We toured the Traditional Farm. It is well laid out and has beautiful views all around. The grounds of the Muckross House are stunning. We did not get to do the tour of the inside due to lack of time and the rare heat wave.

You will need to provide more information. What hotel are you staying at? Most hotels will arrange horse riding for a small fee. I am unsure about clay pigeon shooting.
