For me local markets are the epitome of local French life and cuisine.
Les Halles here is an excellent example and the added delight is watching the crepes makers,
Lovely fresh fish counters as well
Service slow appalling and wait staff just down right rude. It took over 2 hours for lunch which ruined our visit as we had a small window to ramble the town. The waiters were extremely rude and very intolerant of children. Food expensive but OK.
I enjoyed the French locals shopping spot for their fresh groceries. The shellfish display was especially nice. People were quickly choosing the day's food items. For a look at the local shopping, visit this market in Old Town.
