Iā€™d really recommend the Sierra Aracena to do some working. The tiny mountain villages are very old, traditional and rarely visited by foreigners. The walks are picture-postcard through Andalusian countryside. The 2004 book on walks in the area written by Ros and David Brown is a bit dated but the best there is.
