Our family of four had the most wonderful day with Gilles. First came the stroll through the market gathering the best of ingredients to the various other shops buying the things we needed for the menu he had decided on as he walked through the market before our arrival. We then had a time of wine tasting where we choose the wine we would have with lunch. Then it was off to his lovely home where we had a very hands on experience preparing our 4 course lunch. it is one thing to be able to cook. It is another thing to be able to teach others to cook. Gilles is a master at both. Our lunch was beautiful , bountiful and delicious. Conversation flowed easily among our group of 9. It was a day we will long remember and will undoubtedly be one of the highlights of our trip to southern France. Thank you, Gilles for an unforgettable day.

My husband and I had a wonderful cooking class and exceptional experience with Giles in Aix-en-Provence. This was one of the highlights of our visit to Europe. We shopped at the farmer's market in Aix and then shopped for our wine. We cooked outside at the farmhouse and foraged for wild thyme for our herbs. It was amazing. Thank you Giles!

My husband & I took Gilles cooking class in Aix-en-Provence. It was amazing! We started the day meeting the other people in our small group. We then toured the vegetable market, boulangerie, charcuterie, & fish market with Gilles as our guide. He then took us to a local winery for a wine tasting. Next we went to his house & began to cook. It was an incredible day of laughter, meeting new people, & enjoying delicious food & wine.

We recently returned from Aix en Provence where we spent a wonderful day with Gilles strolling through the market to select ingredients for our meal, visiting a local winery where we experienced a wine tasting and on to his lovely home in the countryside to prepare our lunch. He gathered fresh ingredients from his garden and taught us how to prepare olive tapenade, garlic aioli, seafood with savory vegetables and a peach and red wine dessert. It was a special, personal experience for our group. Our meal was delicious! I would highly recommend Gilles and his cooking experience. Thank you for a memorable day!

What an incredible day we had with Chef Gilles in his beautiful country and home. From the moment we met Gilles, we knew it would be an exciting, knowledgeable day and he delivered. First we went to the colorful and fresh market to pick out our veggies, cheeses, nuts, etc. that we would use for our meal; off to the boulangerie for the four different types of fresh bread we used, made that day; and to the butcher for our meats and pate! A learning experience just in that! Then off to a winery to sample local wines and then to Chef's house to start preparing. One of my highlights of the day was going to his garden and cutting off fresh artichokes and learning how to prepare them in several ways. Garden to table doesn't get any closer than this. Prepared an appetizer, main and dessert dishes. All were so delicious, simple and totally French country cooking. Chef Gilles made our day -- he was so delightful, informative, open to any questions and just a gentile, wonderful man to be around. A truly great experience and I would highly recommend spending the day with Chef Gilles! One of the highlights of our trip and so grateful to Chef Gilles for making memories that will last a lifetime!

What a tremendous day! Gilles met us in Aix where we worked our way through the market. He planned the menu based on our preferences and the bounty of August’s seasonal offerings. We then stopped at a winery and off to his lovely home to spend the afternoon preparing a gorgeous meal of sea bass, tomatoes Provençal, an onion gratin and green beans from his garden. No one will go hungry on this tour! Merci Gilles pour an experience extraordinaire!!

Gilles was an exceptional host. He was very personable and knowledgeable about the area and the cuisine. He picked us up and took us to the market and explained the different vendors. We then were taken to a vineyard for a tasting where we bought some excellent wine. But the highlight of the day was where Gilles welcomed us to his home and we prepared a wonderful lamb and ratatouille dish with potato's. I could not recommend this outing more as you get more than you expect. Thanks Gilles

The day we spent cooking with Gilles was one of the highlights of our visit to France. We were immersed in culture and cooked more food than it was possible to eat! Gilles welcomed us into his home and we talked about food, wine, French politics and every other topic under the sun. We laughed, learned, and had an experience we'll remember for years to come.

Knowing I was planning a trip to Aix en Provence, my daughter booked this cooking course for me as a Christmas gift. What fun it was! Gilles our host was personable and knowledgeable. We met in the center of town and the four 'students' first walked through the old town to the outdoor markets, where we purchased the ingredients for the menu he had made up (with some input in advance from us). He told us about the different vendors, why he chose one over the other, explained about how to evaluate some of the local produce - my first exposure to artichokes, for example - and what was best to buy in this season.
Then into his car and off to Ch. SImone, where we got some wines for lunch, and to his place in the country to begin the cooking, followed by a wonderful meal. I've done a certain amount of cooking, and found this helpful and fun do to dishes I hadn't done before. Gilles said he would send us soft copies of the recipes we did, for our future reference.
We didn't need much dinner that night! Started at 9:30 am and it was around 4 pm when he was driving us back to the center of town. All in all, it was a fun day. I know he also offers a similar experience in Marseille, just 30 minutes south of Aix, and the ladies in our class were planning to do that one too. Perhaps they'll write a review?

Giiles made Philip and myself feel welcome and at ease the moment we first met. His knowledge and his ability to share with us was wonderful. As Australians, we did not want another "rip the silly tourists off". We wanted a real French experience and not what we had already read in the tourist guides,Gilles did not disappoints and the French experience with real people and real French food is a memory we will keep and have already told all our friends "forget the rest, go with the best".

You would be crazy to just follow the crowd.
