Authentic Italian Cooking Class with Letizia, a Real Gem
My husband and I booked a cooking class with Letizia that turned into one of the highlights of our trip to Italy. She is the most passionate person about food that we have ever met, and she was thrilled to answer every question about Italian food and culture that we asked her. She warmly and graciously welcomed us into her own home and taught us how to prepare panzanella (an Italian bread salad), handmade gnocchi with a porcini mushroom red wine glaze, an Italian salad with steak and arugula, and a decadent cinnamon pannacotta. The food was unbelievably delicious and her instruction was excellent. We discussed everything from pasta, coffee, flour, olive oil, etc and we learned SO much! The gnocchi was a melt-in-your-mouth revelation, and Letizia served the pannacotta with the last of her sour cherry preserves from her farm. We felt like we were cooking with a dear friend and highly recommend Letizia’s cooking class. If you want to experience cooking and eating in a real Italian kitchen, this is where you must do it!

    A NOT TO MISS Experience.
Letizia's cooking classes are a "NOT TO MISS" experience. Letizia is a gifted cook and teacher. Her instruction is easy to understand , the food is authentic Italian, it is beyond delicious, healthy, fresh and clean, her recipes are easy to make. Letizia shares her knowledge freely , easily and in a warm fashion, she instantly makes you feel at home in her kitchen. I am a repeat customer, have her cookbooks and have signed up for her cooking club. I will gladly attend classes anytime I am in Rome. I highly recommend this ....you won't be disappointed.

    Amazing Cooking Class!
The Madonna Del Piatto cooking class was an amazing experience I highly recommend! Letizia, our teacher, was fantastic. She made cooking fun and easy, showing us how to make delicious butternut squash risotto, broccoli sformato, a fresh fennel and orange salad, and the smoothest panna cotta. She explained everything so well and even introduced us to her friends, making us feel like part of the family. If you’re looking for a unique cooking experience in Rome, this is it. It’s a must-do for anyone wanting to dive into real Italian cooking. Loved every minute!

This was an amazing experience. Cooking and having lunch in Letizia’s home was very special. She’s an excellent teacher and took the time to explain everything in simple steps. The recipes weren’t complicated and the food was delicious. Highly recommend this Letizia’s class for a truly authentic Italian experience.

We had a wonderful time cooking with Letizia at her home. The meal was so good and it wasn't hard to prepare. I got a kick out of seeing how Letizia had my husband making pannacotta. He even jumped in to help make pasta...what?! Such a wonderful experience, one we will never forget!

In April my friends and I visited Italy for a long awaited trip. One of our group had contacted Letizia in advance to book our cooking class. It was early in the season and as it turned out we were the first group of the summer to visit. Letizia was a wonderful hostess and after a beautiful drive up the mountain we came to Letizia's home. We were greeted with warmth and fantastic hospitality. Under Letizia's careful instruction we made fresh pasta, meatloaf and pannacotta. I am from the UK and the rest of my group from the USA, Letizia had checked this in advance and was able to give us cooking instructions and prospective suppliers for the ingredients we used in both countries.
We sat on the beautiful terrace after cooking looking out over Assisi and were served the meal we created with plenty of lovely red wine!
The day we spent on the cooking course at Letizia's 'Magical mountain' was the highlight of my trip. I would recommend it to anyone.
My signed cookbook has been well used since my return to the UK!!
Thank you Letizia

This is a very special cooking class. We went to Italy for 2 weeks in September and this was a major highlight of the trip. And what a unique souvenir we brought home: Italian cooking to share with family and friends.

Letizia is warm, welcoming and ready to share her cooking skills. There were 6 of us taking the class. We enjoyed getting to know each other. She explained the kinds of ingredients she uses and what we can use at home. By the way, her ingredients are locally grown and organic. We all worked together in the kitchen around her work table. Letizia explained local Umbrian techniques as we worked. It's an effective way to learn.

We made ravioli, panzanella, and an outstanding chicken alla cacciatora, plus dessert. We ate outside overlooking a stunning view of Umbria!

She has a well earned reputation. The New York Times wrote a positive review of her in August. This is in addition to her inclusion in National Geographic's Food Journeys of a Lifetime - 500.

During our honeymoon, my husband and I planed to take one cooking course with Letizia. We are going to open a vegan cafe and wanted to get some more recipes and ideas for our menu. The first course was so amazing that we've decided to take another one as soon as we finished it. Letizia customised the course to our needs. The Italian cuisine is not vegan oriented, and Letizia has plenty of knowledge on how to make the required adjustment. Much more than the delicious recipes, she taught us the principles of traditional Italian cooking, like how to flavour and layer dishes to get the best out of each ingredient, when and why you should let the dough wait, or cool it down, or heat it up, when and what can be frozen and reheated, and so on. Her explanations (in perfect English) were super clear and organised. We are strongly recommend it to anyone who has any interest in learning to cook traditional authentic and delicious Italian food.

Dear Yael and Trammel, you visit here at Alla Madonna del Piatto has been a special one, thank you so much for having visited us atop our magical mountain! As you rightly say, Italian cuisine is not traditionally vegan, but I am happy and grateful to know that you have appreciated that around the family table of an Italian house everone is always welcome and everyone will be properly fed, regardless if vegan, gluten free, meat lover, allergic or restraining from certain foods because of religion. It's almost always possible to find something good for someone who is passionate about our wonderful cuisine, respectful of family life and wishes to share their time in our kitchen. Thank you so much for having been wonderful guests!

We spent a lovely day with Letizia in September when we were in Italy. We met Letizia and the rest of our group at a little deli in Santa Maria del Angeli where we tasted olive oil, vinegar, cheese and cured meats and selected our ingredients for the day. We then travelled to Letizia's B&B and Cooking School in the hills, it was beautiful. We had a lovely day cooking and eating the food we had cooked and shared it with the rest of our group. Letizia's classes made it all seem so easy and we learned so much as well as having a lovely day out!

After my husband and I made our flight arrangements to Italy, I started looking on the internet for a cooking school in Central Italy, and was overwhelmed with how many there are!! To narrow my search, I decided to check with the experts, so did a search on Food and Wine's website, and the timing was perfect. In the magazine's most recent issue, September 2007, was an article on cooking schools in Italy, featuring 10 schools, of which one was Leitze's!! It was the perfect choice from the start ... emailing her to check on availability and her prompt reply, complete with suggested menus and many links to articles of rave reviews of her classes. The visit to the market with lessons and samplings of the Italian cheeses, meats, olive oils, truffles, and wine discussions was the start of a most enjoyable day. In Leitze's kitchen, my husband and I along with 6 other "cooks" participated with Leitze's instruction and guidance in making a delicious Italian meal, and then enjoyed dining on the patio with the gorgeous view of the Umbrian coutryside, and Assisi tucked below. Leitze's cooking experience and knowledge, good organization, great kitchen, wonderful personality, and beautiful dining setting, made this a wonderful experience!! It was the perfect cooking school choice for us!

In Campagna Cooking class with Letizia was the highlight of our trip to the Umbrian region. What better way to experience Umbrian culture than through a home cooking Umbrian meal? The kitchen is clean and perfect in every way - and her house sits on top of the mountains of Assisi. From the kitchen you are overlooking all of Assisi with magnificent views. Letizia met us in the town of Santa Maria Degli Angeli at a local gourmet shop where we learned about the region's wonderful olive oil.. we tasted various types of cheeses and meats and sampled some of the finest balsamic vinegars. The shop has everything one could want at very reasonable prices and most importantly, high quality.

About an hour later we headed up the mountain to Letizia's kitchen. She had the table already set and wine ready to pour. She was extremely gracious and hospitable and made us feel right at home. We made a delicious meal and she truly cared about us learning new skills and getting something out of the experience that we could apply to our regular routine.

I've traveled throughout Italy and Europe dozens of times and In Campagna was truly extraordinary. It was an experience I will never forget - Don't hesitate to book - you will be so glad you did!

This was the highlight of my 2 week trip to Italy. I learned so much about making pasta and Letizia made if fun and also her teaching skills are so good that you know you can make the pasta dishes when you return home. If I return to Italy I would love stay at her bed and breakfast and enjoy another cooking class and spend time relaxing on her deck enjoying the beautiful region her home is in. It was also helpful to learn more about the olive oils, cheeses, meats and balsamic vinegars and how to use it my cooking when I returned home. This is a MUST if you are in the Umbria region, you will learn much by a wonderful and knowledgeable cook, have Fun and enjoy wonderful hospitality.
