If you are visiting Les Baux de Provence you should stop by this local producer of olive oil. They distribute world wide, but you can try and buy things not available internationally. Nice olive oils. They also have some nice crafts for sale making this a good stop. There is also a nice picnic area and restrooms available for visitors.... More

The tour is not very long but you get a good iverview of how the oil is made. Very interesting. But the best part is the oil tasting lesson. They teach you about olive oil by tasting 6 of their oils. We stopped by Castles late in the afternoon and had a wonderful and animated tour with Remy. He took us through the facility and gave a great explanation of the olive oil making process. We were given a short tour of the olive oil making process by a charming host. Very interesting and informative. The olive oil tasting was delicious and who knew there could be so many different, subtle flavours!

It's a simple yet interesting tour of how olives are harvested and processed into oil in Provence. The tour gives you a brief walk through the trees, then a look at the tools used to harvest. Even though Castelas produces a very large portion of the olive oil that comes from Les-Baux-de-Provence, it makes great oil and an excellent range of products, well worth sampling and taking home if you have room. Our group of 6 stopped by specifically to take a tour and do a tasting. When we walked in we were greeted by Remy a very animated and knowledgable tour guide.
