and the surrounding little towns. Federico and Louise gave us plenty of suggestions for day trips.

Definitely will come back in summer to enjoy the pool and more cooking!

How amazing: I really became a "chef" in a day, believing I will be able to reproduce some of the amazing dishes

We had the luck of being the first group to be taught by chef Federico since lockdown. And it was quite an experience to see the genuine joy of the people at the market and in the specialized shops to see him back at last. He clearly is a well respected member of the community and it was a real joy to see all this top produce and get the explanation of the different qualities and possible combinations as per inspiration of the moment.
Chef Federico has it all: he has charm, a great sense of humor, speaks perfect English and most importantly, he is an artist of the senses: learning to knead your pasta until you feel it has the right texture, while wonderful aroma’s curl in your nose enticing your appetite, which is only enhanced by the visual spectacle that is surpassed by the best pasta I ever tasted in my life. And the gnocchi: I never liked them before, that is until I tried his fluffy pillows. We learned equally about how do it right as well as why so many people get it wrong.
Chef Federico is also a very good teacher. After all cooking has a strong link with chemistry. You clearly feel his years of training with high ranked Michelin star chefs, but his greatest quality is that he can explain in a simple way how most Italian dishes are made out of a wonderful combination of just a few elements and how one of his mother sauces (tomato of course) combined with other elements results in different dishes. His enthusiasm and love for food are infectious and I go home with the conviction that I can really pull it off to reproduce some of his amazing dishes.
All of this (market, visit to the shops, the cooking class) happened respecting very stringent corona measures, so we felt safe. But it didn’t kill the atmosphere, on the contrary. It felt good to return to some kind of normality, cooking in perfect companionship (all of our family being foodies). For me this ranked as the best activity in Rome. Thank you chef Federico !!!

Great, delicious and professional activity

Thanks to Chef Frederico who is a great teacher. He is engaging, speaks very well English and not only explains how things need to be done, but also particularly why it needs to be done that way.

We started at the market where Frederico explained what we would prepare and why he choose what vegetables. Then he took us to a cheese store first and after that to the butcher. Same again: clear explanation what and why.

Then on to the cooking studio where we started the preparations for 3 types of pasta. First preparing the mother sauce and then each of us had to knead the 3 different doughs. I am not a great fan of Gnocchi, so I was sceptical on that one. We continued and had the chance to also taste different wines.

While Frederico was cooking the tortelloni in the mother sauce, we started to salivate, young and old(er). Frederico nicely set up the plates. And then the biggest surprise had yet to come: our first taste of this dish. Simply extraordinary. The best pasta we ever ate. Both pasta and sauce were truly exceptional. We want to make it ourselves again as soon as possible when back at home.

We had another semolina pasta with Zucchini sauce and then the Gnocchi. I honestly have to review my view on Gnocchi. They were very tender and great in the Gorgonzola sauce.

Frederico then learned us how to cook chicken no longer raw while still tender with a delicious lemon sauce.

Finally, we were served peach marinated in white wine. Very balanced and great desert.

We all agreed that this was a fantastic activity and experience and talked often about it the following days up to today.

Frederico is also funny during his explanations adding to the engaging learning.

Best pasta ever

We started immediately when we arrived even we were that 20 minutes early and he just said “no problem we can do an extra pasta”We went to the market and he explained what we needed and why. The cooking was fun for everyone and it was just amazing how he cooked. He didn’t cook with standard timing, but with his nose and mouth. This cooking class is a pleasure for young and old, experienced and beginner. He explained every step, and no it was not boring it was with humor and passion. His pasta sorentina is the best pasta I ever ate. If you want to learn how to make real Italian food this is the perfect place.
