Overall, I really enjoyed this Spanish Cooking Class and Market Tour. The Market Tour portion really imbued a cultural aspect into the dishes we were cooking. For someone really interested in Spanish culture and cuisine, it was really fascinating to engage firsthand with the foods we would soon be cooking with from the very market itself. For example, it was enriching to learn about what makes ibérico ham so expensive and valued, and for the saffron spice, what makes it so complex to harvest and therefore valuable as well.
Overall, the class was structured well too. While I would have liked more time to engage in conversation with the chef himself and my fellow Airbnb people, it was a very productive and educational class nonetheless. Also, the food itself was homey and delicious to say the least. Personally, I found the details about paella to be the most interesting part because it really gave insight into how tourism has propelled paella to become one of Spain's most recognized dishes while also simultaneously tainting the true idea of what paella is and the difficulty, time, and effort that goes into making it.
Without a doubt, this class gives the non-Spaniard a vibrant appreciation for the culture and history that is inherently ingrained into each dish. I would definitely recommend this class for anyone visiting Sevilla and wanting to know more about the culinary components of Spain!
