Our olive groves covers 36 hectares (about 90 acres) on the sun-drenched footslopes of Les Alpilles. We like to press our olives without delay, to retain all of their fruitiness and freshness.Fresh and fruity, our oil wonderfully embodies the exceptional character of the Vallée des Baux de Provence terroir.Every day you can visit our mill and taste our different blends of our award winning Olive Oils.

Very nice, informative visit on cold-pressed oil on a mill stone. Like a hundred years ago!, it is necessary and we have the courage to explain to you how this wonderful and incredible oil is made in the mouth with modern machines....
It is no coincidence that the neighboring 3 Star restaurant and its Relais et Château hotel, the Ostau de BAUMANIERE, places this oil from the Castellas mill on all its tables. There are several kinds and you have to taste them. You will see the difference. It’s a table oil with incredible fragrances.. the staff are adorable, unannounced visit, free and informative….

I was excited to visit this Olive oil production and buy from them directly. But when I saw the same oil in the nearby villages much cheaper, it made me upset. I paid EUR 24.90 for a bottle of 125ml and in the villages, I saw it for EUR 16.90. EUR 8.- more expensive in the producers shop! The oil is great though. But I feel ripped off.

We stopped to sample some olive oils and were offered a tour and explanation of the olive oil production process. Our friendly guide (who spoke English) helped us select some olive oils to purchase and mail back to the US. It was a really fun experience and worth the stop!

It was our first visit, and it won't be our last. The guided tour is perfect: detailed but not too long, we understand the essential stages of oil production, and the tasting allows you to clearly understand the identities of each oil. The estate is very pretty, the staff is competent and is keen to bring this culture to life and share it. Real olive trees :).
The prices are completely reasonable, and we bring home a little piece of Provence. Thank you for your welcome, for your work, and your delicious oils.

Delicious array of olive oils, some for the traditionalist, some with natural flavor (lemongrass!) Well presented and no sales pitch - product sells itself. Easy pull off on the road to Les Baux. A pleasure to enjoy.

While in Provence, we wanted to visit an olive oil factory and Moulin CastelaS was highly recommended by our hotel in St. Remy. Easy to find and well marked on maps, the tasting/retail shop was a gold mine of information and purchasing opportunities. The staff was exceptionally helpful, allowing us to taste many different types of olive oil to register the difference between them. And once better educated, we hit the retail store and purchased a ton of different oils...each for a different cooking/serving purpose. It was a great way to spend a morning and we'll definitely be back for more tastings...and more purchasing!!

We had a wonderful time very rewarding... we tasted amazing products, Annabelle's explanations (I think?) were exciting and brought us all a lot! Our teen was taken from this universe!! Bravo and thank you... went in to buy oil, we came out much more... I can not find the word!!! We discovered flavors, textures , delicacies that we did not imagine!!
