Led by the talented chef Victor, the experience was not only educational but also incredibly enjoyable. Victor immediately set the tone for a fun and interactive cooking session. His passion for Vietnamese cuisine was evident from the get-go. Throughout the course, he guided us through the process of making two iconic Vietnamese dishes: banh mi and pho. We seemed to pack so much into the three hours including tasting our creations at the end. I learned so much, not just about Vietnamese cookery but tips and techniques that could be applied to many other dishes. Victor's passion and expertise was infectious, and I left the class inspired not to mention with a full stomach and satisfied taste buds. We were made to feel welcome, as if it were our own kitchen for the afternoon, with helpful direction from the chef we made a lovely dessert, which we ate after the delicious meal that was cooked for us, at the same time we made our dessert, sang along to our playlist which they kindly let us hook up to the sound system and drank Prosecco all afternoon. The staff were absolutely amazing, welcoming and attentive at all times. The entire process leading up to the event was seamless. Sarah, who handled our booking, deserves a special mention. She patiently answered all our questions and ensured that everything was in place for the day. Her consistent communication made the planning stress-free and easy. The team at Brighton Cookery School—Victor, Emmanuel, and Temi—were phenomenal. They looked after us for the entire time we were there. Greeted with a welcome drink on arrival and keeping our glasses topped up throughout. We were also able to play our own music as we were baking. We chose to bake macaroons and a meringue roulade, but you can choose from a list of bakes prior to the event. Victor explained each step of the bakes clearly for us to follow and helped us when we got stuck. They also accommodated all our dietary requirements, ensuring that everyone could participate fully. The included lunch was delicious. The beef fillet was cooked to perfection, and the portion sizes were generous. Once again, they catered to our dietary needs. Brighton Cookery School offers exceptional value. I recommend this place to anyone seeking a fun and entertaining cooking experience. We both consider ourselves pretty good home cooks, so wasn't sure what to expect but thought we'd eat some nice food and have a good night. The facilities were excellent, the school is in a convenient location and it has a really warm and inviting atmosphere. Our host and teacher for the evening was Victor, and what an amazing chef he was! He explained everything perfectly, was really lovely, very funny and super helpful. He made what would have been a good night, an outstanding exprience. In passing, I mentioned that I was travelling to Seville soon. Victor replied that he'd worked and lived there and very kindly wrote out a list of must visit bars/restaurants and the dishes we had to try in each place. She and 14 friends were guided through how to make profiteroles! No mean feat, teaching that many children how to make choux pastry 😄but chef Victor was incredible. Fun and engaging. he managed to get them to all make really great profiteroles. The children were happy and entertained for the whole time they were there and it really was a very special party. With bonus points for me as I could just watch, relax and then eat profiteroles! I am sure I will be going back, maybe to have a go myself! Extremely disappointed with this experience. Tried reaching out to explain the situation via email but was fobbed off and told they'd take the feedback on board and that's it.
We did the Japanese Couples Cook class.
Before we arrived, we'd imagined that we'd watch the chef complete a meal or a section of the meal and be given tips about how to use the knife, the best kind of ingredients, facts about Japan and their food (or origins of dishes), tips for how to cook the food just right - general things to help us learn more and get better at cooking.
None of this happened. We were given the ingredients and instructions were just read out to us.
The chef didn't bother to check on everyone, help them with things and give more tips to build up some rapport - maybe have a joke or conversation with someone. None of this.
At the end they were so keen to clear things away that they took our wooden spoon (the only implement we had to cook our okonomiyaki in our dented pan), so we had to use a knife and fork. We just gave up by this point and joined everyone else to eat the rather poorly cooked meal. It definitely didn't match the description for this course that the food would be "prepared and plated to restaurant standards" as we didn't know what we were doing a lot of the time and had no real assistance for this.
Shame on you for calling yourselves a "school" and this a "class". Unless you're a brilliant cook you're on your own.
I don't think we learnt anything from this experience. I think ordering a Hello Fresh and getting Alexa to read out the instructions with a bottle of prosecco would have been just the same but an awful lot cheaper than this £175 class. Save yourself the hassle.

I find myself compelled to respond to this "review" of our cooking school, as it is riddled with inaccuracies and falsehoods.
The first thing is that referring to our cooking school by putting the word "school" in quotation marks demonstrates a lack of respect on your part for a business that has been operating for over eleven years, and whose employees have accumulated years of experience in the industry.
I remember perfectly well who you are, as you repeatedly attempted through email to get a refund for the course. However, it's quite curious that at no point did you decide to leave the class (which included unlimited beverages to which you also never said no), if it was as unpleasant as you claim. But let's go point by point:
You said that before attending, you imagined that the class would teach knife-cutting techniques. Well, we have a specific session dedicated to that, we invite you to attend that particular class, as this one follows a different program. You also mentioned that you expected the chef to present each dish, but it's not a show cooking event; it's a cooking class where attendees have their own workstation and prepare their own food. There were 14 participants in the class, and all of them need attention and assistance equally. The chef wouldn't have had time to complete each dish personally, as it would be impractical to cater to everyone's needs.However, there are indeed small demonstrations of the most critical parts of the class.
You stated that you hoped for information about the ingredients, Japan, its cuisine, and "tips"? Well, there were numerous tips throughout the class, such as an in-depth explanation of how to prepare dashi broth, including the three different types of broth resulting from the kelp's cooking cycles. For a recipe we don't even use in the workshop, that's quite comprehensive, wouldn't you agree? We also discussed the origins of the dishes, including differences between them based on the regions of Japan, when we talked about the okonomiyaki or the ramen for example . Perhaps the issue is that you weren't paying enough attention, as you seemed quite distracted by the included drinks and chatting with others at the tables, what is totally fine if that's your will, don't get my wrong, that's actually the whole point, but it's rather amusing to hear that "it didn't happen."
You mentioned that the chef didn't check each table? The chef was literally moving around continuously among the tables, observing what was being done at each workstation. In fact, this happens in every class, without exception. That's precisely why, in these sessions, the chef doesn't have the time to individually prepare each dish.You say that the chef didn't engage in making jokes... well, I won't even comment on that.
Then you complain that a colleague who was cleaning picked up a wooden spoon that you were using. Well, what's clear is that the member of the staff didn't take it from your hand, so it's likely it was on the table, and if so, he took it, which is quite normal as we try to keep the workspace tidy for you to work comfortably.
You mention that you had to use a fork instead? If you had paid a bit more attention, you would have noticed that right next to you on the central table, there were more wooden spoons ready to use, or you could have simply asked for another one – it wasn't that difficult. If this caused you to give up on the class, as you claim, then we clearly have a very different understanding of how things work. It looks to me that you are looking for an excuse to complain.
If you had to eat a "poorly cooked meal," well, everyone else's dishes were perfectly cooked; it's curious that yours wasn't.
The final part of your "review" is becoming an intolerable offence to me. When you say, "shame on you for calling yourselves a 'school' and this a 'class'," or that "I think ordering a Hello Fresh and getting Alexa to read out the instructions with a bottle of prosecco would have been just the same but an awful lot cheaper than this £175 class," let me clarify a couple of things for you:
1) I am a seasoned professional chef with a comprehensive three-year culinary education in Spain, coupled with a decade-long career working in top-tier restaurants across diverse countries, some of which held esteemed Michelin stars. My culinary expertise spans various cuisines, with a particular specialization in Japanese cooking, a country I've had the privilege of immersing myself in multiple times. Moreover, I have actively participated in numerous prestigious culinary events and even had the honour of contributing to television programs in Spain.
Brighton Cookery School has been in business for over 11 years, led by its founder who accumulates more than 30 years of experience in the business. I'd suggest a touch more humility when assessing the efforts of professionals who dedicate many hours each day with the sole purpose of putting a plate of food on the table for their families.
2) Regarding the class price, what you haven't mentioned is that it's a 4-hour session with all drinks included, which you also enjoyed without hesitation. Consider the cost of a decent glass of wine at a pub or restaurant. How does that compare to the 6 or 8 drinks you had, plus ingredients, plus the venue, plus the class itself?
A critique like this just makes me think of some sort of personal animosity that I can't quite grasp.
In the end, some folks try to tarnish others' work by sharing half-truths or outright lies, all to secure a refund. A bit more humility in life, especially when discussing other people's way of living, would be recommended

I would recommend this experience so much! I brought my partner the Boa buns cooking class as a Christmas present for us to attend together at £60 each. It was such a great date night together - the chef was friendly, informative & made the experience of cooking Boa buns easy! We were able to eat our recipes at the end which were delicious! Thankyou so much Brighton Cookery school :) x

Had an amazing time learning to cook Peruvian food! Our teacher was incredibly knowledgeable and talked us though the history of the food.
The class had a great atmosphere, relaxed and enjoyable. The food we cooked tasted great and I walked away with 3x new recipes to try on my own.
Have recommended these classes to many others and can’t wait to go back!

What a hidden gem! My 11-year-old had a fantastic and unique party here.
She and 14 friends were guided through how to make profiteroles!
No mean feat, teaching that many children how to make choux pastry 😄but chef Victor was incredible.
Fun and engaging. he managed to get them to all make really great profiteroles.

Booked this for my husband as a Christmas present. Once booked, i received the booking, and then nothing further. I emailed and called, but I never received a reply email, and when i called, I got a matter of fact response. My husband attended and was paired with another single, so the experience was shared, and 2 of the food items were pre prepared so he literally prepared one item. My husband was told he would receive all the recipes in an email but yet nothing. In my opinion it was an expensive course to learn one dish, very disappointed

Myself and my partner had a great evening at the couples Korean cooking session. I cannot fault it. All the staff were friendly and helpful, the chef was extremely knowledgeable and offered lots of extra advice and tips in response to questions. The prosecco was flowing and everyone had a great time chatting and eating their creations. We cannot wait to recreate the recipes at home.

Throughly enjoyable day, we were given the vouchers as present from our daughter and were able to choose what we liked and went for a great day foraging in th woods. Then cooking the mushrooms and nettle soda bread delicious.
