My adult son and I spent a day with three others and Paco doing his classic (and classy) market tour and cooking class. It was definitely a highlight of our week in San Miguel. First of all, as others have raved, Paco is a warm and delightful man who is meticulous about everything. Stop by his lovely bakery, Petite Four, and you'll know immediately what I mean; his pastries look and taste delicious. Our day began at 11:00 when we met Paco for a tour of the food market; he took us to his favorite vendors who all greeted him warmly and gladly gave us samples......tacos, chicken, pork tacos, fruit etc. Then on the Artisan market where Paco took us to his special vendors. This part of the day was far more encompassing and interesting than we expected! On to Paco's beautiful home for the cooking segment.......we made tacos from scratch, tamales, chicken with a mole sauce and chocolate mousse......all done between his indoor and outdoor kitchens. Paco had done a lot of prep work, but we all pitched in with the actual cooking. When completed, we sat down on his patio to a beautiful table setting with pretty linens, dishes and flowers. Lunch included wine and beer and lots of laughter and conversation.....we were driven back to our hotels......left with wonderful memories of a very special day. Paco is the consummate host and my son and I were so appreciative of all his talents as a guide, chef and patient teacher. If you love food and cooking, the experience with Paco will leave you smiling and totally satisfied. BTW, I personally have never liked tamales; however, his recipe changed my mind; they were beyond delicious!

This was a fabulous class! I highly recommend it ! Paco could not have been nicer - he invited us into his beautiful home and designed a class just for us. Paco was so gracious, it was like spending time with an old dear friend. A wonderful afternoon!

This was the highlight of our trip. The day started at the market, proceeded to his home and ended with the best meal we have had so far. It was the perfect balance of teaching and hands on cooking. Truly the time flew. We are looking forward to trying the recipes. Word is out so plan your dates early to reserve a spot. We signed up for February!

I took a market tour and cooking class with Paco, and enjoyed an incredible day. Paco gave a market tour, showing me the best places to buy a variety of foods in the local market, as well as introducing me to local artisans. We then drove to his beautiful home in San Miguel, where he had everything ready for our group of four people to cook an incredible meal. His home has two gorgeous kitchens, one indoor and one outdoor, and the class was a good mix of instruction and hands-on work. Paco speaks excellent English and has an easy-going, wonderful personality. He is constantly providing insights into local culture and history. I give this class my highest recommendation--enjoy!

Chef Paco is an amazing chef and wonderful people person. We did a market tour followed by one of the best meals created by Chef Paco and his team. Paco is very friendly and speaks clear English. He has worked with Rick Bayless and Diane Kennedy. The chef also teaches Mexican food cooked in traditional ways. Paco knows just about everyone in the market and will have you sample many different delights. The chef will work with you to create a menu that he will cook. The food we had, including mole and tamales was some of the best food we've had in Mexico. Besides being well organized, Paco is a great communicator-responding quickly to your emails.
