My name is Stéphane BERAZA, I have been a crepe maker since 1999 and I am the proud owner of the Crêperie Caramel Sarrasin since 2012.
The afternoons of the week, during my break (16h-18h), I propose you to learn and discover all the little secrets to make delicious pancakes.
Making pancakes is for me a job but also and above all a passion, a reason to live: I'm a pancake addict !!

He thoroughly entertained us as well as educating us. We come from a “learn by doing” environment and this class is very hands on. I highly recommend taking his class if you want to become a world class crepe maker. We will practice his techniques and recipe when we get home. The class is fun/informal and Stephane makes sure to pay attention to each person. We were taught how to make everything, ate lots of tasty crepes and had nice traditional cider too. Stephane is great. My tween is hard to please— but he loves crepes! And Stephane was incredibly engaging. We learned a lot and were also rewarded with super tasty crepes. What could be better? I also appreciated the ciders provided (regional/special) and the patience that Stephane showed with my 12 year old son (who had a great time!).

I learnt so much about crepes and the ‘secrets’ to making them at home. The instructor was a wealth of practical knowledge, historical stories and personalized tips. I would highly recommend this class! I can’t wait to try the recipe and techniques on my own.

Our group of four enjoyed this experience in the fullest. Stephane loves what he does and it is infectious. We learned more than we expected and had fun while doing it. I can't wait to get into crêpe and galette making at home.

Chef Stéphane is an incredible teacher, knowledgeable about his craft and the history of its origins. He is also very entertaining at the same time. The class attendees were all English speaking and Chef Stéphane had no problems teaching the class in English. And of course, the crepes were delicious!! This is a class not to be missed!

This experience was pretty amazing. Stephane’s knowledge, kindness and hospitality made this a great class. I didn’t know what to expect but he went above and beyond to make us comfortable. I recommend this class to everyone. He made our Paris trip wonderful. He offered us a bunch of tips and recommended many places. He is an amazing chef.

Absolutely brilliant class. High energy, full of laughs, fantastic instruction, lots of really interesting facts about the history, and a few secrets thrown in to make the best crêpes. Stéphane is a wonderful chef, host, instructor and entertainer. Very organised, clean and final result is delicious! Stéphane also makes all of his own toppings - very impressive. His caramel sauce is available to buy on the spot. Also learn all about the equipment and best ones to buy. Overall a very thorough class with lots of fun thrown in and a full belly at the end. Oh - and did I mention the traditional cider and apple juice her served. And a final touching surprise at the end.

Our class with Chef Stephane was one of the highlights of our trip to Paris. The class was amazing and the crepes were incredible! I would highly recommend this class!

Stephane is a lively funny and informative presenter and a supportive teacher and proud chef. The class was wonderful. We learned about galettes and crepe— their make up and history. We make and cooked crepe with Stephane sharing his recipe and many helpful tips about the techniques and tools. We absolutely enjoyed the class and it was over and above our expectations.

I took my kids, 10 and 13, to Stephane's course not quite knowing what to expect or what they'd make of it. Three hours later as we emerged from the restaurant where the class is hosted, my son turned to me and said "That was SO cool!" and my daughter added a happy "Yeah!"
Stephane goes into detail about what makes a good crepe work -- why the ingredients are what they are, the role each plays in the crepe, why the proportions are what they are and what goes wrong if any of those are off a bit. Many tips about how to mix properly and why it's important to go fast sometimes, slow sometimes and the order to mix things in.
All of this is interesting but also gives you confidence that you'll really be able to reproduce great crepes back at home if that is a goal above and beyond the experience itself.
The experience itself is worth the visit on its own. Stephane is enthusiastic, always ready with a helping hand or tip. And how often do you get to step into the back of a real working kitchen in a restaurant in Paris and give the main course a try yourself? And have it work out just great?
Stephane seems committed to not just providing a great experience but to sincerely giving us a chance to make great crepes at home. We're all looking forward to giving it a try when we get back
